S's Potato Salad |
Today (Wednesday) my neighbor S called and brought me some black grapes and some chocolates! I asked her for her potato salad recipe and she told me how she makes it.
She said she used about 6 potatoes (but, I guess one can use as many or as few as one likes).
Boil and peel the potatoes, then, while still warm, cut up into small cubes.
Pour some olive oil (or oil of your choice) over them while still warm and mix to coat the potatoes.
Add salt, black pepper, cumin powder, and Aleppo pepper flakes (a mild red pepper) to taste.
Slice two green onions and about 3 to 4 cloves of garlic and add to the potatoes.
Add dill or cilantro (she said she used cilantro as that's what she had; I asked if parsley would be OK, too, as not everyone likes cilantro and she said parsley would be fine, too) and lemon juice to taste.
Then, serve and enjoy!

That's interesting. I woke up this morning thinking about potatoes! I usually buy them in small quantities (when I don't have any growing in the garden) But before Christmas I bought a large sack from our wonderful greengrocers. The family all enjoy spuds and it worked out way cheaper. This looks like a recipe I might try (I'd omit the coriander/cilantro though, I prefer doll or Parsley)

DeleteFrom the picture, I thought the potato salad was encased in some sort of jelly which I thought sounded horrible (I've heard of American salads in jelly for Thanksgiving!) But then I realised it was the plastic wrap over the dish! Love FD xx
ReplyDeleteLOL! I'm not sure I'd care much for jellied potato salad! Then, again, I have one of my mother's old British cookbooks that calls for aspic in generous amounts for various dishes, from salads to main course! :D

ReplyDeleteYou are welcome, Andrea! Yes, my neighbor and her whole family are good cooks (and I know that you make some delicious dishes, yourself!) Yes, I, too, thought this version would be healthier than the one made with mayo (although, I like that version, too!)

This afternoon I will go to Manhattan for an antiques show. It’s a benefit and my sister invited me as her guest. I am taking the express bus so I won’t need to transfer in this bitterly cold weather.

Yes, snow in parts of Florida according to that weather report. It might have been in the northern part.
My cousin's grandson is coming from New York State to celebrate his 5th birthday here, in So. California, and he wants the theme to be "Winter Wonderland"! LOL. I'm not sure if he knows what winter is like down here! :D
Thanks for sharing this recipe. I have copied it and I will try it, but I may have to resort to a wee bit of garlic powder instead of actual garlic, as DH doesn't need to know there is garlic in anything! (What the eye doesn't see, the heart doesn't grieve over, right?). I wonder how the royal chefs managed to cook without garlic because Queen Elizabeth wouldn't have it used. Do you think they sneaked some in just to enhance the flavour of their dishes without it being obvious?
ReplyDeleteI'm sure it would be fine with just a little garlic powder or you could probably leave it out without it making that much of a difference. I'm sure the royal chefs left it out, completely! The enhanced flavor was probably not worth the risk of displeasing the monarch and losing their jobs! :D
