November Week 1 Meal Plan - Review and Week 2 Meal Plan

This is what I had planned for November Week 1:

November Week 1 Meal Plan Options:

Breakfast/Brunch/Lunch: Pancakes with canned corned beef, fruit✓, French toast, salad, corned beef sandwiches✓(had for a snack), the last little bit of beef and vegetable soup

Dinner: Fish curry and bread✓(had for brunch!), baked chicken✓, corned beef fried rice✓, something with ground turkey (haven't quite decided what, yet!) ✓(turkey meatball curry)

Snacks/Desserts: Fruit✓, sandwiches✓, cereal✓(had for breakfast! Imagine that!), granola bars✓, etc.


Sunday:
Brunch:  Banana; Fish curry and bread
Dinner:  Mango-chipotle glazed baked chicken 
Snacks/Dessert: Cashews

Monday:
Breakfast: Banana
Lunch: Piece of baked chicken
Dinner:  Fried rice made with canned corned beef
Snacks/Dessert: 1/2 Peach, candy, corned beef sandwich (mid-night snack!)
 
Tuesday:
Brunch: Banana
Dinner:  Rice, turkey meatball curry
Snacks/Dessert:  The other half of the peach

Turkey Meatball Curry



Wednesday:
Breakfast:  Cereal, banana
Tea: Cheese toast
Dinner: Rice with turkey meatball curry
Snacks/Dessert: Granola bar, cashews

Thursday:
Brunch: Scrambled egg with corned beef hash; orange juice
Dinner: 2 saltine-type crackers (severe acid indigestion; the combination of corned beef, fried potatoes and orange juice didn't sit well with me!)
Snacks/Dessert: Lemon lime soda

Friday: 
Brunch: 2 slices buttered toast
Dinner:  Rice with the last of the turkey meatball curry
Snacks/Dessert: Apple slices, sauteed in butter and sugar.

Saturday:
Brunch:  Potato curry
Dinner:  String hoppers with potato curry and fish curry
Snacks/Dessert: Vada and lavariya

Well, the dinner options worked really well as I had them all, although the fish curry and bread was had for brunch, one day.  But, I will not repeat Thursday's brunch menu any time soon as that gave me severe indigestion! 

On to Week 2!  I start out the week with a few leftovers that must be eaten - a piece of baked chicken, a small amount of canned corned beef, potato curry, fish curry, and stringhoppers.


November Week 2 Meal Plan Options:

Breakfast/Brunch/Lunch:  Fruit, French toast, salad, toast, sandwiches (tuna or egg salad), milk rice with fish curry

Dinner:  Baked chicken with salad, string hoppers with fish curry and potato curry, fried rice, "breakfast for dinner" (pancakes or scrambled eggs on toast), spaghetti with meat sauce, leftovers

Snacks/Desserts: Fruit, nuts. cereal, etc.  Maybe cornbread or a pie, if I feel like baking!


Let's see how it all works out!

  1. I had your fish curry recipe today and have another portion in the fridge, probably for tomorrow ... I loved it and will make it again. Will it freeze well do you think?

    I spent the weekend bulk cooking so have plenty of choice for meals (I've listed what I made in tomorrow's blog post), and have three or four new to me recipes to try later in the week.

    1. Oh, yay! I'm so glad you tried the fish curry recipe and liked it. It should freeze well without any problem. :)

      I'm looking forward to reading what you prepared. :) I watched a cooking show, yesterday, and they made sausage and mushroom stuffed baked potatoes and I am thinking of trying that, but, I'll substitute something for mushrooms, because I don't care that much for mushrooms!

  2. That corned beef hash really had it in for you, didn't it? Some things just don't sit well as we get older. I used to adore blue cheese but there is no way I can eat it now!
