Zucchini Waffles on Sunday

Zucchini Waffles Hot off the Waffle Iron!

I've been blessed with another good day, today.  

I scrubbed one side of the kitchen sink (it is a double sink) and washed some dishes, this morning, after I made myself a cup of tea.  Then, I did two loads of laundry with daughter's help (she took the dried laundry out of the dryer and switched the second load for me).  Later, I folded all the laundry and put away my stuff.

While the laundry was being done, I grated another zucchini and tried my hand at making zucchini waffles!  There are several recipes online; I adapted a recipe that called for boxed pancake mix.  The recipe called for 1 1/2 to 2 cups grated zucchini, 1 cup pancake mix, 3/4 cup milk, 1 large egg, 2 tbsp. oil, 1 tsp. ground cinnamon, 1 tsp. vanilla, and cooking spray for the waffle iron.  I had 2 1/2 cups grated zucchini so used all of it, which made the batter a bit too thin for my liking, so I added a little more pancake mix (can't really say how much because I didn't measure!  I might have used 1 1/2 c. pancake mix, total).  I didn't measure the ground cinnamon and vanilla, either!  And I used vegetable oil to brush on the waffle iron, because I don't use cooking spray.  

I made the first waffle standing at the kitchen counter, but, I soon realized that standing while the waffle baked would be too much for me.  So, I moved everything to a small folding table in the living room!  This meant I could sit in my chair while I made the waffles.  I set the waffle iron to "dark" because I wanted to make sure the zucchini cooked!  

The resulting waffles were slightly sweet from the pancake mix and the cinnamon (I didn't add any more sugar) and crispy when hot off the iron (but, got soft quite rapidly when cool).  Both my daughter and I ate them as they were, without additional syrup, for brunch.  The leftover waffles will be kept in the fridge and warmed up in the toaster for breakfasts, later in the week.  

My daughter took over two more zucchini to neighbor S and did some grocery shopping in the afternoon.  Later, she watered the fruit trees and noticed that birds have started pecking at some of the peaches!  So, she picked most of the rest of the peaches!  I washed them and set aside the ones that were bruised to be processed first.

Today, I am grateful for:

- Another good day
- What I was able to accomplish today
- An abundant zucchini and peach harvest
- Being able to share some of the harvest with friends
- Daughter being able to do the grocery shopping

Today's joyful activity was making zucchini waffles!

I am hoping that I didn't do too much, today, and the leg pain won't start!  I am planning to take it very easy, tomorrow!  I will also call the imaging center to schedule the MRI appointment.

  1. I had never thought about making zucchini waffles, but it makes perfect sense. You can add zucchini to almost anything. Would you make them again?

    1. Yes, I will make them again. But, next time, I might try to remove some of the moisture from the waffles before adding them, or, add less milk to the mixture!

  2. Yeah to pain free days! Zucchini waffles? Now that's a great use for extra zucchini. I am certainly envious of your own peach harvest. We have to wait until late August before Ontario peaches come to market.

Thank you, Mary-Lou; pain free days are much appreciated! :) The peach tree I have is an early ripening variety called Eva's Pride, which has low chilling requirements (suitable for our climate). My neighbor (the one whose rabbit is fond of my garden) has a peach tree that ripens later in the summer, but, I don't know the name of that variety.

    And I love your workstation. Very smart to set yourself up that way.
    That is a pretty table scarf. Is it a quilted item you made?

    1. I liked the zucchini waffles - I'll be making them, again. :)

      That folding table was one of the best purchases I've made (bought it from Costco, back when my mother was still alive) - I use it all the time!

      Yes, I'm using a placemat that I sewed some time ago - I made a set of 6, back in June/July 2015. (https://bless2cents.blogspot.com/2015/06/sunday-more-sewing-down-stash.html) If you read that old post, you'll see that I was sewing them on the same table I used for the waffle making!

    1. It was a good day, Martha! Both my daughter and I are determined not to waste any of the garden produce, so we are finding all kinds of things to make with the produce! :)

  5. I can see you might soon have enough recipes for a Zucchini cookbook. I have been so inspired by your blog that I even bought a couple of zucchini the other day! I used some sauteed and the rest is awaiting my next plan. I just remembered that last year some kind neighbour left a box with zucchini and pattypan squash under the communal mailbox for all to take, and I took a couple of items. I hope we get some more this year!

  6. I have courgettes arriving in the Wednesday delivery so have been looking up recipes to make a spread to have on bread or toast. I had it once at a cousin's home and it was so tasty.

    I hope you haven't overdone things and continue to remain pain free.

    1. Zucchini spread sounds interesting! I know Lady Ella made a relish with courgettes in one of her old blog posts; but, I think she ended up mixing two recipes together, at the end.

      I am trying to figure out what is doing too much! But, no ill effects, so far, so keeping my fingers crossed! :)

    I’ve seen zucchini bread recipes too. It looks like it can be used in so many ways.

    1. I hope you'll like them! Adjust the liquid in the batter or squeeze out some of the moisture from the zucchini before you add it.
