July Meal Planning - Week 2

Stir-Fried Shirataki Noodles with Sausage



I'm a day late posting this, but, the days are going too fast for me to keep up!  LOL.

This is how the meal plan for last week turned out:

Brunches: cornbread✔, salad✔, scrambled eggs✔, waffles/pancakes, cereal, toast/sandwiches,✔ leftovers✔

Dinners:

Monday/4th of July: Hamburger, baked potato "fries", ice cream, plums (compliments of neighbor S and family; such a blessing!)✔
Tuesday: Leftover baked fish and rice mixture from Sunday's dinner Chicken curry and tortilla (moved up Sunday's planned dinner)
Wednesday:  Stir-fried noodles with sausage and vegetables Chicken curry and the leftover boxed rice mixture from the previous Sunday
Thursday: Leftover noodles Leftover baked fish and the last of the leftover boxed rice (Tuesday's planned dinner, moved to Thursday)
Friday: Chicken curry, rice, broccoli, dhal (lentils) Stir fried shirataki noodles with sausage, broccoli, carrots (Wednesday's planned meal moved to Friday)
Saturday: Leftover rice and curries Tabouleh-like salad, fresh fruit, cake, and gata, compliments of neighbor S, again!
Sunday: Tortillas with leftover chicken curry Leftover stir fried noodles to which I added some bagged coleslaw mix (shredded cabbage and carrots);  (Thursday's planned dinner moved to Sunday)

As you can see, assigning a meal to a particular day didn't turn out all that well!  I kept switching dishes around, which is fine with me.  

Moving on to Week 2, which started yesterday:

Brunches - pizza (Monday), leftover tabouleh-type salad (Tuesday), egg salad or tuna salad sandwiches, French toast,  tortillas and chicken curry, waffles/pancakes, etc.

Dinners - 
- Bread with chicken curry (Monday)
- Leftover stir-fried noodles 
- Spaghetti and sauce 
- Leftover spaghetti and sauce 
- Rice and curries (omelet curry, dhal, cabbage, etc.) 
- Leftover rice and curries
- Cheese toast

  1. I think you can call your meals moveable feasts :) It doesn't matter though as you eat well and that's what counts.

    1. Ooh, I like that term, "movable feasts"! Yes, it was like playing musical chairs with the meal plan! I had scrambled eggs and toast for dinner, tonight, and that wasn't even on the meal plan! LOL!

  3. We don't have a meal plan, but now that we have a nice, workable kitchen, we have been inspired to do more cooking. I hope this trend lasts. :)

  4. You've inspired me to do some meal planning. Even if not followed daily, it does provide ideas. Chicken curry sounds wonderful, but I'd have to make it and I'm being lazy today!

    1. It's good to have an idea of meal possibilities, isn't it? And if you plan to have leftovers, you don't have to cook every day, unless you want to! :) Maybe keep the chicken curry for a day when you aren't feeling too lazy! :) Or, sprinkle curry powder on the pieces of chicken and bake - not quite curry, but, you still have some tasty chicken. :)

  5. I eat a lot of the same things. Big salads for dinner every afternoon, and then I make casseroles for my lunch meal. Leftovers are a way of life for me. I plan to roast a chicken tomorrow and will make enchiladas or fajitas to enjoy for a few days afterward.

    1. It sounds like you have your meals planned very nicely, Stephenie. A roast chicken can provide many meals, including soup made with the bones!

  6. You have some good things planned for this week.
    That neighbor S is such a disrupter isn't she? lol

    I just boiled some potatoes and drizzled a vinaigrette over them and topped with some spring onions to go along with whatever I make for dinner tonight.
    I have the very bottoms of a pot of soup that I may drain the broth off of and mash up the beans that are leftover and make some crispy little burritos with the mixture.

    1. Thank you, Debra; well, I suppose I could always decline offers of the tasty meals, but that would be rude, wouldn't it? :D

      Your potatoes side dish and plans for the soup leftovers sound good! I've a sweet potato that is starting to sprout! I should cut off the sprouting end (put that to root) and cook the rest of it!
