This was the plan for May, Week 1:
Brunches: Milkrice and seeni sambol (Monday; May 1)✔; leftovers (leftover milkrice✔, leftover sardines on toast✔, leftover French toast✔), salad, scrambled egg on toast✔ or peanut butter on toast✔.
Dinners: Leftover spaghetti and sauce✔; rice with leftover chicken curry leftover broccoli, etc.✔, rice with chicken stir fry✔; leftover rice and chicken stir fry✔; patties with ground turkey filling; koththu roti made with lavash (maybe); soup (maybe; supposed to be cold and rainy this week)✔.
Snacks/Desserts: Yogurt✔, fresh fruit✔, patties (if I make them), crackers with cheese✔ or peanut butter✔
Here's how it all worked out:
Monday, May 1st:
Brunch: Milkrice & seeni sambol
Dinner: Spaghetti & sauce
Snacks: Yogurt, cereal, grapes
Tuesday:
Brunch: Leftover milkrice & seeni sambol
Dinner: Spaghetti & sauce
Snacks: Peanut butter/crackers, yogurt
Wednesday:
Brunch: French toast
Dinner: Rice and chicken curry, broccoli
Snacks: Loquats, cereal
Thursday:
Brunch: Sardines on toast; glass of chocolate milk
Dinner: Rice, teriyaki chicken, vegetable stir fry
Snacks: Wafers, loquats
Friday:
Brunch: Scrambled egg on toast
Dinner: Spaghetti & sauce
Snacks Cheese & crackers, grapes, wafers
Saturday:
Brunch: Peanut butter toast
Dinner: Ramen noodles with shredded teriyaki chicken and stir fried vegetables added to it
Snacks: Cake! Grapes
Sunday:
Brunch: Leftover Ramen noodles
Dinner: Rice, teriyaki chicken, vegetable stir fry
Snacks: Cake, grapes, crackers and peanut butter
Now that was a good week of meal planning! Not only did I eat most of the items I planned, I also kept a record of it! LOL. The only brunch item I didn't have, that was planned, was salad because I wanted mostly cooked items for brunch (it was too cold for salad!) As for dinners, I didn't make the patties (didn't feel like making the pastry) and I didn't make the koththu roti, either (had too many leftovers to finish). And the soup turned out to be ramen noodles with added items.
On to Week 2!
Brunches: Leftover ramen noodles (Monday), boiled mung beans with katta sambol, egg salad sandwiches (or scrambled egg on toast!), toast with peanut butter, waffles, salad, muffins (if I decide to bake some)
Dinners: Fried rice with leftover rice, ground turkey, etc.; gyoza/pot stickers (from the freezer); rice, chicken curry (from the freezer), dhal, broccoli; grilled cheese sandwiches? soup?
Snacks/Desserts: Cake, yogurt, fresh fruit, cheese and crackers, muffins if I make some
I'm just not feeling very inspired when it comes to menu planning, this week, and don't really feel like cooking! So, this week's meal plan is very much subject to change!

You did very well with your meal plan last week. I ordered sardines in tomato sauce but husband changed his mind about having any so I will have mine for one mid-day meal this week and husband can have a sandwich.

DeleteOh, that's too bad your husband changed his mind about having sardines on toast, but, who knows? Maybe he'll change his mind, again, when he sees you having yours! LOL. I still have some of the extra sauce, leftover, and am wondering how I could use it, rather than discard it.

We just finished up a couple nights of a risotto that I added just a little bit of sausage to. It's a baked risotto recipe that I like because it beats standing and stirring forever which a traditional recipe seems to want.
I'm not sure what is for tonight but I have some avocados I have to use.

DeleteBaked risotto sounds wonderful! I sometimes make a rice casserole that is baked and you've reminded me that I haven't made that in a long time! Maybe I will add that to this week's meal plan, since I felt so uninspired when making the meal plan! Thank you, Debra. :)
No meal planning here, per usual. But you continue to inspire me with yours. Some day, it will inspire me enough that I will do it, too. :)
ReplyDeleteSometimes, I think that meal planning is a bit overrated! So many of us are managing to prepare meals without a plan just as well as others who make plans and then, often, change them, anyway! The one good thing about a meal plan for me is, I know I have to put things to soak (mung beans, for example) the night before if I am planning to have it for breakfast the following morning or take frozen meat out to thaw in time.
DeleteIt's hard when you don't feel like cooking. I am always happy when a meal does for more than one time. On Sunday I made a recipe I had tried before, Middle-Eastern Chicken with vegetables, which is pleasantly spiced. However, I forgot to turn over the recipe card and left out the half cup of diced carrots! It was fine without them.
