Zucchini Harvest

Zucchini and a Peach

M was here to water the garden, this morning.  He harvested the zucchini for us, along with the one peach that had fallen.  

The zucchini at the top was the one my daughter and I had known about and daughter had been keeping an eye on to decide when to harvest; once it was harvested, we realized that a second zucchini was growing on top of it and they had fused together!

The rest of the zucchini were a complete surprise!  In fact, M picked two more after these pictures were taken!  What an abundance of zucchini!  What a blessing!  

The last time I grew zucchini, I harvested all of two, and one of them was half burnt from the sun!

Daughter took a bag of peaches and two of the zucchini to neighbor S and I had part of one sliced in my lunch salad.  I prefer raw zucchini to cooked, but, my daughter prefers them cooked (lightly sauteed).  I'm pretty sure that there will be some zucchini bread before the end of the week, as well!  

M brought me two books of quotes and blessings on the subject of gardens to read, which was very thoughtful of him.  I enjoyed reading them.

In other news, my doctor didn't call me back and when I checked with the pharmacy, today, they said she hadn't called in any new medications for me.  I have had a fairly good couple of days, yesterday and today.  Although, when I tried to walk around the house this afternoon, the pain started again!  I was able to get it under control with the heating pad, but, I felt a burning sensation in my foot although I had the heating pad on the back of my thigh!  It was the first time that has happened and it went off only after daughter applied an ice pack to my foot!  My foot is still numb, by the way, but, the earlier swelling has gone down.

Today, I am grateful for:

- The zucchini harvest!
- M bringing me some books to keep me entertained while I am recovering
- Being able to share some of the garden fruits and vegetables with neighbor S
- My daughter being here for me
- Online prayer chantings

Today's joyful activity was seeing the zucchini harvest!

  1. What a nice harvest Bless, and even enough to share! Please don't overdo it when you are feeling well, you don't need setbacks. I hope the doc will help and you will get to feeling back to yourself again soon!

  2. You have a nice collection of zucchini! I am catching up on blog reading as I've been away awhile, helping my sister, she has cancer and is going through chemo. I read your recent post on balanced life goals, and am now thinking I really should set some goals as well - it's a great idea. I am sorry you are still having pain, and I hope that gets better very soon. What a blessing to you to have your daughter there. Best, Celie

      I'm so sorry to hear that your sister is undergoing chemo. I hope the treatment will be successful and she will recover from her cancer; I shall be praying for her. I'm glad you were able to be with her and help her.

      I think it's good to have goals in life - something to strive for. :)

      My daughter has been the biggest blessing, ever!

  3. That is a very nice zucchini harvest. I know you don't like it cooked but in our house we cook the zucchini with hamburger meat, corn, milk cheese, and garlic salt in a skillet. It is delicious. I got the recipe from my husband's family when we were first married and I make it often. I'm so sorry you continue to have pain. I hope it eases with time. I remember a few years ago I was getting a burning pain in my foot. It went away and hasn't come back. Prayers for you. Denise

    1. Thank you for the recipe, Denise. I have used zucchini to bulk up ground beef in hamburger patties and spaghetti sauce, etc. and that was fine. So, I think I'll like your recipe, too. :) Thank you, too, for keeping me in your prayers; much appreciated.

  4. Nice Harvest!
    I decided I would keep a list of everything we manage to harvest this year. Ours is just now starting to produce but I have many baby zucchini growing. I did not plant as many zucchini plants as I did last year so hopefully I will not be overrun with them.

    1. Thank you, Anne; I was happy to see the harvest. :) It will be good to know how much you manage to harvest from your garden. My okra plants never came up, but, maybe that is all for the best because I'd have been unable to tend to them. It might be my turn to be overrun with zucchini because I have about a dozen plants! :D

  5. That are quite a few zucchini from just one picking. It's wonderful that such a tiny seed will produce such abundance of food. When I see zucchini, I see the start of chocolate zucchini cake (lol). Remember slow & steady will win the race of recovery ... sending healing prayers.

      Ooh, chocolate zucchini cake! I don't think I've ever made any! Must look for a recipe. :D I have about a dozen zucchini plants growing, this year - I think each plant has produced at least one zucchini, because I was told there were a couple of zucchini that were too small to harvest. In previous years, I've been lucky to have one plant survive to produce!

    2. I have a chocolate courgette cake recipe that is much loved! I can send it to you if you wish ... it might even be on my blog. It was very similar to one which Mary-Lou sent me, but I couldn't use it as writ, as it called for ready mixes that aren't available here.

      If you have a dozen plants all producing, I can guarantee you will be thoroughly sick of zucchini by the end of the season! And you will be pleased to hear that I now have two plants planted out - one still waiting.

      PS. I find frozen courgettes make a really great soup in the off-season.

      I've frozen grated zucchini to use in zucchini bread, but, right now, every available space in the freezer is crammed with sliced peaches, with more waiting to be processed!

      The third courgette plant is outside but I'm waiting for it to get a bit bigger before I put it in the earth.

      Hope you aren't expecting sympathy for this glut of fresh peaches!! I suppose in return I could boast that we had rain again today. A day off from watering the garden AND the water butts have been replenished!

      I am also glad that you had plenty of rain. :) I am thrilled to bits with my peach harvest! I might not be up to processing it all this year (last year, I canned some, made jam and chutney), but, I am able to share some fresh produce with friends. :)

  6. Well, the good news is that the swelling is down. Now if you can get the rest of your symptoms to follow. Praying it will happen soon.

    Your zucchini look great. I'm still trying to figure out where to plant a couple of plants I have. I went overboard with the cabbage and broccoli and don't have any room left in our beds.

    1. Thank you, June; yes, glad the swelling has gone down. Thank you for keeping me in your prayers. All I am praying for is to be able to stand and walk without pain so that I might be able to look after myself and not be so dependent on my daughter.

      Can you plant your extra plants in containers? Perhaps Ward can make you another enclosure in which to place the containers so that the rabbits, etc. can't get to them?

    2. I already have several buckets planted, but zucchini need more room than a 5 gallon bucket. I decided not to plant flowers in one bed and have put some extra vegetables there. This bed is a favorite of the rabbits, so we shall see what survives. We'll try to put up a fence, but that won't happen anytime soon.

  7. That's a great harvest. But beware! - there is always one zucchini left hidden away beneath the leaves :)

    1. Thank you! Yes, I was told there were a couple of zucchini that were still too small to harvest. We'll be on the lookout for the one that decides to go undetected until it grows to baseball bat size! :D

  8. I didn't plant any courgettes (zucchini) as I will be kept supplied throughout the summer by the friends who do grow it. Are you pleased with your harvest? They look good. Do you have any recipes for cooking courgettes please?

    1. You probably made the right decision not to grow any if friends will keep you provided with courgettes. :) I am very pleased with my harvest! My favorite zucchini recipe is zucchini bread (which is actually more like cake) which might not be suitable for your diet. I also like to simply saute it until just tender and sprinkle it with some dried chillie flakes, etc. for a side dish. You can also make a curry with it, if you like - saute curry leaves, onions, other typical curry spices, etc., add zucchini cut into cubes and saute. I don't like it cooked very soft, so, I just stir fry it a bit. But, you can cook it longer if you like or add a little coconut milk to it to make a gravy. I've also added grated zucchini to ground meat and sphagetti sauce and Denise (commenting as Unknown), in her comment above, gave one of her favorite recipes for zucchini (you could substitute another ground meat instead of the ground beef).

    I hope you were able to get through to the doctor in order to get your new medicine.

    1. It was an abundance of zucchini, wasn't it? I didn't expect so many! My leg is a little better, today. I haven't been able to talk to the doctor, but, I thought I will wait until I finish the antiviral meds she had prescribed (last dose will be tomorrow) and see if things improve over the weekend. If not, I will call her again.

  11. I hope you don't have any more pain sneaking up on you. It must be hard to balance the need to be careful with the need to move around a bit.

    You will have to get better, because if your zucchini harvest gets really too huge the thing to do is to dump them on all the neighbours' doorsteps and then run before they see it was you! I used to have a recipe for an impossible zucchini pie with Bisquick that made its own crust. Can't find it but there are several now on the internet!

    1. Thank you, Bushlady; so far, after Monday, I haven't had any pain, other than a twinge or two. But, then, I'm mostly in bed!

      Ha, ha, we are already calling around to see if anyone would like zucchini! :D Cousin P and friend R declined, but 2 have gone to neighbor S and daughter's friend A has said she'd love some. No doubt M will find another couple of zucchini to harvest, today! :D
