October/November Meal Plans

I'm behind with my meal planning!  I made a meal plan for the last week of October and it worked out well enough during the first part of the week, but, I sort of went off the plan towards the end,  I had cooked the salmon I bought and although I froze most of it, I kept some of it in the fridge for my dinners for the rest of the week, with rice, green beans and/or green peas.  I didn't keep a list of what I ate each day, either; suffice it to say that I didn't go hungry!

This week's meal plan is late, too!  I was going to post a meal plan on Monday, but, I didn't and here it is, Thursday evening, already!

So, here's the much delayed meal plan:

Brunches: Leftover pancakes (from the weekend) with seeni sambol from a jar (Monday), Salmon sandwich (Tuesday), Milkrice with homemade seeni sambol (Wednesday, Nov. 1), leftover milkrice and seeni sambol (Thursday), scrambled egg and toast, peanut butter toast, French toast

Dinners:
Monday: Leftover salmon, rice, and green peas with tomato chutney
Tuesday: Macaroni and cheese, hamburger patty, cucumber salad
Wednesday: Macaroni and cheese, hamburger patty, cucumber salad
Thursday: Macaroni and cheese with ham and green peas
Friday:  Leftovers
Saturday: Ground turkey keema curry and rice
Sunday:  Leftovers 

Not a very inspired meal plan, but, I needed to cook that box of mac & cheese that had reached expiry date and a box will last me for four meals, usually.  By the end of which, I'm tired of mac & cheese!  But, I'm not complaining.  As always, I am grateful that I have the luxury of planning meals and being able to have even a limited variety and enough to eat, when so many hundreds and thousands of others around the world go hungry.

  1. My mother always used to tell me that there were starving children in the world and I had to eat up what I was served. It's made me mindful all my life not to waste food and I rarely do. I'm sure you enjoyed the salmon you bought in readiness for your daughter's visit.

    1. I think all our mothers said that to us! I really try not to waste food; occasionally, it happens, though, and then I feel very bad about it. I did enjoy the salmon I cooked! I froze most of it in portions and we'll enjoy that when my daughter gets here. :)

  2. We don't do formal meal planning around here, although we could use more of a plan. I do know the plan for today. We are going to take my father-in-law to lunch at a Mexican restaurant. And I always have leftovers which will be my dinner. :)

    1. Sometimes, a formal meal plan doesn't work out and that's fine, too. Or, often, I will make a meal plan and then, change it as the week goes on. I do like your meal plan for today! :)

  3. Mac and Cheese does go a long way. Once in a while I add a small can of drained tuna and put it in a casserole dish with grated cheese on top, then it goes in the oven, and of course it is enough for 2 meals for us.

    1. Yes, I've added tuna to mac & cheese, but, haven't baked it afterwards. My daughter almost always adds tuna to mac & cheese when she makes it. I like mac & cheese with chicken curry, too! :)

  4. So the macaroni and cheese is now gone. Do you have more in your pantry? Some that isn't expired ;). Or will you now look for a sale and stock up?

    1. The cooked mac and cheese is still hanging around! I had some for my dinner last night and there's still more leftover! I am just about ready to throw that last serving, but, I won't, of course.
      Thankfully, there's no more boxed mac and cheese in the pantry! I think I'll hold off on buying more for some time! :D

  5. You have some delicious meal ideas there, Bless. I haven't eaten macaroni and cheese in ages, I have a feeling it might now be on the menu this week :)
    I'm still doing okay with my meal planning. I'm just running short on ideas for quick to prepare, but healthy dinners. X

      Glad you are doing okay with your meal planning. For quick, healthy dinners, consider pan sauteed chicken (or just about any other meat or fish) with vegetables, stir frys, or slow cooker dinners (if you have a slow cooker) that you can put together the night before and leave to cook all day.
