On Sunday

 

Avocado Seedling Christmas Tree: 2012

2012 was the year when my daughter and I didn't put up the regular Christmas tree and I decorated the avocado seedling, still in its jar of water, and called it my Christmas tree.  Dancer was very interested in this new Christmas tree as you can see.

On Sunday, I did a little more freezer inventory.  I am doing this a shelf or two at a time so as not to get too overwhelmed by it.  I pulled out a package of chicken curry, while I was at it, and warmed it up for dinner.  I am trying to clear a space to put the almsgiving food as I cook and freeze them.

Also on Sunday, I did a little more almsgiving preparations and cooked a cashew curry.  I had put the cashews to soak overnight and cooked them in the afternoon.  I cooked two pots of cashew curry - one for the almsgiving and one for our own consumption.  The curry for the almsgiving has been packeted and frozen. Daughter and I enjoyed some of the second pot of cashew curry with our dinner.

I put a packet of dried garbanzo beans to soak on Sunday night, to be boiled and cooked on Monday.  Most of it will be frozen until needed for the almsgiving.  My plan is to cook as many of the curries as possible ahead of time, so that I am left with only a few items to be prepared the night before or the day of. 

We had a bowl of cashew curry for brunch; dinner was rice, chicken curry, cashew curry, and leftover steamed broccoli.  Later, daughter asked for a smoothie, so I blended orange juice, frozen blueberries, peanut butter, and a handful of spinach leaves to make us a smoothie.   

On Sunday, I was grateful for:
- A full freezer (a good problem to have, I'd say)
- Being able to start my almsgiving preparations
- A relaxed day at home
- A working heater
- Daughter's company

Sunday's joyful activity was starting on my almsgiving preparations.

Plans for Monday include:
- Going for my mammogram and scan
- Cooking the garbanzo beans
- Taking the trash cans to the curb
- Watering the back garden
- Doing a load or two of laundry

    1. Thank you, June. Yes, it's the one that is growing in the garden, currently. It got scorched in the summer and we pruned the top off, but, the rest of the tree is doing fine. No flowers or fruit, yet.

  2. Monday included a freezer inventory, and making plans for our family meals over Christmas. Grateful for food and warmth when so many are without.

  3. Lovely little tree. So glad it survived (I read a previous comment!). Well done with the freezer inventory. I need to do one, but it's so cold and I'm struggling to stay warm most days lol.

    1. Thank you, Sharon. Yes, the tree is growing in my garden. Maybe one day it might produce an avocado! I only have the freezer that is part of my side-by-side fridge/freezer, so, taking inventory is not that big of a project. But, I like to do it one or two shelves at a time.

    1. Thank you, Jules. I now have two of the curries cooked and frozen. Just need to do the dhal, next. The rest of the curries will have to be cooked the night before the almsgiving because they don't freeze well.
      I had fun decorating my avocado tree. :D

  5. Reading the comments, I see the Christmas Avocado is in fact the avocado in the garden currently. It's been around a while hasn't it?
    You are smart to do the almsgiving preparations ahead of time. It will certainly make the day less hectic to have many things all set to go.

    1. Yes, that avocado tree has been around for a long time! I wonder if it will ever bear fruit?
      Thank you; yes, I'm trying to do as much prep work ahead of time as possible, because the more I do now, the less I'll have to do on the day, itself. :)

  6. I'm reminded of our first Christmas in Canada. DH was sent to the area where we live now and I was given a ticket to fly up and join him. I had mince pies, cake and presents in my luggage, along with a few small Christmas decorations. I found some fallen pine branches outside the staff hotel and stuck them in a box and decorated them! A Christmas tree can be whatever you make it from.

    1. It sounds like you made it a Christmas to remember, Bushlady. I agree with you about a Christmas tree being whatever you make it from. I once decorated a philodendron houseplant with some card cutouts and a few ribbons. Daughter made herself that cardboard Christmas tree with decorations she made in 2020, when it looked like she might not be able to make it home for Christmas:
