Then, I had a cup of coffee, emailed my daughter about a couple of things, responded to blog comments, read and commented on other blogs and rested and relaxed. One of my friends emailed me and I replied to her email. She said it should be fine to freeze the squash, so, I labelled the lunch I had packed yesterday to take to the office today, and froze it so it could be a dinner on one of those nights when I don't feel like cooking (or don't want what I have in the fridge, etc.)
But I did have some other leftover pasta with some of the spaghetti sauce I had made yesterday, for my lunch today, so I am still following my so-called meal plan! I had the last of the bananas for dessert. There is more spaghetti and sauce to take for my lunch tomorrow; I just have to make a salad to take with it, as I need to use up all those heads of lettuce I bought! I also took out a packet of frozen cooked chicken breast tenders to thaw - I had added teriyaki sauce to them when I cooked them; if I slice them up and add some veggies to it, it'll make a good stir-fry to have with rice for tomorrow's dinner.
When I took out the chicken breasts, I also did a quick sort through of the freezer - I have cooked ground beef, another packet of cooked teriyaki chicken tenders, sausage meat, a packet of bacon, two fish steaks, a packet of cooked shrimp curry, 5 frozen turkey pot pies, and a bag full of leftover roast chicken bones to make soup, plus a packet or two of cooked garbanzo beans, some cooked vegetables, several bags of frozen diced onions and celery, and other bits and pieces. I think I am good for the rest of this month!
I was also given a salami as part of a food basket gift and neither my daughter nor I really cared for it as it was. It is not something I normally buy to eat but I don't want to just toss it, either, as that would be a waste of food. I called my cousin to ask if she would like to have it (her husband had spent several years in Italy so I thought she might say he'll eat it), but she said she didn't care for it, either. I've read a couple of recipes online which says to add salami to pasta with olive oil, garlic, and green onions. I suppose I could try that. Have you cooked with salami? Do you have any recipes to share?
In the evening, I washed the dishes and watered the back garden. It got too dark too early to water the front! Then, I spent some time chatting with my cousin - she had spoken to our mothers' (her mother and mine were sisters) cousin in Australia, who is 87 years old and keeping well, so she updated me about this relative and about our other cousin who has gone to Sri Lanka for a visit. Cousin keeps in touch with everyone and I get updated when I talk to her.
Today, I am grateful for:
- Being able to call in and take a day off because I was tired
- Being able to sleep in and rest
- Being able to have a Me-day when I needed it
- A full freezer
- Chatting with my cousin

ReplyDeleteNot liking salami?!? What is this nonsense?! I looooooove salami. Sorry, no recipe, I just eat thick slices of it with some crusty bread or make whole sandwiches with it. Oh, I wish I were closer and not on a diet! I've heard of the recipe you mentioned, it sounds delicious to me. Maybe one of your co-workers would enjoy it? You could make a snack platter with salami cubes, cheese cubes and crackers.. OK, I'm salivating so I've got to end my comment here!

Is 'me day' an actual term used or is it your own saying? we used to have to give notice for holidays when I worked, even for just one day, so it's never something I've done. And there was no making time up either. You just got your holidays and it was a case of use them or lose them. Of course all that changed when I worked in the school. With 13 weeks off there was no need to worry. Xx

Delete"Me-day" isn't a term I came up with - I've seen it in use for several years on social media; that's where I learned of the term. Prior to that, people used to talk of a "mental health day" to take time off from school or work.
We are required to have all our vacation days pre-approved. But, I took a day of sick leave, yesterday, as I really didn't feel well enough to work (I might use the term "tired" on the blog, but it is code for lots of other side effects from the medications I am on that I don't always write about, not just fatigue). Otherwise, I might have asked to work from home.
I am spoilt in that I am allowed to both make up the time or work from home, as needed, partly because of my recent health situation and partly because, that way, the work gets done. If I were not allowed to make up the time, I would simply use my sick leave days as I have a reasonably valid excuse for doing so. But then, the work doesn't get done as quickly.
I don't think you're spoilt, instead I think you're very much valued at work and the knock on effect of that is they are happy to help in any way they can. You reap what you sow comes to mind :) It's a lot easier to work from home now than it was even just a few years ago isn't it, so that's an added bonus as well. Hope you're feeling back to normal soon. xx

Thank you, Sandy. As I just wrote in reply to the comment above, "tired" is my code word for various side effects from my medications. For the most part, they are relatively mild and I am able to cope with the occasional pain medication, but, occasionally, I need a day off to deal with them.
DeleteI will ask around the office if anyone likes salami, but I have a feeling that the stray/garden cats will have some lovely treats in the coming weeks.
