I guess this is Week 2 (December 11 - 17)? I didn't do a Week 1, though. Which worked out well enough, but, it became very obvious to me that I do better when I have a meal plan of sorts because then, I remember to take things out of the freezer in time to thaw!
So, here's this week's meal plan, based mainly on what I have in the freezer and pantry as I haven't gone grocery shopping since before Thanksgiving:
Brunches: Pancakes and bacon (bacon leftover from Sunday's brunch of scrambled egg, bacon, and hash browns); Uppuma (Indian style cream of wheat); toast and cream cheese; scrambled egg and hash browns with or without sausage; sauteed garbanzo beans; doughnuts(?), leftovers
Dinners:
- Sausages (from the freezer), mashed potato, and vegetables (carrots, snowpeas, broccoli), gravy
- Sauteed chicken (from the freezer) with baked potato wedges and vegetables
- Mackerel curry, moringa curry, dhal (lentils) served with rice and tomato chutney
- Leftovers, as each of the planned dinners will result in leftovers
Snacks: Fruit, nuts, cranberry swirls, leftover cornbread from Thanksgiving, plus cream crackers, Lemon Puffs biscuits(cookies), and murukku (a spicy fried snack) all from the Sri Lankan store!
That is the plan. How it works out is anyone's guess! However, I have taken out a package of sauteed chicken thighs (3 pieces, I believe) and a package of mild Italian sausages (5 sausages) from the freezer to thaw, so, there will be some chicken and some sausages, this week!

Hi Bless, No, I don't plan my meals. I have been eating more cooked vegetables this week. I think my daily salads are really important for health, though. You are so organized and efficient.
ReplyDeleteThank you, Stephenie. I don't think I am all that organized and efficient, but, I would like to be! :) I think you eat a very healthy diet, with lots of vegetables and daily salads. I am trying to incorporate more vegetables in my meals. I have more success with having vegetables if I meal plan!

ReplyDeleteIf I don't plan ahead, I usually don't think about dinner until about 30 minutes before I want to eat, and then, it is too late to thaw things! Then I look for convenience foods!
DeleteNo meal plan here either except to eat some food that's been in the freezer for a while. Last night I made a chicken and broccoli casserole with chicken from the freezer.

DeleteMy cooking during the last week DH was away has provided some meals in the freezer. Yesterday we had some precooked pork chops and today some chili. Not sure about tomorrow, I may make a mushroom omelet as our neighbour brought over my order of eggs this afternoon.
ReplyDeleteGood planning on your part to cook extra and freeze, Bushlady. A mushroom omelet sounds good! You know, omelets were one of the first things I learned to cook when we had weekly cookery classes at school and I used to make them all the time, but, I haven't made an omelet in a long time! Scrambled eggs seems easier and quicker, I guess!
