Meal Plans: January Week 4 Review/February Week 1

This was the meal plan for the last full week in January and how it worked out:

Monday: Salmon (from the freezer) sauteed, broccoli, rice - I sauteed the salmon with onions and tomatoes, steamed the broccoli, and cooked fried rice from a boxed mix; we had plenty of leftovers!

Tuesday: Chicken curry, green beans, dhal, with leftover broccoli and leftover fried rice; I ate patties that were made earlier in the day as a snack, and leftover cucumber salad

Wednesday: Leftovers from Tuesday - leftover chicken curry, cashew curry, rice.

Thursday: Hamburgers (there are 4 leftover hamburger buns to use up) Thai food take out (chicken fried rice, Thai pepper beef, mixed seafood).

Friday: Leftovers and mixed appetizers (gyoza, baked chicken wings, etc.) OR Thai food take out -Rice, sauteed curried green beans, leftover chicken curry, leftover cashew curry

Saturday: Leftovers - Salmon, rice, green beans, peach chutney

Sunday: Breakfast for dinner - egg, hash browns, bacon or ham or soup! Hamburger, salad (lettuce from the garden), fries

That worked out quite well, I think.  We switched a few things around, but, that was fine.

This week is the end of January and beginning of February.  Daughter has left and I am back to planning meals for one.  I want to finish up a few leftovers and then, make some soup.  The plan is to use up a few things that are in the freezer, such as chicken and turkey bones and bits and pieces of vegetables.  

Brunches: Choice of gyoza/pot stickers (Monday), toast with peanut butter or  scrambled egg (Tuesday); milkrice on Wednesday (February 1), leftover milkrice if any (Thursday), frozen burritos, pancakes, cup noodles, etc.

Dinners:

Monday: Leftover salmon, leftover half a baked potato topped with leftover green relish from the samosas, green peas

Tuesday: Leftover chicken curry, rice, green beans, potato curry

Wednesday: Leftover salmon, leftover fries, cucumber slices

Thursday: Hamburger and salad

Friday: Fried rice with ham

Saturday: Chicken or turkey & vegetables soup

Sunday: Leftover soup, drop biscuits (maybe)

  1. It must feel strange just pleasing yourself each day, I always have a discussion each morning about what we will have for our evening meal, lunchtime is usually a sandwich, fruit or yoghurt so needs no planning.

    1. I guess I'm used to it; it's been over 8 years since my daughter left home. When my daughter is visiting, I will ask her what she'd like and she's usually happy with rice and curries or with whatever I feel like making. I just have to make sure that I don't cook in larger quantities unless I'm planning to have leftovers!

  2. Our meal plan is trying to eat more at home, and except for a lunch where we met my son, we did pretty well.

    1. Well done with sticking to your plan to eat at home! The occasional meal out when meeting a family member or friends is fine, too. I tend to want to get fast food to go when I am out and about or as a "treat" and that can get expensive!

  3. Yesterday I could have used a meal plan. For some reason I couldn't make my mind up what to have for lunch and then for supper. I think I just didn't care for the options and was looking for something easy. For supper I had a pizza in the freezer so I was able to add and use up some mushrooms and red pepper on it and I made a salad. (Hon Min of the Forum would be have been proud of my commitment to veggies!)

    1. Oh, Hon Min would have been very proud of you adding more veggies to your pizza! I miss her asking me where my vegetables were and how much exercise I was getting! :) May she rest in peace.
      The grocery store is having frozen pizza on sale for $4, this week and I was wondering if I should get one (but, you know me, I'll probably eat it all up in two days!)

    1. Thank you, Mandy. I often find myself switching things around right after I make the plans, though! For example, I made soup today and had that for dinner! Not what I planned to have!

  5. I always like your meal plans and get lots of ideas from them. I had a go at making your chicken curry ... loved it ... and now how the rest of it frozen in portions. xx

    1. Yay! You made the chicken curry and liked it! I'm so glad you liked it. It freezes well. You could use the same basic directions for any meat curry - doesn't have to be chicken. I know you don't eat beef, but, lamb/mutton, pork, etc., can be cooked the same way. :)

  6. It looks like you plan is a good and tasty one with a focus on using up leftovers. That sounds like a successful meal plan.
    Roast Beef (eye round - the cut I prefer) was on sale this week for $2.77 lb. I can't remember the last time we had a roast so we got one and I cooked it last weekend.
    We had so many meals from it. I only ate 2 roast beef meals because I'm not a big meat eater but my husband has had many many roast beef meals in one for or another lol Today I froze the rest. It was a good purchase with still more to give.

    1. Thank you, Debra, and as usual, I've changed the meal plan around a bit, but, it is working out well.
      Oh, my! I don't think I've seen beef at that price in our stores in at least 3 years! You did well to buy some when it went on sale and it sounds like your husband enjoyed it! :)
