This was my meal plan for last week:
Brunches/Lunches:
Ham cold cuts sandwiches✔, Scrambled eggs and bacon with bagels✔, Jamaican style meat patties/hand pies, Pizza (from the freezer) and Salad✔, French toast
Dinners:
Leftover mac & cheese with ground beef✔, Rice and chicken curry with vegetables✔, Pork chops with rice or baked potato wedges and vegetables (moved to this week), Chicken pot pies✔, Baked chicken drumsticks with spicy potato wedges and cucumber salad, Leftovers✔
Snacks/Desserts:
Fresh fruit✔, Cereal and milk✔, Bread pudding, Hot Cheetos✔
And here is how it worked out:
Monday:
Breakfast: Cut up fresh mango
Lunch: Sandwich (me); leftover mac & cheese with ground beef (daughter)
Dinner: Frozen chicken pot pies
Dessert: Bananas
Tuesday:
Brunch: Leftover frozen pizza, banana
Dinner: Leftover mac & cheese with ground beef
Dessert: Cut up fresh mango
Wednesday:
Brunch: Toasted bagels, with scrambled eggs and bacon, fresh oranges
Dinner: Baked chicken drumsticks, spicy potato wedges, cucumber salad
Thursday:
Brunch: Leftovers from Wednesday dinner (daughter); I wasn't hungry and skipped breakfast, having some crackers with my tea in the evening.
Dinner: Chicken curry, rice with green peas, sauteed curried cabbage, tomato chutney
Dessert: Fruit salad (apples, mango, green grapes, orange segments, cashews)
Late night snack: toast and peanut butter (me)
Friday:
Brunch: Scrambled egg, hash browns, bacon, fresh lemonade with lemons from the garden
Dinner: Rice, chicken curry, sauteed curried cabbage (me), Brussels sprouts (daughter), tomato chutney
Dessert: Fresh apples
Saturday:
Late lunch: Fast food: fried chicken sandwich, Louisiana garlic chicken wings (they forgot to include the biscuits we had requested and paid for), an apple pie for daughter and a strawberry with cream cheese pie for me. Both daughter and I were disappointed with our chicken sandwiches, but, we enjoyed the chicken wings and the pies. Most probably, we will not buy more sandwiches from that fast food place, again.
Dinner: Leftovers from lunch.
Sunday: (Picked up groceries)
Brunch: Frozen pasta meal - not bad for the $0.99 I paid for each, but, not worth the full price of $3.49; will not be buying again.
Dinner: Salmon cooked with onions and tomatoes, rice, leftover Brussels sprouts
I went off the plan a little bit, but, not too much, so I will count that as a good week for meal planning.
Which brings us to this week. Here we are, mid-week already, and I've been operating without a meal plan!
Monday:
Lunch Tuna salad sandwiches
Dinner: Leftover salmon, boxed wild rice mix, sauteed green beans, corn on the cob (homegrown corn from the freezer)
Tuesday:
Lunch: Leftover rice and chicken curry with the last of the sauteed cabbage and tomato chutney
Dinner: Pork chops, rice, green peas, cucumber salad
Wednesday:
Breakfast: French toast
Lunch: Cold cuts sandwiches
Dinner: Jamaican style beef patties from the freezer; cucumber salad per daughter's request
Moving forward, the meal plan for the rest of the week might include:
Brunches/Lunches:
Scrambled eggs and bacon with fried potatoes or toast
Salads
Pancakes
Leftovers from dinners
Dinners:
Leftover pork chops with rice and green beans
Leftover chicken and rice with broccoli
Smoked sausage and vegetables stir fry with rice
Mealball curry and rice with lentils and green beans
Leftovers
Snacks: Fruit, granola bars, cereal, crackers with tuna salad or peanut butter, hot Cheetos
Or something else that's not on the meal plan!

I'm sure that your daughter is very thankful that you are providing such good food. It sounds tasty and nutritious.

DeleteMy daughter is very happy with the meals I am making. She usually eats a lot more vegetables than I do, so, I am learning to adjust my cooking to include more vegetables. :)
It was desperation dish today, with a packet and a can, and some grated cheese from the freezer. I made KD with tuna and put some cheese and breadcrumbs on top and put it in the oven. It was great!

DeleteReally good meal planning! I'm doing okay with mine. I've been trying to use up some freezer bits and it certainly getting a bit lower!
