July Meal Planning - Week 1

 

Daughter's Meal Prep

The photo is of my daughter's meal prep for this week:

Japanese style mushroom and tuna pasta using spinach spaghetti (with a butter, sake, and kombu tsuyu sauce), yu choy (similar to bok choy) stirfried with garlic and oyster sauce, mixed vegetable shira ae (mashed tofu salad with nanohana, carrot, and mushroom in a sauce of yuzu flavored tofu and ground toasted sesame seeds, and soy sauce, sugar, and salt), boiled corn, bibimbap sauce, salted sauteed mushrooms and carrot.

It's all vegetarian because she said she still had some of the chicken curry, shrimp curry, and salmon I had sent up with her.

I can see that I need to step up my own meal planning and prep!  LOL.

Last week's meals were mostly based on leftovers: Egg salad sandwiches, cereal, salad, coconut roti, milkrice, and cornbread for brunches; pittu with shrimp curry, leftover salmon, ham sandwiches, coconut roti with chicken curry, hamburgers, and baked frozen battered fish fillets with a boxed rice/wild rice mix to which I added broccoli and corn when cooking:

Sunday Night Dinner

On to my meal plan for this week:

Brunches: cornbread, salad, scrambled eggs, waffles/pancakes, cereal, toast/sandwiches, leftovers

Dinners:

Monday/4th of July: Hamburger, baked potato "fries", ice cream, plums (compliments of neighbor S and family; such a blessing!)
Tuesday: Leftover baked fish and rice mixture from Sunday's dinner
Wednesday:  Stir-fried noodles with sausage and vegetables
Thursday: Leftover noodles
Friday: Chicken curry, rice, broccoli, dhal (lentils)
Saturday: Leftover rice and curries
Sunday: Tortillas with leftover chicken curry

4th of July Dinner and Dessert from S

The ice cream is one of my favorites!  But, when S asked me if I'd like some ice cream, with my hamburger, I thought it would be a serving of ice cream in a bowl or a small container, not a whole quart container!  I will have to hide it from myself!  LOL!

  1. I could happily share that tub of ice cream with you, it sounds delicious, coffee ice cream with almonds and chocolate ribbons ..yummy! Perfect to follow your hamburger meal. Your daughter does really well with her meal prep to accompany what you sent back with her. Your meal planning posts make me feel hungry :)

  2. You are so creative with food. I love seeing how you make food work in all sorts of wonderful ways. The icecream looks amazing! I would never be able to resist it.

  3. Your daughter has raised the bar with her meal prep this week! It looks yummy.

    I'm not planning this week. I have salad items and cold meats for lunches and will pick a home cooked meal from the freezer for dinners. It's going to be an easy week!

  4. I'm glad I just had a good lunch before I looked at all those photos of delicious food, or I would be trying to jump through the laptop screen!
    We are having more rain, I'm starting to think that we are having an English summer, like the ones I knew in my younger days living there.

      Your garden must be getting well watered from all that rain! I think you might have to bottle up some of that rain (instead of the maple syrup) and send some my way! :D

  5. You've inspired me! Recently, I've gotten out of the habit of meal planning/prepping, but it makes life so much easier when I do. I'm trying to get back into the routine and this week I've already put two curries in the freezer, with chow mein cooked for the next two evenings. Xx

  6. What a nice meal prep picture from your daughter. Lots of yummy food; things I hadn't heard of so I was looking them up. lol

    Your meals sound really good for the week with some nice variety.
    I love that flavor ice cream too.

    1. Thank you, Debra; believe me, I had to look up some of the dishes my daughter had made, myself! LOL. I already changed my meal plan a bit, last night, because I cooked a chicken curry, and had the leftover rice mixture with some chicken curry instead of the leftover baked fish! LOL. I'll have the baked fish tonight! I had to hide the ice cream behind some vegetables in the freezer to keep myself from eating it all in one go! :D
