The Last Saturday

 

Breakfast: Waffles with Peach Topping


Today is not only the last Saturday in the month, it is also the last Saturday before my daughter returns to Berkeley and her last full day at home; she flies back tomorrow afternoon (provided her flight is not cancelled or delayed).  I made waffles for breakfast and we enjoyed it with some of the peach topping; she loved the peach topping, by the way.  

My daughter and I ran a couple of errands in the afternoon and I treated her to her favorite iced coffee drink.  After we came home, I did two loads of laundry and she packed her suitcase, leaving some room for the food I will be sending home with her.  Then, we ordered some baby gifts my cousin's daughter had requested for her baby shower, which will be sent directly to her.  Even though I am crocheting her a baby blanket, with our new Covid case numbers going over 6,000 yesterday (weekend numbers aren't posted until Monday), hospitalizations going up, and the test positivity rate being 9.8% (7-day average), I am not sure if I will feel comfortable attending the actual shower, so, wanted to send her a gift just in case I decide not to go to the baby shower in person.

Leftovers/Fried Rice for Lunch

I made fried rice for lunch, using a bunch of leftovers!  Leftover rice, leftover cooked sausage, leftover broccoli, leftover broccoli leaf mallung (which colored the rice yellow because it had turmeric in it), and the last bit of roasted peanuts that were leftover in the jar!  In fact, I think it would be a good candidate for the SPSH No. 14 - Left Overs!  I did add an egg which wasn't a leftover.  There is a little of the fried rice leftover for my lunch, tomorrow!

Neighbor S called in the early evening.  She, her mother, and her aunt made gata (Armenian cookies) and her daughter N made rhubarb-strawberry jam; would we like to have some?  Yes, please!  My daughter loves their homemade gata and who wouldn't like some homemade rhubarb-strawberry jam?  The gata were still warm from the oven when N brought them over!  We were told they should be allowed to get cold before eating, but, well...I can assure you that they taste just as lovely when still warm from the oven!  LOL.

N mentioned that the rhubarb-strawberry jam would be good in lemonade!  That sounded delicious!  My daughter quickly picked some lemons, I juiced them, and she made us two glasses of rhubarb-strawberry lemonade and it was lovely!  Unfortunately, I forgot to take a picture!  But, it was a very pretty pink color and tasted great!

I finally made the coconut flat bread (pol roti) for dinner, tonight, after having it listed on my meal plan for so long!  Daughter enjoyed hers with some leftover salmon; I had mine with some chicken curry. I made extra so I could send some back with her.  After dinner, I did the dishes, chatted with friend R, watered the houseplants, and did the litter box.  

It has been another warm day with a daytime high of 96F (although the car temperature gauge registered 99F when we were driving about, but, it could have been from the heated asphalt on the road).  It has cooled down to 70F as I type this, close to midnight.

Today, I am grateful for:
- Daughter helping with the last few errands and tasks I needed done before she goes back
- Neighbor S and daughter N sharing their gata and jam with us
- Transforming leftovers into a tasty meal
- Safe drives to the places we needed to go to run our errands
- In-person hugs

Today's joyful activity was spending time together with my daughter and enjoying all the good food we have made or have been given.

Plans for tomorrow include taking my daughter to the airport in the early afternoon and video chatting with her in the night.

  1. Those gata look fab! What a lovely time you have shared with your daughter. I wish her a safe journey back. I'm convinced I caught covid in March 2020 on my way back from a baby shower as I travelled across London on crowded trains before the UK Covid Lockdown

I remember your train ride as you wrote about it, you probably did get exposed to the virus when you travelled.

    1. Thank you, Lyssa. I'm the queen of leftovers! :D The lemonade did taste great and now, I want to try "peach" lemonade, using some of the peach canning syrup as the liquid. :)

  3. It's such a different idea to just go into your backyard and pick some lemons when you want lemonade. So exotic--or at least to me who lives in a temperate climate.

  4. I took my leftovers photo for the SPSH yesterday courtesy of a Chinese takeaway which was too much for one meal.

    I'm glad you enjoyed your last full day with your daughter. Your close relationship with her is delightful to read about, so thank you for sharing with us.

      Thank you, Eileen. I consider the relationship I have with my daughter to be a blessing. I have just returned home from dropping her off at the airport. We left the house a bit early to allow for traffic inside the airport and it was a bit crowded, with vehicles dropping off and picking up passengers, but not quite as busy as on some previous occasions. I hope it wasn't too crazy inside the terminal! I've been hearing on the news that there have been lots of delays and cancellations of flights due to lack of personnel, weather, etc.

    1. Thank you, Sharon. We enjoyed our day, yesterday, and this morning. I have just returned from dropping her off at the airport. Most probably, I will see her next for Thanksgiving, unless something happens and she needs to come down before that.

  6. I agree with Live and Learn that it seems exotic to just walk outside and pick lemons! Thanksgiving is a long time to wait to see your daughter again. Hopefully something good will bring you together before then! (A friend's wedding/baby shower/

    1. I am spoiled when it comes to picking lemons, aren't I? I need to pick most of the lemons, now, and either freeze the juice or slices, because they are starting to fall from the trees due to the heat. Yes, Thanksgiving is a long time to wait and there is a baby shower coming up, but, my daughter is not planning to come down for it. She is saving up her vacation time for Thanksgiving week and the week between Christmas and the New Year (it is mandatory that they take that week off and they have to use their vacation time to do so). I suppose, if there is a chance for her to drive down with a friend and work from home for a week, she might take advantage of that, but, we are not counting on it.

  8. I like that you are always sending food back with your daughter. I do this when DS and family come. Two of them eat gluten free food so I like to bake something for dessert and some cookies, and the leftovers go back with them, and often a container of leftover supper, that DS will microwave for lunch at work the following day! Freezer packs come and go.

    1. I enjoy sending some food back with her, Bushlady. It means she doesn't have to do a lot of cooking during that first week back and all she really needs is some milk or half and half for her coffee and maybe some fresh produce. Also, it's a way of sharing some of the treats I am able to purchase from time to time (she brought me some Japanese treats and some cashews, etc., from one of the stores she went to, up there).
      I'm sure your son and family also appreciate your home baked goodies and other leftovers for a quick and easy lunch the following day. :)

  9. I didn't realize that Covid numbers had gotten so high. I will be careful, too. Strawberry rhubarb lemonade sounds divine! That bread looks delicious.

    1. Yes, the L.A. County numbers have been going up! I check the county's daily Covid page daily, from Mon through Fri; the page is not updated over the weekend, but, they post the weekend numbers for new cases on Monday, along with Monday's numbers. It's always a good idea to be careful, I think, especially for someone like me who has so many other existing chronic conditions. I love strawberry lemonade and the strawberry-rhubarb one was delicious. :)

  10. I have to say many of your posts leave me hungry. The peach-topped waffle looks fab!

    This weekend while traveling I started noticing that the masks were popping up again, even in really high temperatures. Hubby was alerted on his phone that our county back home was not in the elevated transmission category. Will this never end?!

    1. LOL, sorry about the posts making you hungry! :D
      No, this will not end for as long as the virus continues to do what viruses do, which is mutate and spread to new hosts and not everyone is willing to do what it takes to stop the transmission. It will be with us for a long time to come, I'm afraid.

  12. You had a really delicious day of wonderful foods. That rice looks particularly good. Maybe because I just made a pot of rice (continuing in my cook ahead effort for the day) and mine is all white and bland lol while yours is full of colorful goodness.
    Your daughter must be home by now. I hope her trip home was nice and easy with no complications.

Thank you, Debra; yes, it was a day filled with good food! :) I had just asked if you will cook some rice to go with your lentils and leftover chicken and broccoli, in response to your earlier comment! :D Your white rice won't be so bland once you mix it up with the rest of the dishes. Sometimes, I add a handful of frozen peas to my rice when it is nearing the end of cooking; sometimes, I grate a carrot and add to the rice.
      Yes, my daughter reached home safely and had a good flight and subway rides; she walked the last bit, from the subway station to her apartment (just under 2 miles) rather than wait for the bus! :)

  13. Ooh that does look rather good! The waffle, I mean. Maybe not for breakfast, but I think a scoop of ice cream on the top would complete the dish :o)
