Cooking on Thursday

I did office work for the better part of the day, today, but, in the afternoon, I decided to cook a lentil (dhal) curry and okra for my lunch.  I had them with leftover rice and beef curry I had in the fridge:

Lunch: Rice and Curries: Okra, Lentils, Beef

Since so many of you said you were interested in my food, I took some pictures and will post directions in a separate post, maybe over the weekend.

Later in the evening, I drove to Staples to recycle some of the printer ink cartridges (can only recycle 10 per month, with my particular rewards card, to receive the $2 recycling reward).

After I came home, I cleaned both bathrooms and vacuumed daughter's bedroom and the hallway.  And since I had the vacuum out, I vacuumed the kitchen, too, and my bedroom, again.  The 3rd bedroom is a bit of a mess, still, but the rest of the house is tidy and clean!

Dinner was a sandwich made with some of yesterday's steak, sliced.

Thursday's To Do List:
- Office work - DONE
- Do a load of laundry
- Clean both bathrooms - DONE
- Give Dancer his flea meds.
- Take used printer ink cartridges for recycling - DONE
- Vacuum hallway and daughter's bedroom - DONE
- Call my friend to confirm October prayer meeting date - DONE
- Clean the litter box (will do after I finish this post)

I didn't do any laundry or give Dancer his flea prevention meds.  I will carry them over to tomorrow or the weekend.

Friday's To Do List:

- Radiation oncologist appointment at 9:00 a.m.
- Regular oncologist and hydration appointment at 9:45 a.m.
- Office work
- Ask gardener to fix broken sprinkler
- Laundry?
- Dancer's flea meds.
- Do a baby step in the 3rd bedroom for cleaning.

My cousin will accompany me to my medical appointments, tomorrow.  In the afternoon, my gardener friend will come to do the garden.

Today, I am grateful for:
- A productive day
- The car started!  :D
- Text from cousin
- Phone call from aunt
- Pleasant weather

How was your day, today?  What did you have for lunch and dinner?

  1. I received the 2 Sri Lankans cookbooks from the library but I haven't looked at them yet.

You did a lot! I need to remember to go to Staples to turn in my cartridges and probably buy new ones so I requalify for receiving the rewards. I don't think they count the 6 months correctly, it seems that I'm always buying ink and they always tell me that I'm about to not be qualified for the ink rewards anymore...

Today I didn't do anything that wasn't on the computer or errands. I did get to go visit my BFF and later on have a long chat with my neighbor. Anything to avoid my chores, lol. Dinner tonight will be rotisserie chicken and mashed potatoes. I got the chicken for free from Publix today, woo!

    1. Lucky you to get a free rotisserie chicken! Dinner is practically all done and it's free too! Maybe you can bribe the kids into doing your chores for you? You can plead kitten duty! ;)

  2. It just goes to show how small the world is. I could buy okra (I've never had it) and there is a Staples in town. I don't have a rewards card as I daren't go in there! You are doing well on the cleaning. Thanks for your good wishes. x

    1. We live in a global village in some ways, don't we? I didn't like okra until recently, but I'll eat them the way I prepare them. Maybe you'll try them one of these days.

  3. I've just been catching up on your news and found all kinds of interesting things - coconut flat bread, a pristine kitchen, news of a distant prayer meeting, photos of jakfruit and interesting meals. I am always so impressed that you cook so well for one. When my husband was away recently, I had a cottage cheese salad at least 3 times for supper! I did have some leftover meat dishes sometimes, including a single portion of chili that I had frozen in anticipation of his absence.

We had the family here last Sunday and Monday and went down to the beach at the river, where granddaughter had a great time with other neighbours' grandchildren, on and off the raft (jumping). When I walked down there several times this week it looked so lonely with no children there - all gone away and back to school. But the ducks were still around, often at least 50 can be counted!

You sound to be getting back into your stride, but as another of your followers commented, do take things easy and give yourself a chance to heal. (((Hugs)))

    1. Bushlady, that's a nice summary of my week! :) I enjoy cooking (for the most part). But there are days when I'll make scrambled eggs on toast for dinner. I just don't blog about those meals! :D

Sounds like your granddaughter had a fun time playing at the beach! She'll have some lovely summer memories. I bet the ducks were on the lookout for some treats.

Thank you for the reminder to slow down a bit. I have to remind myself that I do have a valid excuse for taking it easy!

Hope you have a blessed weekend.

  4. One of my favorite recipes is a tomato gumbo soup using the recipe in Laurels Kitchen cookbook. It is so good and has okra in it which helps thicken it up. Some of the other ingredients are chicken and rice. I added some chicken. You can find the recipe by Googling "vegetable gumbo soup recipe from Laurel's kitchen". Then go down the list to "The New Laurel's Kitchen page 152..." and click on it for the recipe. You need small okra that are fresh.

    1. Thank you, Marylynn. I checked it out and it sounds like a lovely soup. I shall try it out, one of these days. Might need to halve the recipe, or maybe I'll make it for the almsgiving. I'm always looking for a good vegetarian soup to serve then. :)
