Starting a New Week on Monday

Avocado Pudding

I went to bed at 2:30 a.m. and slept till 9:30 a.m.  Then, I got up, turned the porch lights off, fed the cats, and went back to sleep!  I can honestly say that I slept all morning!  Daughter had woken up early and was doing her work when I finally came out of the bedroom.

Aunt C called in the afternoon and we had a very long chat for over one hour!  She was feeling lonely and she knows that I will listen to her stories of the past, even though I have heard them many times before.  To misquote John Milton, "They also serve who sit and listen"!  

In the evening, I walked a bit in the garden, took the kitchen waste to the compost pit, and picked some fresh oranges.  I cut up two of the oranges and daughter and I enjoyed them as a snack.  

Then, after daughter finished her work for the day, I had the robot vacuum cleaner vacuum the family room, dining area, and living room.  It was mostly good, today, and responded to the phone commands for the most part, but, there was a bit of confusion at one point (it was in the middle of a job and the phone was telling me that it was charging at its charging station!) and my daughter had to reset it!  But, what a blessing to have it working at a time like this when I am having issues with my leg!  I did a little light dusting in the living room and dining area, as well.

Daughter took the trash cans to the curb for me in the evening and later, she did the dishes and put some rice to cook while I cooked a green beans curry.  Brunch had been salmon sandwiches, with leftover baked salmon fillet as the filling.  We had freshly cooked rice and green beans with leftover pork curry and tomato chutney for dinner.  For dessert, I made avocado pudding with a large, ripe avocado, mashed with sweetened condensed milk.  I don't like guacamole or avocado toast or avocados in salads, etc.  For me, an avocado is a fruit to be made into a pudding and eaten as dessert.  

I put mung beans to soak overnight to boil for brunch, tomorrow.  Dinner will be chicken curry (from the freezer) with leftover rice and green beans. That's the extent of my meal planning for the week! I haven't planned any further than that!

On Monday, I am grateful for:

- Being able to sleep in
- Long phone chats with aunt
- Daughter's help with some of the household chores
- Fresh oranges from the garden
- The robot vacuum helping me to clean!

Today's joyful activity was crocheting.

Plans for tomorrow include doing a little more light housework and putting away some laundry.

  1. Your body was telling you you needed to rest and so you benefited from a good long sleep. That's nice that your aunt was able to have a good long chat with you. When I was working some customers would want to chat and just like your aunt it's because they are lonely and I was always mindful that I may have been the only person to chat to that day. I'm so glad your daughter is there to help you around the house. I have to take Tilly to the groomer this afternoon but I will wear a mask as I don't want to infect the shop staff with my germs.

    1. Yes, Eileen; that's what my daughter said, too, that my body needed the sleep to repair itself. I felt it was a blessing to be able to chat with my aunt for as long as she wanted to talk. Technically speaking, she's my father's first cousin's widow, but I call her my aunt. It is so nice to have daughter around to help me with some of the household tasks while I have issues with my leg! I hope Tilly enjoyed her visit to the groomer and you recover quickly. Take care of yourself!

  2. I don't like avocado as a "savoury" either. But I'd never considered it for use in a dessert. I'm glad your daughter is around to help with trash cans etc. I do hope your leg is fully recovered soon. I did lots of gardening yesterday. Today I need to wash all the floors, as we both managed to bring myself into the house (the ground is still very wet after all the recent rains) and hopefully I will have time to sew after that...

    1. I always had avocado in a pudding form, growing up. I didn't even know that it was eaten any other way! It's a blessing to have my daughter around to help me around the house while I am experiencing this blood clot. The leg is much better, today, not as painful, so, I'm hopeful that the clot will dissolve over the next couple of days.
      You've had a couple of busy days with gardening and washing floors! I do hope you get some time to relax and sew. I've been enjoying watching some British gardening shows online, these past couple of days. :)

  3. I like the John Milton quote. I do the same thing for a former neighbor. Her family is a mess and she talks non-stop, so most people avoid her. But I figure she needs someone to listen to her, so that's what I do. I can go the entire conversation with only inserting a few words here and there.

    1. You are a blessing to your former neighbor, June. Yes, often just a few words, here and there, are all that are required. Aunt just wants someone to listen to her ramble without being told, "You've said that before" or similar. Aunt was teacher, well into her 70s, before she retired, and she used to read a lot. But, now, her eye sight is failing (she has macular degeneration) and there's only so much TV she can watch. I suggested audio books, but, someone needs to set it up for her. But, more than anything else, she just needs someone to talk to.

  4. I’m new to eating avocados, and have only made avocado toast and a simple guacamole. Your pudding sounds delicious—something new to experience.
    Your Aunt C must treasure her phone calls with you. I believe that your patience in listening to her stories will come back in grace to you.
    Oh that mischievous vacuum! I envision a children’s story when you describe its antics. It definitely has a personality.
    It’s so nice that your daughter’s remote work is successful, allowing her to stay a bit longer. It’s so easy to get used to her company and her helpfulness, isn’t it?
    I hope your leg continues to heal and that you’re soon back to normal. 😊

    1. I always ate avocados as a pudding, growing up, and that's the only way I like to eat them! Obviously, it is an occasional treat!
      It's a pleasure to chat with Aunt C; she's one of the few relatives still alive who knew my father (her husband and my father were first cousins) and every now and then, she'll tell me of her recollections of him. He was very particular about things and she says she was terrified of him! LOL.
      Ha, ha, that vacuum does have a mind of its own, doesn't it?
      Yes, it's a blessing that my daughter can work remotely and stay a bit longer. It's very easy to get used to having her home and you know I'm going to miss her when she leaves!

  5. I'm really intrigued by that Avocado pudding. I wonder if I dare try it on DH one day? The condensed milk is quite expensive to buy but I did once find a recipe for making it. Now, if I could only find out what I did with that recipe......

    1. I am pretty sure that you can substitute evaporated milk instead of condensed milk for the pudding, Bushlady. But, if you want to make your own condensed milk, you need to cook milk and sugar over a very low heat for a long time, stirring all the time, until the water in the milk is evaporated and the volume of milk is reduced by at least half. I'd use about a 1/4-1/3 cup of sugar to every cup of milk. You could, also, make condensed milk with evaporated milk, adding about 1 cup of sugar to a 12 oz. can of evaporated milk and boiling it, again, over low heat and stirring all the time, until it thickens. It should take less time as the evaporated milk is already thicker than regular milk.

  6. When my late mother was diagnosed with terminal cancer, I rang her every night for a listen. Due to the phone plan, it was capped at 59 minutes and I used to play patience while I listened.

  7. I'm so glad you managed to get a lot of sleep. Sometimes our bodies just really need it to heal. I hope you're feeling a lot better.
    It's lovely that you're willing to listen to stories over and over. I really liked it when Mum would tell me stories of her life. I just wish she'd written them down or recorded them. Hopefully you will remember her stories or even better she has written or recorded some.

    1. Thank you, Sharon; yes, the extra sleep helped, I think, because I'm feeling better.
      I love hearing old stories. My mother used to tell me about how she would ride in a buggy or a rickshaw when she went to school, etc., or about old family gatherings. I loved to hear them. :)

    You are nice to let your aunt talk when she needs to.
    Reading the last 2 entries, it seems like you caught up on some much needed sleep. That will help your leg heal.
    I bet the avocado pudding was good with the sweetened condensed milk as the basis.

    1. My aunt enjoys talking about incidents from her past and her daughter often has no time to listen to the old stories. Or, she tells her mother to move on and not live in the past. I let her talk without telling her anything like that and that helps her, I think. :)
      Yes, I caught up on sleep and I've gone back to my regular sleep schedule of staying up too late and getting up at mid-morning!
      The avocado pudding was delicious! I love avocado pudding!
