May Meal Plans: Week 2 Review and Week 3

I stated, last week, that I wasn't feeling very inspired when I made the meal plan for Week 2 and that I didn't feel like cooking; I had anticipated that there would be many changes and there were!

This was my meal plan and the changes are in blue:

Brunches: Leftover ramen noodles (Monday)✔, boiled mung beans with katta sambol, egg salad sandwiches (or scrambled egg on toast✔for dinner), toast with peanut butter,✔ waffles✔, salad, muffins (if I decide to bake some), tuna salad sandwiches, lahmajoon (Armenian pizza)

Dinners:  Fried rice with leftover rice, ground turkey, etc.✔; gyoza/pot stickers (from the freezer)✔; rice, chicken curry (from the freezer), dhal, peach chutney, broccoli✔; grilled cheese sandwiches(just toast and cheese and for brunch, instead)✔ soup? subway sandwich, garbanzo beans, cheese filled puff pastry, baked chicken wings with barbecue sauce and cucumber salad

Snacks/Desserts:  Cake✔, yogurt✔, fresh fruit✔, cheese peanut butter and crackers✔, muffins if I make some, tuna salad on crackersArmenian pastries and sweets, Korean red beans and rice cake, macadamia nut chocolates!

Here's how it all worked out:

Monday:
Brunch: Leftover ramen noodles with shredded chicken and stir-fried vegetables
Dinner: Scrambled egg on toast
Snacks: Cake, fruit

Tuesday:
Brunch: Toast and cheese
Dinner: Fried rice (leftover rice, leftover ground turkey and vegetables, a scrambled egg)
Snacks: Peanut butter/crackers, yogurt, fruit

Wednesday:
Brunch: Leftover fried rice
Dinner: Gyoza (pot stickers) from the freezer
Snacks: Peanut butter/crackers, fruit

Thursday:
Brunch: Tuna salad sandwich
Dinner: Rice, chicken curry, broccoli leaf mallung, peach chutney
Snacks: Tuna salad and crackers, fruit

Friday:
Brunch: Peanut butter toast
Dinner: Subway sandwich, tabouleh
Snacks  Sauteed garbanzo beans, Armenian sweets and pastries, fruit 

Saturday:
Brunch: Lahmajoon (Armenian pizza)
Dinner: Sauteed garbanzo beans, cheese filled puff pastries
Snacks: Armenian sweets (baklava), fruit

Sunday:
Brunch: Waffles with chicken curry and waffles with peach jam
Dinner: Baked chicken wings with barbecue sauce, cucumber salad
Snacks: Korean red beans and rice cake, macadamia nut chocolates!

Well, I ate a lot of the things I had planned and quite a few things that I had not planned!  Which is fine, especially as a few of those unplanned things were given to me.  

On to Week 3!  

Brunches: Leftover sauteed garbanzo beans, leftover waffles with peach jam, scrambled eggs or omelet, mini cheese pizza (from the freezer), salad with the last of the lettuce from the garden, muffins (if I bake some), bagels (if I buy some!) 

Dinners: Lavash (Armenian flat bread) with a scrambled egg and katta sambol; chicken curry, rice, vegetables,  chutney, etc.; teriyaki chicken (from the freezer), rice, stir fried vegetables; macaroni and cheese with tuna, leftovers.  

Snacks/Desserts: Fresh fruit, leftover Armenian sweets, Korean red beans and rice cake, stewed apples, crackers and cheese or tuna salad or peanut butter.

  1. I know it does not seem so to you, but to me your meals are so exotic.
    I make a plan and usually stick to it about 50 recent of the time. Weekends here are a crap shoot because TheHub and I will change plans on a dime.

    1. Well, some of the dishes, especially the Armenian dishes, are exotic to me, too, although having known Armenian neighbors for 30+ years, I've become a bit familiar with them. I didn't know what tacos, burritos, and pizza, etc., were, either, before I came to this country. We knew British foods, some Dutch foods, and a few Portuguese foods because they colonized us and, of course, Indian food, Chinese food, and Malay food because they formed some of the ethnic minorities in our communities. Hamburgers, fluffy pancakes, cornbread, etc. were all exotic to me, at one time. :)

  2. You were fortunate to have some lovely treats gifted to you and you can't factor those into your meal planning. I do my online grocery shopping for the week and most of the fresh food is determined by the use by dates as to twhich day it is eaten and sometimes some has to go into the freezer.

    1. I was very fortunate to receive all the treats, Eileen, especially since it was a week in which I didn't feel like cooking or meal planning! I like your way of deciding what to have when! It's been 3 weeks since I last did a grocery pick up, so, most of the fresh items have been used up. But, I have fresh fruits and vegetables from the garden and some frozen items, too, so the only thing I really need is bread. I wish I was a better bread baker!

  3. My meal plan is "liquids on a spoon" until my mouth has healed! But my wonderful maxillofacial surgeon was from Sri Lanka, so while we waited for the anaesthetic injections to kick in, we talked about SL food - she's fond of milk rice!

    1. Lots of soup, puddings, ice cream, and jelly for you! Too funny about the Sri Lankan doctor and milk rice! :D It's usually the first solid food we are given as babies!

  4. I was thinking that you never get takeout, but then the food you are gifted is kind of like that. However, with takeout you usually don't return the containers with something in them. :)

    1. I rarely get takeout when I am on my own, June; I wait until my daughter comes home and then, we get takeout instead of going out to eat at a restaurant. The food I'm gifted certainly adds to the variety doesn't it? Ha, ha, actually, I reuse takeout containers when I give food to others! That way, they are under no obligation to return the containers unless they wish to. :)

  5. I like that waffles can be eaten with curry or peach jam. I shopped with a bit of a meal plan in mind as I knew I needed kale and sweet potatoes for the peanut stew I was planning, and I bought a rutabaga as I plan to make Cornish pasties one of these days (still have to buy the beef).

    1. Waffles are very versatile, aren't they? Pancakes are good with curry, too. :) Your meal plan sounds good and you've already bought some of the ingredients you need to make the dishes! I'm still trying to decide if I want to order groceries this week!

  7. Very good week as far as tasty food consumption - lots of interruptions to "the plan" but when you have an influx of food items from friends then that will happen.
    Seeing tuna salad as one of your changes reminded me of seeing someone put an apple in tuna and I've never thought to do that. I've done it with chicken salad but not tuna.
    She rinsed the tuna well, mashed it with relish (instructing us that her mother said this was the most important step :) then added a chopped apple, celery and red onion and then the mayo.
    It looked so good I am going to give that combination a try for a fresher spring tuna salad.

    1. The week's meals turned out better than I thought because I had not felt very inspired when I did the meal plan! Plus, lots of very tasty additions from S and family!
      I've never had apple in tuna salad, but, I've seen some British recipes where they add corn to it; haven't tried that, either! The first time I had tuna salad, I didn't much care for it (not something I grew up eating). I like it now, but, with Miracle Whip instead of mayo. I add sweet relish to it and some ground black pepper and that is all (raw celery gives me indigestion and I don't like raw onion!) But, I might give the apple a try, since I do like apple! :)
