Mostly Cloudy on Sunday

This is the latest library book I've read.  It is the story of the author's family, starting with her great-great grandfather, an herbalist, who was recruited to come to California in 1866 to tend to the Chinese laborers who had been hired to work on the railroad and his youngest son, the author's great-grandfather who came to look for his father and brothers. and ending with the author, her cousins, and their children.  It is the story of one family's dreams, struggles, successes, and failures; and I think the author writes about the various members of the family and their strengths and weaknesses with sympathy and understanding.  I really enjoyed reading it.  

Sunday started out sunny, but, it soon became cloudy.  There was some rain in the forecast, but, it didn't rain in my area.

Once again, I had stayed up practically all night, going to bed at 5:00 a.m. and waking up well after noon.  I woke up once at 10:00 a.m., fed the cats, saw that it was sunny, turned up the heater because the house was cold (thermostat had been set at 60F) and went back to bed, "until the house warms up a bit" and fell asleep.  I woke up, again, at 11:00 a.m., when my cousin texted, but I fell asleep again, and didn't wake up until my daughter called to check on me.  I sounded so sleepy that she told me to go back to sleep and I did!  On the positive side, I got my 8 hours of sleep.  On the negative side, I slept away most of the sunny hours, because it became cloudy soon after I woke up!

I had my "morning" cup of tea in the early afternoon, said my prayers, replied to blog comments, conveyed the birthday wishes to my daughter (she says, "Thank you"), did another load of laundry (blankets and a quilt from my daughter's bed - Dancer has been sleeping on them and his fur is all over them!), and I cooked the packet of ground beef I had bought earlier in the week:

Cooked Ground Beef with Vegetables

To 1 lb. of ground beef, I added, from the freezer, a grated zucchini, some homegrown onion , a little celery, some bell pepper, a small amount of broccoli, and some tomato; all the vegetables, other than the grated zucchini, were ground in the mini food processor my daughter had given me one Christmas, thus saving myself a lot of chopping by hand.  I added a little seasoning - garlic powder, ground black pepper, salt, soy sauce and Worcestershire sauce,  I would have added grated carrots, too, if I had any fresh carrots, but, I don't have any fresh carrots and I didn't want to add a can of sliced carrots.  

Breakfast, eaten around 3:00 p.m. had been a banana.  So, around 6:30 p.m., after I had cooked the ground beef mixture, I took out a small package of pasta sauce I had in the freezer and warmed it up in the microwave.  Then, I cooked a small amount of angel hair pasta, added it to the pasta sauce, added some ground beef to it, and had that for my lunch/dinner (or "linner").  I kept some of the ground beef in the fridge to use during the week (maybe to make a small cottage pie or turn into a keema curry) and froze the rest.  

For dessert, I made vanilla pudding, using one cup milk, about a quarter cup of sugar, a tablespoon of cornstarch, and a little vanilla essence.  I also added some small raisins (currants) to the pudding, something I remember from my childhood.  I forgot to take a picture, but, it was delicious!  I ate some for dessert and some for a snack, later.

After dinner, I sat down and did some paperwork, sorting through all the voting information and ads for the upcoming Primary elections, filling out my sample ballot and then, the actual ballot which I will drop off at the official ballot box at the library, tomorrow.  I preferred to vote in person and did so until March 2020, just before the first Covid lockdown took place.  I have not voted in person since then.  I will also return two of my library books at the same time.  

On Sunday, I was grateful for:

- Being able to sleep in!
- Working appliances
- Libraries
- Being able to participate in elections and vote
- Having the option to vote by mail, drop off ballots, or vote in person

Sunday's joyful activity was ... sleeping in!  LOL.  

Plans for Monday include dropping off my ballot and visiting the library to return books.

  1. That does sound an interesting read. I think if I was on my own I could easily become a night owl but as you say it's a shame to miss out on the sunshine hours. Your minced beef and vegetables looks tasty. I'm not the greatest fan of carrots but canned carrots just don't taste anything like fresh carrots in my opinion and I would never buy them. Your vanilla pudding sounds very yummy :)

    1. I enjoyed the book. I'm not sure how I became such a night owl! I used to go to sleep around 10:30 p.m. and get up very early in the mornings (around 5:30 a.m.) at one time!
      I bought the canned carrots during the Covid lockdown, before I learned about the free grocery pick up services and there were supply chain issues. I ordered several cans of vegetables, including sliced carrots, to have on hand and had them delivered. I was going to add them to soups and casseroles. I've had the canned carrots in soup and they weren't bad at all. I might still add them to the ground beef when I go to prepare the meal.
      The vanilla pudding hit the spot, as they say. :)

  2. It's always so rewarding to find & read a book that you enjoy. IMO it's one of the great things about libraries, we can be adventurous with our reading for free. Happy belated birthday wishes to your daughter & won't it be nice for her to visit you in person soon.

    1. I love libraries! When I was at the university, I worked part-time at the university library and it was one of the jobs I've enjoyed the most! Shelving books was fun because I'd find other interesting books to read!

  3. Your post reminded me that I have a form to fill out if I want to vote by mail. Just checked and I have not missed the deadline. That's good. I usually vote in person and prefer that, but it's nice to have an option.

    1. I, too, prefer to vote in person, June, but, not quite ready for that, yet. Maybe this November! :) It's good to have options, isn't it?

  4. That must feel good—to catch up on your sleep! It’s one thing I don’t struggle with. I grew up in a house right next to railroad tracks and I credit that for my much-envied ability to sleep through anything.
    It’s warm today, in the fifties, but we’re missing the beautiful sunshine we had yesterday.
    Your beef and vegetable mix looks good. I started a pot of split pea soup this morning before work (from home), so that will be a few meals this week plus some to freeze. 😊

      Lucky you being able to sleep through anything! It's in the mid-fifties here, today, and raining! I have the small electric space heater on , near me, as I type!
      Split pea soup is good for this type of weather, isn't it? Good planning on your part to put the soup to cook before you started work. :)

  5. Well done getting your 8 hours of sleep, but I'm wondering if you are living in the wrong time zone! 😀. I think you would be in bed around 11.30 pm if you were in Sri Lanka! The vanilla pudding sounds good.

    1. Thank you, Bushlady. LOL, definitely the wrong time zone! :D I should move to Hawaii - my 5:00 a.m. would then be only 3:00 a.m.! Sri Lanka is 13 1/2 hours ahead of us. So, 5:00 a.m. my time would be 6:30 p.m. there. Way too early to go to bed! :D
      I love vanilla pudding, but, chocolate pudding is a favorite, too! :D

  6. When ground chuck is its cheapest here, I buy the big family pack, come home and cook it much like you did, padding it with whatever vegetables we have on hand. Then I pack it in meal size portions and freeze for future meals.
    Like you I have my days and nights mixed up right now. I have to get back to a more normal sleeping time.

    1. It's good to have cooked ground meat in the freezer for quick meals, isn't it? And adding vegetables to it stretches it out, nicely. :)
      I'm sorry to hear that you have your days and nights mixed up, too! Sometimes, even when I get to bed earlier, I can't fall asleep until the wee hours.

  7. I've not read that book, though I've heard of it and should add it to my retirement reading list (it's getting very long)! I look forward to when I can stay up reading all night on a "school night"! Today was my father's birthday. He'd be 99. I am grateful for him , he was a very good person. I hope the sun comes back out for you. It is raining here, which we really need as it's been so dry.

    1. I enjoyed the book, Celie and I hope you enjoy it, too. One of the good things about being retired is, you can stay up as late as you like and sleep in as late as you like, provided your pet allows you to! When I first retired, Dancer was so used to me getting up at 6:00 a.m. and feeding him, he kept waking me up!
      Happy birthday to your father; I hope your memories of him comfort you as you observe his birth anniversary. My father's birthday will be later this month.
      It's been partly sunny, today, and I am enjoying it. Glad you are getting some rain, if it has been so dry. Good for the spring plants. :)

    1. Thank you, Sharon. Yes, she had a good day with crafting with some friends in the afternoon and I told her to get herself a special dinner on my account. We'll celebrate when she comes down, hopefully, later this week. :)

  9. Your book sounds very interesting. A different book by Lisa See, Shangai Girls, has always been a book I've wanted to read. Your post reminded me of that.
    You got some good sleep! I bet you felt nice and rested. It's often hard to go back to sleep once you've woken up so it's good you were able to.
    You are smart to stretch the ground beef like you did with the addition of all of your vegetables.
    A small food processor makes things easy sometimes.
    I love pudding. My problem is I eat the entire batch in one day. Little bowl by little bowl. :)

    1. I found the book to be very interesting. I borrowed another novel written by the author, but, I think the library also has Shanghai Girls on the shelves.
      Yes, if I am tired enough, I have no problem falling asleep again!
      The ground beef got even more stretched out, last night, with a grated carrot and a mashed boiled potato and made into a filling for pastries we call patties. We had them for dinner, last night. :)
      Ha, ha, I have to be careful with my pudding consumption, but, yes, one little bowl by one little bowl! :D
