January Meal Planning Week 3

This was my meal plan for last week:

January Week 2 Meal Plans (1/13 to 1/19)(tentative)

Brunches: Blueberry muffins, leftover pancakes, uppuma, scrambled eggs & toast with or without sausages, French toast, cereal and milk or yogurt, banana muffins (if I make some), salads

Dinners: Leftover salmon with boxed pasta mix (Monday), leftover pasta with ham and salad (Tuesday), ground turkey keema curry with rice and vegetables (Wednesday), Leftovers (Thursday), Fried Rice (Friday), Soup and toast or drop biscuits (Saturday), Hot dogs or leftovers (Sunday)

The meal plan was based on what I had on hand in the freezer and pantry and it was a very tentative plan.  In fact, it ended up being subject to much change, but, here's how it all worked out:

Monday:
Brunches: Last of the blueberry muffins
Dinner: Leftover salmon with boxed pasta mix
Snacks/Desserts: Apple slices, crackers, chocolate; leftover pasta (late night snack)

Tuesday:
Brunch: Scrambled eggs, bacon (instead of sausages), toast; orange juice
Dinner: Ham steak with vegetables (broccoli, sliced carrots, potatoes, corn on the cob) - went off the meal plan
Snacks/Desserts: Oranges from the garden, crackers, chocolates

Wednesday:
Brunch: Toast with butter and peach jam
Dinner: Pizza - went off the plan, again!
Snacks/Desserts: Apple slices, chocolates

Thursday:
Brunch: Leftover pizza
Dinner: Ground turkey keema curry (with onions, tomatoes, grated carrots, diced potatoes, diced broccoli stems, etc.) and rice
Snacks/desserts: Fresh oranges, chocolates, don't remember what else

Friday:
Brunch: Pizza and toast
Dinner: Leftover keema curry and rice (daughter); keema curry and leftover pancakes (me)
Snacks/desserts: Apple slices, probably chocolate (we are working our way through some Christmas goodies)

Saturday:
Brunch: Scrambled eggs, bacon, toast, orange juice
Dinner: Leftover keema curry with freshly cooked rice and cucumber slices
Snacks/Dessert: Brownies

Sunday:
Brunch: Croissants sandwiched with keema curry; banana,
Dinner: Hot dogs and salad (lettuce, carrots, cucumber, bottled dressing)
Snacks/Dessert: Toasted bagel half each, with butter; sliced apples; fruit smoothie (frozen banana, frozen blueberries, orange juice, peanut butter)

So, I followed roughly about half the meal plan, but, that was OK.  

Moving on to this week, this is the meal plan:

Brunches: Croissants sandwiched with ham and lettuce and fresh oranges (Monday); bagels; hot dogs with salad; toast and peanut butter, uppuma, French toast, waffles with sausages.

Dinners: Leftover keema curry and rice with cucumber salad (Monday); "devilled" chicken with rice and sliced cucumber; beef stew with mashed potatoes, chicken curry with rice and sauteed curried cabbage, leftovers

Snacks/Desserts: Bananas, apples, oranges, home canned peaches; gata (Armenian pastries) from neighbor S (she brought some over on Monday evening); crackers, chocolates

Once again, this meal plan is subject to change.

  1. This week I am living day to day with food prep. I am trying to clear the pantry a bit and my meals depends on what hubby will eat. He is in bed about 80% of the time now-so meals are never easy. xo Diana

  2. Today, I'm having soup that my sister made. Maybe for dinner, we'll have fish from the freezer. We're don't have a meal plan here, but mainly try to use what we have on hand.

  4. Really good menu. I've been slacking this week. It's a bit of what's in the freezer. The weather has been lousy and I haven't been to the shops! Looks better next week and I'll do better.

    1. Thank you, Sharon. That's fine if you slacked a bit this week. You are still using what's in the freezer and pantry and putting meals on the table. Hopefully, the weather will be better next week and you can do some grocery shopping. :)

  5. Some great ideas, Bless. Unfortunately, I've been so busy that this week's meal plan fell by the wayside. I'll try again at the weekend. I really need to get on top of it, as it's when I'm busy that I need it the most :)

    1. Thank you, Jules. Some weeks are like that - too busy to meal plan, although, as you say, that's when a meal plan is most helpful. Still, hopefully, you are able to have something ready on the table at meal times, even if it's sandwiches or cheese and crackers with a piece of fruit, and that will have to do. I think we've all been there and when I was working, there were many nights when I'd pick up hamburgers and fries because I didn't have dinner planned and was too tired to cook.

  6. You had some good food last week and some tasty things are on the menu for this week.
    I don't know what I'm going to make nest. I think I'm in an "I don't feel like cooking mood" so who knows what we will end up having?
    I have some leeks to use up so I was thinking a pot of potato leek soup. But I don't feel like doing the cleaning, peeling & chopping required.

      It's hard to decide what to cook when you don't feel like cooking, isn't it? The potato leek soup sounds good, though (maybe you can skip peeling the potatoes - just give them a good scrub!). The only way I like leeks are sauteed with sliced smoked sausages, with some chili powder. I serve it over rice. :)

I seem to have an ongoing meal plan, in that Wednesdays are usually salmon or haddock cooked in the oven, and Fridays are fish and chips, the fish pan-seared according to the instructions on the package, and the fries done in the air fryer. I usually make some Cole slaw to go with the fish dishes. Other days are a free for all according to what I come up with! I do like to have some planned leftovers in the freezer if possible.

    1. I like your plan of having fish two days a week. When I first started meal planning, I was trying to establish a similar habit of pasta on Monday, chicken on Tuesday, steak on Wednesday, etc. But, that didn't work out too well for me, for various reasons. Maybe I can try it again to see if it works. :)
