Relaxing on Sunday

I didn't sleep in quite as long, this morning, but I had about 7 hours of sleep, so I don't know why I woke up feeling tired.  Or, was it lethargic?  Anyway, I decided to stay home and relax!

Neighbor T called around 11:30 a.m. for our weekly, Sunday morning chat.  Her daughter is still having a cold, so wasn't going to visit her today.  I asked her if she needed any grocery shopping done, but she said no.

I had been intending to do some grocery shopping, today, but I decided I could wait for another day!  I have enough milk in the fridge for tomorrow morning's coffee, and that is basically, all I need.  I will stop by the grocery store on my way home from work, tomorrow, and get the milk (and maybe that smoked sausage that is on sale this week for $1.99 and some bananas, perhaps).

For breakfast (a late breakfast), I cut the pineapple I had bought, last week.  It was nice and ripe!  I sprinkled it with a little salt and freshly ground pepper, which is how we tend to eat pineapple:

I went ahead and cut up the whole pineapple and I put some in glass containers to take to office.  Partial meal prep!

I put the top in a jar of water to see if it will root for me.  Maybe I'll have a pineapple plantation like Nathalie does!

When I went to place it on the pass-through counter, I was reminded that I have something else I need to plant - anybody know what this is?  No, it's not ginger (although it look a lot like ginger, doesn't it?)

In the afternoon, I went out into the garden to pick some flowers and took some pictures of the garden, which I posted, earlier. 

Then, I settled down to watch the Super Bowl game.  I am not a very big football fan, but I like watching the game.  If the Packers are playing, then, that's who I cheer for.  If they are not playing, I cheer for the team considered to be the underdog. 

A little later, I got hungry and decided to make some chicken salad with some of the leftover roast chicken I had pulled out of the freezer, yesterday.  There was more chicken than I thought - I made chicken salad with some and kept the rest of the chicken to make something else, later.  This is the roast chicken leftover from the rosary prayer gathering dinner in October; it is providing me with practically an entire week of frugal meals!  Lunch was a chicken salad sandwich and there's more chicken salad for another meal. 

After the game was over, I dusted the dining room, just so I could say I did something!   I tidied the shelf unit where I store the table cloths, cook books, and some decorative items.  I should go through the china cabinet and wash the glass shelves, but I wasn't quite ready to do that, today.  

Dinner was a bowl of chicken soup, with a slice of toast. 

Daughter cooked the plantain she bought:

According to her, she cut off the ends and peeled the plantain.  Then, she cut it into chunks and cut each chunk into three slices, lengthwise.  She sauted the pieces in some oil, for approximately 5 minutes per side.  The way she prepared them, they were more savory than sweet.  She said she sprinkled a little sugar on them to make them sweet (the plantains she had bought weren't ripe enough to be sweet; they have to be really ripe for the starch to convert to sugar).

Today, I am grateful for:
- Another day in which to relax
- Another sunny, warm day
- Being able to watch TV
- Oranges and lemons in my garden
- Roses and other fresh flowers

Monday's To Do List:
- Go to the office
- Go to the library to return book (during lunch break)
- Go to the grocery store
- Put gas to the car
- Water the front garden
- Take the trash cans to the curb
- Do a load of laundry
- Vacuum (maybe)

  1. I am awful at cutting up fresh pineapple but you look like a pro. Interesting that you sprinkle with salt and pepper.

    Thanks for the update on how to prepare plantain. At the back of my mind I was thinking of them as a desert dish.

    No I didn't watch the Super Bowl game. BBC news covered this morning on the 6 am news so I do know who won.

    1. The trick with the pineapple is to cut off the peel so that most of the "eyes" are removed. The rest, you cut off with a knife, by cutting diagonal grooves (although, I suppose one could dig them out with the tip of a peeler or paring knife). We sprinkle salt and pepper on many fruits - mangoes, melons, strawberries. The salt cuts the acid, the pepper brings out the sweet. A lot of our sweets include pepper as a flavoring ingredient.

      The plantain can be made into a dessert, but you have to let it get almost overripe (the skin needs to turn black).

  2. I've never heard of salt and pepper on pineapple before. I might have to give it a try. X

    1. Give it a try and see if you like it. The salt is supposed to "cut" the acid and the pepper brings out the sweetness. I tend to put salt and pepper on other fruits, as well - mangoes, melons, strawberries (unless I am having them with sugar and cream!)

  3. On Sunday afternoon I put a CD in the player and took all the decorations off the Christmas tree. Yes, the Christmas tree that I have been enjoying all this time! I left the lights on and when I got up in the night and was downstairs, I switched them on for one last look in the dark. Today I took the lights off and DH got the tree outside and I cleaned and put away the stand and vacuumed up the needles (it was finally at the shedding stage) and I got all the Christmas things packed away in the basement and the living room restored to normal February status! It feels good. I'm thinking I'd like some different pillow covers on the couch in the future, now.

    1. Bushlady, you could have kept the tree and added some hearts to it to make it a Valentine's Day tree! LOL. And hung eggs on it for Easter! I'm in favor of a year-round tree!

  5. Last week I kept putting off and putting off going out for groceries. As I kept running out of things, I would make do until finally I felt I just had to go out. I think the last straw was finally running out of eggs. So I forced myself out to pick up a few items and then can you guess what I forgot to pick up?

  6. Good luck on starting your own pineapple empire! I find it super easy so I'm sure you'll be very successful. Just be patient.

    And... I have to say that I winced at the pepper and salt on the pineapple, lol. I have heard of people eating strawberries like this before, though, but it's not for me :)
