Meal Plan - June Week 1 Review and Week 2 Plan

I think I am getting more into the swing of making weekly meal plans!  

First, a review of how things worked out last week (Week 1):

Monday:
Lunch - Thai food at cousin's
Dinner -  Scrambled eggs on toast
Snacks - Crackers with peanut butter, peach

Tuesday:
Brunch - Salad (lettuce, cucumber, carrots, dressing), peach
Dinner - Leftover pizza from the freezer (that's the end of the pizza I bought after my doctor's appointment on May 17th)

Wednesday (June 1):
Brunch - Milkrice, leftover chicken curry
Dinner - Sauteed chicken, rice, green peas, peach

Thursday:
Brunch - leftover milkrice, sauteed chicken, seeni sambol, peach
Dinner - Rice, sauteed chicken, dhal, beetroot curry, broccoli, orange

Friday:
Brunch - Lahmajoon (Armenian "pizza"), watermelon
Dinner - Leftover milkrice, sauteed chicken, katta sambol, watermelon, peach

Saturday:
Brunch - Buttered toast
Dinner - Soup, leftover rice and curries, peach, chocolate cookie

Sunday:
Brunch - Fried rice (leftover rice, leftover broccoli, previously cooked and frozen sausage, cut up, peanuts)
Dinner: Chicken and vegetable soup, buttered toast, grapes.
Snacks - Raw almonds, cheese and crackers, yogurt with peach sauce stirred in (delicious!)

I'm happy with how that worked out although some days were rather lacking in vegetables!

Moving on to Week 2:

This is what I have planned, based mostly on what I have on hand; however, I am planning to order some groceries because I am out of bread and I need more lettuce for salads:

Brunches: Leftover fried rice (Monday); salads; scrambled eggs on toast or egg salad sandwiches; pancakes or maybe waffles

Dinners:  Leftover chicken and vegetable soup; Fish curry with rice, dhal, sauteed beet greens, broccoli (there will be leftovers for another meal or two);  

Snacks: Fresh fruit, yogurt, crackers with cheese, peanut butter, etc., nuts

  1. Your meals sound well balanced as you do include plenty of fruit and vegetables over the course of a week so I wouldn't worry too much, you certainly do better than me.

    1. Thank you, Eileen. I am aiming for 3 servings of vegetables and 2 of fruit, each day, although I guess we are now being told that 5 servings of fruit and vegetables a day are not sufficient and we should have 10! Yikes! I can easily eat 4 or 5 servings of fruit, a day, but, I am not allowed to eat that much fruit because of the sugar content! Got to get into the habit of incorporating more vegetables! :)

  2. No meal plans here, but I should start with tonight. Maybe hamburgers and a salad.

    1. Hamburgers and a salad sounds really good, June! In fact, that's going on my meal plan for next week! I took a peek at next week's grocery ads (prices are effective from Wed to Tues), and saw that hamburger patties will be on sale, 10 patties for $10 (it actually comes out cheaper per pound of ground beef to buy the preformed patties when it is on sale!)

  3. Thanks for showing us your meal planning again ... it does help with my own planning! I see you include plenty of leftovers so you'll have a chance to get another photo for the SPSH!

  4. We eat salad with almost every evening meal so I was happy that lettuces and cucumber were still a good price today, but there were no green onions and I didn't want to go to the other store today. Sometimes the delivery truck is late and is still being unloaded.

    1. I'm glad you were able to find lettuces and cucumbers at a good price, Bushlady, and hope you'll be able to get the green onions later in the week. I need to adopt your habit of having a salad with most dinners. It'll be another way to add vegetables to my diet! I did have a salad, today, for lunch. :)

  5. Hi Bless! I'm catching up...your peach jam looks so good! So nice of your daughter to think of you to do that shopping. I planted some sunflowers but they aren't blooming yet. I always love to have them as summer progresses...they are such a summery flower! Andrea

    1. Hi Andrea. Thank you, the peach jam is a taste of summer, I think. :) Yes, it was very nice of my daughter to ask if I wanted anything from the store - she knows that I am still not shopping in person.
