It has been a quiet, restful day. I exchanged texts with one of my cousins, this morning, as her second grandson was born, last night. Later, I called my aunt to congratulate her on becoming a great-grandmother twice over. And, I called neighbor T to check on her as she didn't call me as usual in the morning; she was fine, she said, but had forgotten to call. Chatted with her for a bit and promised to call her again, later in the week. My half-sister called, too, to check on me, which was nice.
I had a cup of tea in the morning, but couldn't decide what to have for breakfast. So, I decided to have lunch, instead. But, first, I had to cook:
To go with the rice, I cooked a mackerel curry (using canned mackerel), as well as sauteed green beans , and, sauteed cabbage (both vegetables were cooked with curry powder and other spices).

I measured out 1/3 cup of rice (considered a serving) to my plate, and added the rest of the items:

Later, I had a cup of tea and ate a handful of almonds as a snack.
I haven't had dinner yet, but I will probably have leftovers from lunch, with, perhaps half an apple for dessert.
Today, I am grateful for:
- Cousin's daughter had a safe delivery
- Phone calls with family and friends
- A restful day
- Rice and curry for lunch
- A working heater
Tomorrow, I have an appointment with the physician assistant for a check up. I need to ask her why she didn't return my phone calls and get a new prescription for the new blood sugar monitor that is covered by my current insurance.

Thank you, Jules. Brown rice has more fiber than red rice, I've read, so helps one feel fuller. But, I had red rice leftover from when I bought a packet for the almsgiving. I want to finish what I have before I buy something else.Delete
Yes, a new baby in the family is always exciting, isn't it? They named him after his late great grandfather (my cousin's dad, who was my mother's brother), which I thought was a very nice thing to do.
A delicious sounding meal. I too like to finish things before making something else. If I have starch mid day, no matter how healthy it is, I'm then fighting off sleep over the next few hours.ReplyDelete

I haven't heard of red rice either. Reading your answer above, I need the fibre so should stick to brown rice I think, but it's interesting to read about new things.
Eileen, I don't think I ever posted a recipe for my mackerel curry. I will do so, later, today. If you do get a chance to try red rice, do so and see how you like it. :)Delete

I was going to ask for the mackerel curry recipe and saw Eileen already had done it. :) I normally stir fry mackerel with onions, and would love to try your recipe.

The doctor's appointment went well, thank you. We made some changes to my medication dosages to see if things will work out better, otherwise, I am to keep on doing what I am doing! :)
