Ground Beef and Zucchini Burgers

Tuesday Night Dinner - Ground Beef and Zucchini Burgers

Usually, when I buy ground beef and cook it to add to spaghetti sauce or for the filling for curry puffs, etc., I add some vegetables to it; usually, onions, celery, and carrots.  Partly to extend the amount of ground beef and partly, to get more vegetables into me!

Last night, when I made my ground beef burgers, I added some minced onion (about 1/4 of an onion) and one grated zucchini!  I squeezed out as much water as I could out of the grated zucchini before I added it to the ground beef, added the minced onion, some garlic salt, a little regular salt and pepper, and some soy sauce, mixed it all well to combine, and made the burgers.

This was the first time I have added zucchini to the burgers, and wasn't quite sure how it would turn out, but, it turned out really well!  The burgers were very flavorful and best part of it (to me) was that I couldn't taste the zucchini in it!  Which is a good thing!  LOL!  The more vegetables I can sneak incorporate into my meals, the better! 

I cooked some broccoli and 1/3 cup frozen corn to accompany my burgers and it was a very filling dinner for me.  Much later, when I got the midnight munchies, I ate another small burger, by itself, and the papaya I had planned to have for dessert, which I didn't have, earlier, and some almonds.  Since I didn't go to sleep until after 4:00 a.m., I had plenty of time to digest my midnight meal!  As I told my daughter, I have my breakfast before I go to sleep! 

I woke up to the sound of rain, this morning, and strong gusts of wind rattling the windows.  I am planning to stay home, today, do another load of laundry (I did one load, last night - the cushion covers of one of the sofas in the family room; will do the covers of the other sofa, today), maybe knit (I unraveled what I had done on the grey sweater sleeve, and started over, again, last night), wait for the new trash cans to be delivered, and maybe sew.  I need to cook the chicken drumsticks, too.  Yes, I am procrastinating doing housework and paperwork! 

Have you tried adding zucchini to your burgers?  Do you think you might try it?

  1. No, I've never tried it. It sounds very good. I love the taste of zucchini, though. I grow it in my garden during the summer. I have been procrastinating on housework, too. It's so much easier to knit!

    1. I've seen your zucchini plants in some of your photos. They are huge! I tried growing zucchini, last year. It got too hot and killed the plants! I think I got all of 2 zucchini, and one of them was really tiny! Need to try, again, this summer.

  2. I add grated courgette (zucchini) to veggie fritters sometimes. I don't eat beef so have never made burgers for myself.

    You said that you didn't go to sleep until 4:00 am but I wondered what time you actually go to bed? I usually go to bed between 11:00 pm - midnight and fall asleep straight away. Then on a bad night, now quite rare thankfully, I wake after about 30 minutes and can't fall back to sleep.

    1. Eileen, when my father was alive, we didn't eat any beef or pork in our household. We ate lamb, goat (which was called mutton), poultry, and fish, but it was only after my father's death that we started eating beef and pork. It was more cultural than religious.

      I am guessing that if one makes anything like meatloaf, shepherd's pie, etc., from ground lamb, ground turkey, etc., grated zucchini/courgette might be a good addition to bulk up the meat, sneak in more veggies. :)

      As for the time I go to bed...um...between 2:30 a.m. and 3:00 a.m.! Last night, for example, I got into bed at 2:45 a.m., but, I was still up at 4:00 a.m. That's when I last checked the time! Then, I woke up, once, around 7:00 a.m., but went back to sleep until nearly 10:00 a.m. I need to be disciplined and turn the computer off after I say goodnight to my daughter, around 11:15 p.m., and go straight to bed, instead of playing online games!

  3. When I was cooking for my family, I always incorporated grated vegetables into the ground meat, also lentils and beans. It was to extend the ground meat to go further, not because I needed to get my family to eat more veggies. Fortunately for me, I never had a problem getting my kids to like a variety of vegetables. I was very lucky that way. They still love vegetables to this day. Nowadays, I am adding ground meat to my veggies to extend the meal and fill ME up. Ha,ha.

    1. My daughter loves vegetables, too. In fact, she used to be vegetarian as a child, and I worried about her getting enough protein, etc.! I am the one who doesn't like vegetables and have to force myself to eat them!
