MRI on Monday

Today marks one month since the last sciatica flare up!

This morning, my daughter drove me to the clinic for my MRI appointment.  My appointment was for 10:30 a.m., but, I had been asked to check in at 10:00 a.m.  We arrived there in time and I was called in after a short wait.  The MRI itself went well.  The last time I had one done (a few years ago, after I fainted in the bathroom and knocked my head on the edge of the bathtub shower door railing; still have a dent from that!) they gave me headphones to shut out the noise and they worked well.  This time, I suppose due to Covid, they gave me disposable ear buds which didn't work quite as well.  This time, I heard the noise more loudly and it gave me a slight headache!  The procedure, itself, took about 15 minutes.  I was told that the results will be sent to my doctor, but, I forgot to ask how long it would take them to send her the results.  Most probably, a couple of days or so.

After we came home, daughter cut some of the zucchini bread and made us sandwiches with cold cuts and lettuce, etc., for brunch.  Daughter had the day off from work, so, after brunch, we both rested and napped a bit.

In the evening, I decided to try out an experiment:

Zucchini Roti (Flat Bread)

Roti means flat bread.  I usually make roti with grated coconut and a bit of salt added to flour and water to form the dough.  Today, I added grated zucchini instead of coconut and I didn't add any water as the moisture from the zucchini was enough!  I used a couple of smaller zucchini and added as much flour as I needed to form a dough that didn't stick to my hands!  I found myself adding more flour to the dough as I made small balls of dough which were then flattened and placed on the electric skillet to cook.  As it was an experiment, I wasn't sure how it would turn out, but, the resulting roti were very good!  My daughter gave them a thumbs up!

I also cooked a chicken curry to go with the roti - the curry, too, was made in the electric skillet, after the roti were made.

In between, I did a few other things, including loading the dishwasher and taking the trash cans to the curb!  Later in the evening, my daughter took a few more zucchini to neighbor S and I chatted with aunt C and friend R.

Today, I am grateful for:
- The MRI appointment went well
- A safe drive to the clinic and back
- Modern diagnostic tools and technology
- Medical insurance coverage
- One month since the last flare up!

Today's joyful activity was trying out another new way to use my zucchini harvest!  

Plans for tomorrow include trying out another zucchini experiment, but, it requires my daughter's help.  I will post about it once we try it!

    1. It was very good and I didn't miss the coconut I usually add to my roti. Which is a good thing, because I have to make a special trip to the Sri Lankan or Indian stores to buy the frozen grated coconut I use. Now I can use zucchini instead and save the coconut for when I don't have zucchini! :) The more ways I can use the zucchini, the better! I need to use all the garden produce, if only because I am spending so much money to grow them! :D

  2. I like the look of the zucchini roti. I had one zucchini left in the fridge this morning and half an aubergine [eggplant] andone large beef tomato. These were among the last few things from my visit to the greengrocers outlet - I've cooked them long and slow, with onions and garlic to make a small batch of ratatouille - it is now cooling in a jar, I added more olive oil. I'll serveit warm later with some chicken pieces I think.

  3. Could you taste the zucchini in the roti? They look so good I'm tempted to try them myself ... something else to add to my Cooking with Bless folder!

    I'm glad the MRI went well and am keeping my fingers crossed for a favourable result for you.

    I'm sorting through music books I had for teaching but which I no longer need in retirement. It's taking longer than I'd like - one of the downsides of teaching five different instruments all with different music - but if I do a bit every day I'll get it done.

    1. I could taste the zucchini when I ate the roti by themselves, but, not when I ate them with the chicken curry. It could also be because of the amount of zucchini I used - my goal was to use up as much of the zucchini as I could! :D

      I can imagine that sorting through the music books will be time consuming, but, you are doing a good job with your decluttering. :)

  4. Now you have your very own Roti recipe! They look delicious. I was baking yesterday as I had some leftover beef stew and decided to make it into pasties for lunch. I have some leftover pastry which will be made into some tarts with maple filling today.

    1. Thank you, Bushlady; they turned out quite well, I thought. :) Your pasties sound delicious and I like your plans for the leftover pastry. :) I am reminded of the nursery rhyme: The Queen of Hearts, she baked some tarts, all on a summer's day..." :D

  5. Glad the MRI went well and sure hope they are quick with the results. Glad your zucchini roti came out well too. You've done very good with finding ways to use it up. :)

    1. Thank you, Martha; I hope to hear from the doctor by the end of this week or maybe early next week. I will make the zucchini roti again. :) I've been looking up zucchini recipes online and coming up with a few of my own! :D

  6. Well done on using the zucchini is a new and different way. We had zucchini fritters Sunday and they were pretty tasty. My issue is green beans__they are going nuts!

      Ah, green beans! My plants are not producing as many beans, but, I like to saute them with curry powder, etc. I guess the best thing to do would be to freeze the extras and not have to worry about buying green beans until next year? Or, perhaps try canning them? Or dehydrate them?

  7. The zucchini roti looks very good. I think I will try this, my neighbor always gives me zucchini when they are ready ( not yet here). I'm not a fan of coconut, so this will be a good alternative! I hope your MRI results come soon. Celie

      The zucchini roti were a hit with my daughter! She had the last of them for her lunch, today. :) I hope you will like them if you decide to try making them.

  8. What a good idea to use your zucchini in your flat bread. You are getting very creative with all of your zucchini with any successful outcomes.

  9. I think I might mention the roti idea to mum... sounds good! Can imagine eating them with chicken curry, cauliflower bhaji or sauteed vegetables.

  10. You fainted in the bathroom and knocked your head on the shower railing last time you had an MRI? Wow! Glad that didn't happen this time. I've had a couple and they are loud that's for sure. I'm sure you're glad that's over and done with. And I'm sure everything will be okay when you get the results. You were able to take the trash cans to the curb so that's good news. That zucchini Roti you made in your skillet looked good. With all your zucchini recipes lately it got me to wanting some too so that's what I'm making for dinner Wednesday. It is cool and rainy here so I think that'll be perfect for dinner. Unlike your daughter, we love cheese, so they'll be plenty of cheese along with zucchini, hamburger meat and corn. And because we live in the southwest I'll also be adding in some green chile. Denise

    1. Hi Denise, no, I didn't faint after the previous MRI; the MRI was done because I had fainted and knocked my head! My doctor wanted to make sure that I had not fainted/fallen as a result of a stroke! In the end, the conclusion was that I had been severely dehydrated due to the medications I was on at the time.

      Your zucchini dish for tonight's dinner sounds wonderful. Green chile always adds a little extra to a dish, doesn't it? :)

  12. I'm glad to hear your MRI went well, Bless.

    One of my friend's recently went for an MRI and couldn't complete it because she felt claustrophobic.

    I think you should write a book titled '1001 Zucchini Recipes'. Hehee

    1. Thank you, Nil. Yes, the MRI machine isn't for someone who feels claustrophobic. I was fine, especially since I had to remove my eye glasses before I went inside, so couldn't see anything too clearly! :D I said gathas the whole time and pretended I was in a space capsule headed to outer space! :D

      Ha, ha, one of the other readers, Bushlady, suggested the cookbook idea, too! I still want to try the mallung.
