Tuesday
Brunch - Scrambled egg, fried potato, bacon, followed by a fresh peach
Dinner - Spaghetti with meat sauce (ground beef, can of pasta sauce, diced onion, grated carrot, sliced celery, and broccoli), carrot sticks, yogurt
I browned 1 lb. ground beef, took some for the meat sauce and froze the rest. There is quite a bit of the sauce left and I am debating if I want to freeze it for later or use it to make a pan of "lasagna" (I don't have ricotta and Parmesan cheese for a proper lasagna, only mozzarella) which will then be portioned out and frozen.

Brunch - French toast
Dinner - Rice, fish curry, green beans
Thursday
Brunch -
Dinner - Spaghetti with meat sauce; salad

Well, that sort of worked out, though not quite according to plan! LOL. Friday's upset tummy caused me to change the menu quite a bit.
I am not even sure if I should bother with a meal plan for this week! But, why not? It can count as creative fiction writing, if nothing else! Ha, ha! Again, the meal plan is subject to change, depending on what I feel like cooking and eating! I haven't gone grocery shopping, so the meals are planned around what I have on hand:
Monday:
Brunch - Leftover spicy potatoes; fresh orange
Dinner - Pasta with meat sauce; fresh peach
Tuesday:
Brunch - French toast or pancakes
Dinner - Pasta with meat sauce; salad
Wednesday:
Brunch - Milk rice, fish curry
Dinner - Pot roast slices with vegetables and potato
Thursday:
Brunch - Leftover milk rice (if there is any); if not scrambled egg and potato
Dinner - Leftover pot roast and vegetables
Friday:
Brunch - Waffles or pancakes
Dinner - Rice, smoked sausage stir fry with vegetables
Saturday:
Brunch - Waffles or pancakes (leftovers)
Dinner - Rice, leftover smoked sausage stir fry
Sunday:
Brunch - Scrambled egg and potato
Dinner - Coconut flat bread with chicken curry
We shall see how that works out. It is hard for me to decide what I will feel like cooking and eating several days from now. By the way, I say "brunch" because, so often, I don't wake up till later in the morning, so the first meal of the day is usually around other people's lunch time! Some days, I will have only two main meals and snacks; other days, I have three meals as well as snacks!

DeleteNo menu plan, but I made a meatloaf on Saturday that has fed me for three nights. The first night, I sliced off two thick slices and put them in buns to eat as hamburgers (with lettuce, sliced tomato, sliced cheese and condiments. The next two nights I actually ate it as a meatloaf with green beans one night and broccoli on the second. It will be chicken tonight, but I won't know what I will eat until I start preparing it. Shhh. It will be a surprise.
ReplyDeleteI haven't made meatloaf in years! My mother used to like it, so I used to make it for her. But, my daughter didn't care for it and I stopped making it. For some weird reason, it never occurred to me to make it just for myself!

Once again, you at least have a plan ... that is a starting point- I still have good intentions-
ReplyDeleteWe did get to a wonderful farmers' market where I once more proved my complete lack of willpower- sigh- there were lovely displays, but if I am reasonable I know that most of them came up from the Valley, so we were actually buying the fruits and veggies that are on display in supermarkets around here- oh well, they were 'local' somewhere, and we supported the growers- we did manage to get on a list that will notify us when produce that is really local will be at a different market- it was good to enjoy seeing and smelling everything though, and Paige, Dana, and I are already looking forward to the next outing- (and I didn't have to even consider paint colors or flooring choices!)
Today the 'littles' have bobbed and splashed around in the pool most of the day ... they will fall asleep early tonight-it does seem that mid-summer heat is arriving early this year-I hope your area will have enough summer rains to allow you to have heat relief ... and keep your beautiful yard healthy-

DeleteI'm so glad that you were able to go to the farmers' market and get some good, fresh produce, local or not! :) It's the thought that counts and you are supporting those who are growing and selling the products. I'm surprised the colors of the fresh produce didn't cause your daughters to suggest "lemon yellow" or "pale peach" or "lettuce green" (or, should that be 'avocado green'?) as colors for paint or flooring! LOL!
Sounds like the little ones had a lovely day! How lovely that they can play together. :)
We rarely get any summer rain, so, I don't expect any. I am watering the plants, but the "lawn" areas are already brown!
