Tuesday's Productivity


Zucchini Bread

 I went to the office, in the morning, and had another rather productive day.  Came home in the evening and brought in the empty trash cans, checked the mail, video chatted with daughter (she went to an office picnic, today!), called a friend to wish her for her birthday, and baked three loaves of zucchini bread.  I had bought three small zucchinis last week, which came to just over 1 lb.; two of them gave me 3 cups of grated zucchini, so I baked three loaves.  I only had 3 eggs left in the carton, which was just enough to make three loaves.  I will share them with daughter when I next visit her, and there'll be some for when my friend visits next weekend and to share with my neighbor.

With the 3rd zucchini - I sliced and sauted it and had with salmon, rice, and tomato chutney for my dinner: 

Dinner: Sauted zucchini, salmon, rice, tomato chutney

 Focus on abundance: 3 loaves of zucchini bread to share with others.

  1. I have never had zucchini bread. I don't even know if I have ever had zucchini! I do have some in the kitchen though from my brother's garden.

  2. I love zucchini bread.. I made 2 loaves of banana bread the other day.. I am going to buy some zucchini when I go to the store.. We planted some in the garden, but it died in all the rain we got.

    1. Judy, banana bread is good, too. Too bad your zucchini plants died. Isn't it funny how your plants are dying from too much rain and my plants are dying from a lack of rain? There should be a happy medium!

  3. Hi Bless! I've never made zucchini bread but it sounds yummy! Is it similar to banana bread with similar spices?

    1. Carolyn, yes, it is similar to banana bread. I used the recipe from my Better Homes and Gardens cookbook; the recipe is for 1 loaf but I've doubled and tripled it without any problems. The spices are cinnamon (1 tsp) and nutmeg (1/4 tsp). The recipe also calls for walnuts, but I've made it without walnuts, as well.

    2. I have that cookbook and will give it a try. Nice to try new recipes because I sometimes tend to make the same ones repeatedly. Good to know multiple loaves turn out well too. Thanks for sharing!

    3. The internet, too, has a number of similar recipes. But the BHG recipe is the one I always use. Hope you make it and like it.
