Another good day! I am starting to feel rather hopeful! I walked a bit more around the house, today, during the day. The rest of the time, I stayed in bed, read blogs, watched a few YouTube videos, chatted with family and friends on the phone, and knitted. I finished knitting one sleeve on the sweater I am knitting for my daughter and started on the second sleeve.
Today, my daughter's friend A stopped by to pick up the peaches and zucchini we had offered her. Since she, too, is fully vaccinated as of May, I told daughter to invite her in if A had the time and they spent the next three plus hours chatting (and enjoying some of the peach pie)! They've been friends since 7th grade and A has asked my daughter to be her maid of honor (her wedding was postponed due to Covid). I think A will be coming over again, next Saturday, too! I'm glad my daughter is getting to spend some time with someone she considers one of her best friends.
Later in the evening, daughter took two more zucchini to neighbor S. S had called to find out how I was and I asked her if she'd like more zucchini; she said she'd love some. She said she layers zucchini slices with cooked, seasoned ground beef and bakes it - might be something to try, one day!
Daughter also took a bag of peaches and zucchini to her friend P's parents who live close to our home. They were very happy to receive the fresh produce. It was P who gave her a ride home last December.
That takes care of most of the zucchini we harvested this week; we cooked part of one for dinner today and there are two more left in the fridge. I am waiting until we harvest more zucchini to call my friend S to ask if she'd like some!
Today, I saw Bun-Bun, the neighbor's white rabbit, near the back sliding glass door, eating the cat food! I tried to take a picture, but, Bun-Bun saw me and hopped away!
Today, I am grateful for:
- Another good day
- Daughter's friend was able to visit her
- Being able to share the garden produce with friends and neighbors
- Phone chats with family and friends
- My daughter being home
Today's joyful activity was knitting.
No firm plans for tomorrow; but, I hope to do more knitting.

ReplyDeleteI make something similar to S ... imagine a lasagna type dish but the lasagna sheets are replaced by strips of courgette and obviously I use lamb or pork instead of the beef.
I was looking online about freezing courgettes and found some tasty sounding dairy free courgette soups which freeze well, so I will buy some this week and trial the recipes. Also courgette fritters, which I love, are supposed to freeze well. Anyway, I will try freezing both as it adds something different to my freezer stocks.

DeleteI will try the zucchini lasagna one day. I mentioned it to my daughter and she didn't seem very enthusiastic (I think she's a bit overwhelmed with everything that have landed very squarely on her shoulders, this past month; she keeps asking me how I managed to do everything when I was looking after both her and my mother!)
Glad you found some helpful tips about freezing courgettes, including a couple of new recipes. I hope you are pleased with how they turn out and the variety it provides. :)
I see you've named the rabbit. I'm not sure if that's a good thing or a bad thing. :) But if it goes for the cat food and not your plants, that is definitely a good thing.

DeleteYes, if it eats the cat food and leaves my plants alone, that will be a very good thing! I might have muttered something about rabbit stew when I saw that something had eaten my chilli plant, the other day! :D
So glad you had a good day - and could get some knitting done. Impressive looking zucchini [corugettes we call them in the UK] My neighbour round the corner grows a bumper crop most years and puts them in a little hutch for neighbours to help themselves. I am hoping she has another good summer! The next few days here will be spent tidying up after the family visit, laundry of sheets and towels, and gathering up the toys which seem to be everywhere!

DeleteI'm sure your careful balance of activity and rest is helping along with the meds. It is great that your daughter's friend was able to come in for a proper visit. It makes everything feel more hopeful now that this can happen. I had an outdoor visit with my friend on Friday and it was so good to see each other after being in "stay at home" advisory for weeks!
