June Week 2 Meal Plan Update and Week 3 Meal Plan

This past week, I followed the meal plan better than I had in previous weeks!  Yay!  LOL. 

Monday:
Brunch - Leftover spicy potatoes; fresh orange
Dinner - Pasta with meat sauce; fresh peach

Tuesday:
Brunch - French toast or pancakes
Dinner - Pasta with meat sauce; salad

Wednesday:
Brunch - Milk rice, fish curry
Tea - Tuna salad on crackers
Dinner - Pot roast slices with vegetables (onions, green beans, carrots) and potato

Thursday:
Brunch - Leftover milk rice (if there is any); if not scrambled egg and potato
Dinner - Leftover pot roast and vegetables; carrot and raisin salad (picked the raisins out of the box of raisin bran cereal!)

Friday:
Brunch - Waffles or pancakes  Last of the milk rice with onion sambol
Dinner - Rice, smoked sausage stir fry with vegetables and various curries provided by friend S!

Saturday:
Brunch - Waffles or pancakes (leftovers) Pasta with meat sauce
Dinner - Rice, leftovers from curries that S brought smoked sausage stir fry; chocolate cake for dessert!

Sunday:
Brunch - Scrambled egg and potato Peach, tuna salad on crackers
DinnerCoconut flat bread with chicken curry Leftover pasta with meat sauce; crackers with apricot jam (bought, not homemade) for dessert


Which brings us to the June Week 3 Meal Plan!  Except, I can't think of what I might want to eat, this week!  I still have some leftovers from the meal friend S provided me for at least one dinner (I froze the cashew curry for another time).  So, other than for today (Monday), I am just going to list meal possibilities!  It all depends on what I feel like cooking this week!

Monday:
Breakfast: Dry cereal
Lunch: Paratha Pizza!

Paratha Pizza

Someone mentioned pizza (with smoked sausage and peaches!) on her blog and suddenly, I was craving pizza!  I cooked a frozen paratha, poured the rest of the leftover pasta sauce on top, tore up a piece of really old string cheese that I had in the fridge on top of that, and put it under the broiler long enough to melt the cheese and...paratha pizza!  LOL.  I think I could have used a little less of the pasta sauce, but, my craving for pizza was satisfied.   I do still want to try a smoked sausage and peach pizza, though!  

Dinner: Leftover rice and curries provided by friend S

Week 3 Meal Possibilities:
Breakfasts/Brunches - scrambled eggs with potatoes (fried or hash browns); pancakes or waffles; muffins if I make some; cereal; tuna salad on crackers; fresh fruits (I have apples, oranges, and peaches)

Lunches - For days when I want a separate lunch - tuna salad on crackers, salad (lettuce, carrots, with apples or peaches, etc.), yogurt

Dinners -
- leftover rice and curries (Monday)
- coconut flat bread with chicken curry
- string hoppers with chicken curry, potato curry, onion sambol
- rice with smoked sausage stir fry
- more paratha pizzas
- Leftovers
- Or, something else, altogether!

    1. Thank you, Ratnamurti. Cashew curry - I use raw dehydrated cashews as that's what is available here; soak them overnight (or put to soak in the morning if cooking later in the evening), then, boil them. Add turmeric to the boiling water. When, boiled, I add onions, curry leaves, a little curry powder, cut up green chilies, a piece or two of cinnamon sticks, salt, etc., milk, either coconut milk or cow's milk, and a little lime or lemon juice. Some people add green peas to their cashew curry, but, I don't. The cashew curry which I froze had been made by my friend and she had added mustard seeds and chili powder. Curries are as varied as individuals. Each one cooks it a little differently. Hope you make it and enjoy. :)

  2. I've been working from a list of things that needed to be eaten up rather than a specific day by day meal plan and that has worked much better for me, so I will do the same for next week.

    I like your cashew curry recipe!

    1. Glad you found a plan that works for you. :) I, too, have been trying to use up the items that need to be used first, but, even so, much to my chagrin, I've had to toss out a few items that got overlooked.

      Glad you like the cashew curry recipe. Maybe you might try making some? One thing to keep in mind is that the cashews swell when soaked and almost double in quantity!

  4. Today was cheat day. I sent DH to the local hotel/restaurant for takeout (liver,bacon and onions with fries and veggies). The dog next door came over to the deck to investigate but he only gets dog treats and back rubs from me.

  5. I was unable to get ham or pork again for the second week in a row, so a third week of ground beef or chicken for the menu. I think I will try for sausage this time round. Ha,ha. That pizza looks wonderful.
