This was my meal plan for September Week 2
Brunches: Corned beef sandwiches✔, tuna salad or egg salad sandwiches, salad, pancakes✔ or waffles, smoothies?
Brunch: Corned beef sandwich on multi-grain bread (half a sandwich)
Dinner: Other half of the corned beef sandwich
Snacks/Desserts: Crackers, gata, a chocolate, cherries, orange juice
Tuesday
Brunch: Pear slices, crackers with peanut butter
Dinner: Rice, Chicken curry, dhal, tomato chutney
Snacks/Desserts: Calamondin infused water
Wednesday
Brunch: Pancakes, dhal
Dinner: Scrambled eggs, toast
Snacks/Desserts: Pear
Thursday
Brunch: Pancakes, dhal, chicken
Dinner: Cheese burek (pastry); salad (cucumber, tomatoes, olives, feta cheese, etc.)
Snacks/Desserts: Gata (Armenian cookies/pastries),
Friday
Brunch: Pear slices
Dinner: Egg rolls with chicken and green chile filling, with sweet chili sauce
Snacks/Desserts: gata, Fuyu persimmon
Saturday
Brunch: Corned beef sandwich (half a sandwich)
Dinner: Egg roll
Snacks/Desserts: gata
Sunday
Brunch: Corned beef sandwich (the other half of the sandwich from Saturday)
Dinner: Rice, chicken curry, moringa curry
Snacks/Desserts: Calamondin lemonade, tea cookies, peppermint candy
I didn't keep a count of the week's plant based foods, this week. But, looking at what I did eat, I think I had about 13 plant based foods. Maybe I do eat more plant based items when I am keeping track of what I eat!
I also didn't keep to the meal plan, but that was OK, I think. It was very hot, for most of the week, I was not inspired to cook, and I didn't feel like eating much of what I had prepared. Neighbor S bringing me dinner, one night, really helped.
Moving on to Week 3 which is on the cool side, with highs in the low 70s.
Brunches: Waffles and corned beef, egg salad sandwiches, Indian style cream of wheat, toast and peanut butter
I'm glad that things have cooled off. Once again, we don't have a meal plan, but I hope we get back on track with more cooking using first what's in the freezer.
ReplyDeleteThank you, June; it is nice to have cooler weather, but, I wish we had stayed in the 80s for a bit longer (the highs have been in the low 70s and that's quite a drop in temperature!)
DeleteI think you do quite well without a meal plan, but, cooking from the freezer is a good way to keep the grocery budget manageable. :)
Since DH's birthday, we have been eating more chocolate cake than we should! I've hidden the last of it in the freezer to have at the weekend. We are still keeping up with salads and veggies with our meals.
ReplyDeleteIt's easy to eat a slice of cake when it's available, isn't it? I took a generous slice of the cake I made yesterday, to friend R and M will get a slice, tomorrow. That way, there will be less temptation for me!

I think you do right to eat how you feel on the day depending on the weather and being given gifts of food from your lovely neighbour. I wouldn't worry too much about not eating enough plant based foods on any given week.
ReplyDeleteThank you, Eileen. Yes, I think I will continue to make and eat what I feel like, within the framework of the meal plan. Gifts of food from neighbor S are always welcome, of course. :) I made sure to get some vegetables and fruit in my meals, today: onions, tomatoes, a potato, persimmons, chili powder, and garlic powder. And that was just brunch. :)
