Meal Plan - June Week 1

The meal plan options for last week were:

Brunches: Leftover garbanzo beans and pork fried rice (Monday), scrambled eggs on toast, or egg salad sandwiches

Dinners:  Leftover pork fried rice, Spaghetti with cooked ground turkey (from the freezer); Stir-fry with cooked sausages (from the freezer) and rice, Coconut roti and chicken curry or Kotthu Roti with chicken curry (depends on what I feel like making), Leftovers.    

This is how it worked out:

Monday:
Brunch - leftover sauteed garbanzo beans and pork fried rice
Dinner - leftover pork fried rice.  

Tuesday:
Brunch - salad
Dinner - spaghetti with cooked ground turkey and sauce

Wednesday:
Brunch - salad
Dinner - leftover spaghetti, ground turkey and sauce

Thursday:
Brunch - tuna salad sandwich
Dinner - rice, baked fish fillets, green peas.  

Friday:
Brunch - salad
Dinner - leftover pizza from the freezer   

Saturday:
Brunch - cheese sandwich
Dinner - rice, chicken curry, dhal, beetroot curry

Sunday:
Brunch - bread with dhal, a favorite meal from childhood
Dinner - leftover rice, dhal, chicken curry, green peas

In addition to the main meals, I snacked on crackers and cheese, crackers and peanut butter, fresh fruits (peaches, mango, apples) and nuts (almonds, cashews, peanuts), and cookies!

Moving on to this week - I'm calling it June Week 1, although it includes the last couple of days of May.  I do realize I am meal planning in the middle of the week, but, that's OK!  I have listed what I ate on Monday and Tuesday of this week. 

The meal plan for the rest of this week:

Brunches: Milkrice and leftover chicken curry (Wednesday), leftover milkrice and seeni sambol, salads, sandwiches (egg salad or cheese), roti

Dinners: Chicken and vegetable soup, sauteed chicken with flavored rice and vegetables, chicken curry with coconut roti (I've had roti on my meal plan for a couple of weeks now, but, haven't felt like making them!), leftovers as each of these meals will have two or more servings.

Snacks: Fresh fruit, crackers with cheese, peanut butter, etc., nuts, maybe cookies (going to try not to have too many of those!) 

Monday:
Lunch - Thai food at cousin's
Dinner -  Scrambled eggs on toast
Snacks - Crackers with peanut butter, peach

Tuesday:
Brunch - Salad, peach
Dinner - Leftover pizza from the freezer (that's the end of the pizza I bought after my doctor's appointment on May 17th)

Wednesday (June 1)
Brunch - Milkrice, leftover chicken curry

  1. You're so good with your meal planning. I do well with the meals for husband and son, but not so good for my own. I do need to eat better. I keep saying that but never seem to follow through

    1. Thank you, Sharon. We need to get you meal planning for yourself! Can you make a big pan of roasted vegetables, perhaps, and have that for several meals with salads, pasta, rice, etc.? Or, make a pot of vegetable soup for your lunches? Do you eat eggs? Perhaps bake a quiche? Or some kind of vegetable pie? You could freeze extra portions to have later, perhaps.

  2. Yes, June has started mid-week and I can't believe it is June already! Your meal planning goes well and your snacks sound delicious and very nutritious. We definitely don't eat as much fruit and vegetables as we should.

    1. It's hard to believe that it is June, already, isn't it? Meal planning is coming along although it is "hit or miss" at times! I need to incorporate more vegetables into my diet, but, I tend to struggle with vegetables. I might reach for a fruit when I want a snack, but, you'll rarely find me reaching for a carrot stick or a cucumber spear! :D

  3. We have no plan here except to eat at home more than we eat out and incorporate more veggies into our meals. Simple goals, but hard to follow sometimes. :)

    1. Especially hard to follow when your kitchen is being remodeled! You have to cut yourself some slack, right now.
      I struggle with the incorporating more veggies part!

  4. I'm not meal planning as such but have made a start on the batch cooking so, once I've finished, I will have a good selection of meals in the freezer (breakfasts, lunches, and dinners).

    1. Your batch cooking is a great way to meal plan, in the sense that you will have an assortment of meals from which to choose. I really like the idea, but, don't always make the effort to follow up with it. I guess you could say I do mini batch cooking - I'll prepare enough of something for several meals and then, eat it all week! :D

  5. I thought of you yesterday making yourself milk rice! Traditions are good for you, aren't they?
    My only nod to meal planning was to buy some chicken breasts yesterday and cook them. There are two left and I froze one and the other has partially been used for sandwiches for lunch today. DDIL inspires me as she is really good at avoiding processed meats and I'm thinking I should do the same. (Says she, having served hot dogs for the previous day's lunch!)

    1. Ha, ha, I am getting to be too predictable with my milkrice on the first of the month! :D Traditions work for me! :D
      You did well with cooking all the chicken breasts and freezing one for later and using one for sandwiches, today. I, too, like to use cooked chicken breasts, sliced, for sandwiches. But, every now and then, I buy cold cuts and yes, hot dogs! I've half a pack of hot dogs in the freezer - should probably do something with them. :)
