Brunch: Waffles and Apples |
Today was a very slightly cooler day. I actually felt like cooking! I made waffles for brunch. I ate half of a waffle with leftover corned beef and the other half with an apple I had sliced and cooked with a little butter and sugar.
Later in the evening, I made chicken and vegetable soup. I had stashed several zipper bags of chicken bones in the freezer, over the last few months. I pulled them all out, added water, and boiled them to make the stock. Then, I took some of that stock, added onions, carrots, celery, tomatoes, potatoes, and a handful of red lentils and made a pot of soup. Dinner was a bowl of soup and two pieces of toast:

In between brunch and dinner, I relaxed and read. There were several phone calls from my half-sister, neighbor T, friend R, and others, as well.
After dinner, I watched the new PBS special about country music.
Today, I am grateful for:
- A cooler day
- Phone calls from family and friends
- Library books
- Interesting TV programs
- A relaxed day
Monday's To Do List:
- Put gas to the car
- Do some grocery shopping
- Take trash cans to the curb for Tuesday trash pick up
- Water the garden, front and back

DeleteWhat did you think about the special on country music? I heard a review that said the program was too much fluff and not enough real history. It still sounded good to me. I'll have to see if I can catch it in reruns.
ReplyDeleteI liked it. It's a series of 8 episodes, being aired every evening, this week. Yesterday's was episode 1 and they tried to cover a lot of history, from the origins to the end of the 1920s. They touched on the roots of country music, and maybe they could have done a more in depth study of it, but, not everyone is into a lot of history and, I suppose, they needed to keep it fast moving and entertaining. You might be able to watch last night's episode online.

ReplyDeleteI had a productive Sunday. I was able to finish another week of lesson plans, weeded and added a border in the backyard, and crochet a bit. :)

DeleteThere's something very satisfying about retrieving things hoarded in the freezer and tidying them up usefully, isn't there? Your soup looks delicious, and it is good to save the bones until you have enough to use.
ReplyDeleteSunday and today's weather has been glorious and we even ate out on the deck. The nights get cool so the furnace goes on for a while to take the chill off, but not much to complain about when the sun shines all day and the sky is blue!
I always stash bits and pieces in the freezer, Bushlady, and pull them out to add to soups and stews, etc. I replaced the chicken bones with several containers of chicken stock!
