Potato/Corn Soup

Potato/Corn Soup


You know I'm feeling better when...I start cooking! Not exactly from scratch, yet, but still, cooking.

First, when I woke up too early (before 4 a.m.) and couldn't fall back asleep, this morning, I opened a tube of refrigerated biscuit dough and baked them!

Later, in the afternoon, I made a version of potato/corn soup. Not exactly chowder (not as thick), but close enough. Used boxed broth my cousin brought; sliced onions from freezer, fresh potatoes (held down with rt. hand and cut with left), frozen corn & a bit of milk. Smells lovely. Don't know why I'm craving soup when it is so hot outside (90+), but there'll be enough for daughter for dinner, when she comes home, tonight.  I might ask her to grate a carrot and add to the soup, for a bit of color.

I didn't really follow a recipe, but here's what I did:

- Sauted a few slices of onion (sliced and frozen, previously) in a pat of butter and a bit of oil (as butter was getting too brown), until soft and almost caramelized.
- Added most of a 32 oz. carton of chicken broth (what was left in the box, about 3/4 carton)
- Peeled and chopped 3 medium potatoes and added to broth/onion mixture
- Boiled till potatoes were soft (medium heat)
- Added some frozen corn kernels (approx. 1/4 cup)
- And a splash of milk
- cooked a bit longer
- added some ground black pepper

No added salt as broth had salt (and I'm supposed to be on a low-salt diet) and it was salty enough for me.

A little parsley or green onion leaves would have been a nice touch (at least for the picture), but I don't have any.

  1. I'm glad you are feeling well enough to be able to handle some cooking. I've never made potato soup, have only tried it once, wasn't really to my liking.

    2. I'm delighted you are motivated to cook but is it a good idea to cut up potatoes with your left hand? There is a lot of risk in knife work and I'll leave the scolding to DD.

  2. Oh I am going to try this- it looks delicious! I love how you make it so easy to follow- I can picture making it myself as I am reading your instructions! I have all of these ingredients in my pantry so this is going to be our dinner for tomorrow. Thank you for sharing this recipe!
    I am so glad that you are feeling well enough to cook but please don't try to do too much too soon! Part of me wants to hug you for feeling good and being up and around and cooking, but another part of me wants to scold you when I think of how difficult it may have been to peel those potatoes! ;)

    1. Angela, thank you. I promise to take it slowly. I have sent you an email for the sock pattern (at your convenience, of course). And, thank you, once again, for providing the two Bible verses (Joshua 1:9 and Isaiah 43:2); I am finding much comfort in them.

Lovely Bible verses, reminds me that last summer, the week before I unexpectedly ended up in the hospital with heart palpitations, the words "He is mighty and strong to save" popped into my mind. I googled, thinking it was a quotation, but instead found a lovely Christian song called "Rescuer"!     Love your recipe, will have to try it. There is something amazing about homemade soups.

  6. The soup sounds tasty, Bless! So nice that you're feeling better each day. I've not made chowder but do make Baked Potato Soup ... It has all the ingredients of an actual baked potato ... Cheese, sour cream, chives, bacon, butter (of course!). I use chicken broth and milk. Quick and easy. Let's hope the soup making will encourage some Fall-like temps! :)
