Bake on Thursday

Yogurt/Mixed Berries Muffins

When I was tidying the shelves in the dining room, I went through a binder of recipes I had copied or cut from magazines, tossing those that I don't think I will make.  These days, I am more likely to look for recipes online, but, this binder still contains a few recipes that I want to try.  One of the recipes I had was for muffins using yogurt to replace eggs and oil.  I still have most of the huge container of yogurt I received in one of my grocery orders, earlier this month - I had ordered a 32 oz. container, but, I received a 64 oz. container, instead!  That's a lot of yogurt for one person to eat (my daughter doesn't like yogurt)!  Today, I tried that muffin recipe and both my daughter and I agreed that the muffins were delicious.

The recipe called for 1 1/2 cups all purpose flour, 3/4 cup sugar, 2 tsp. baking powder, 1 tsp. baking soda, 1/2 tsp. salt, 2/3 cup plain nonfat or low-fat yogurt (I used full fat yogurt as that's what I had), 2/3 cup skim milk (again, I used whole milk), and 1/2 cup blueberries or grated apples (if desired; I added frozen mixed berries).  Combine the dry ingredients, gently stir in the yogurt and milk (and fruit - recipe omitted that step!), fill greased or paper lined muffin cups 3/4 full, bake at 400F for 18 minutes or until well browned.   Makes 12 muffins (I made 11 because my muffin tin has only 11 cups; the 12th cup broke off).  I sprinkled the tops of the muffins with a little sugar before baking them.  The muffins turned out really well and as I said, my daughter, who doesn't like yogurt, said they tasted delicious.  I will keep this recipe and make these muffins, again.  Next time, I might reduce the sugar to 1/2 cup, especially if I am sprinkling some on the top.

I also have a recipe for a loaf cake using yogurt, that I want to try, but the muffins take less time to bake!

Apart from baking muffins, it has been a fairly relaxed day.  It was sunny with a high of 68F, a bit windy at times.  I did two loads of laundry, watered some of the plants in the front garden with water I had collected from the shower while waiting for the hot water to run, helped my daughter set up the small charcoal grill she had bought for me as one of her Christmas gifts to me (the one I plan to use as an alternative cooking source if I don't have access to natural gas or electricity; I have a big grill, as well, but, the smaller one is more convenient). did a bit of paperwork, and chatted with my aunt.  I also froze some of the chicken curry and the cashew curry for daughter to take back with her.  

The clinic called and rescheduled my Friday's appointment to next week Friday, because the medication for my bone density injection has not been received yet.  It gets shipped from a lab in another state and they've been having some severe weather, which might be the cause for the delay.  I was fine with the appointment being rescheduled, but, I do need to start the car and let the engine run a bit, since I won't be driving to downtown and back, tomorrow.

Today, I am grateful for:
- Being able to try out a new muffin recipe and having it turn out well
- Working appliances
- Chatting with family and friends
- Relaxed days
- Sunny and warmer days

Today's joyful activity was baking muffins.

Plans for Friday include starting the car, cleaning the bathroom, and tending to the garden with M.

    1. I am planning to try the loaf cake, next. I've found two recipes, actually, one flavored with lemon and one flavored with orange.

  2. Your muffins look delicious and that's a recipe I could try. What a good idea to replace eggs and oil with yogurt I would never have thought of doing that and both are so expensive now. Thanks for sharing the recipe Bless.

  3. Thanks for sharing the muffin recipe. I've been doing the same thing, years of collecting recipes & not making. So like you going through to reduce to ones I really will make.

  4. Those muffins look yummy! I have a pancake recipe using yogurt and also a recipe for squares. My yogurt creates a lot of whey once I start to use it and instead of stirring it back in, I save it for baking.
    The temperature has gone down way below freezing overnight, so the river, which was wide open, will likely start to freeze over again. Not a good year for venturing out on it, I think, as the temperature seems up and down all the time.

    1. Thank you, Bushlady; the muffins turned out really well and I'm pleased. I've been looking at some recipes for scones, too, using yogurt.
      Sounds like the weather there is trying to decide if it wants to be winter or spring! February is usually the coldest month here, which is why I'm a bit worried that the peach tree is practically in full bloom!

  5. I haven't made muffins or cakes with yoghurt mainly because I avoid all dairy if I can. Mum used to use sour milk in her baking if she had any that had gone past its best, mainly in scones if I remember correctly but I never have milk here to be able to do the same.

    I've used coconut yoghurt with the spices added to marinate and cook the chicken before adding it to the curry gravy and that always works well ... the coconut yoghurt is completely dairy free so I'm okay with that. xx

    1. I was just looking up some scone recipes that use yogurt! I might try that, next. I have this huge container of yogurt to use up! I can freeze some of it, too, and that's a possibility.
      I must remember to try coconut yogurt! :)

  7. I'm sure using full fat yogurt and milk helped make the muffins extra good. :) Sounds like something to try next time we have some extra yogurt.

  8. Those muffins look fantastic! I have made a lemon poppyseed cake that uses yogurt, too. It makes the breads very moist. It is wise to have backup plans for cooking. I have a propane bbq up at the cabin.

    1. Thank you, Stephenie. Yes, I wanted to have an alternative source of fuel and another way to cook, if necessary. I looked into getting a propane stove, but, the smaller containers of propane seemed difficult to buy and I wasn't sure about storing them in the garage, especially when the temps soar in the summer. Charcoal briquettes seemed like a better alternative for me. :)

    2. Nope, all gone and it's far too cold to make any now (and I still have no heating) but I have plenty in the fridge so I'm good to go! I will probably use blackcurrants or blackberries from the freezer.

  10. Another good recipe to try. I will probably just use the muffin ingredients and bake in in a square baking pan. I like this kind of easy cake recipe.
    We had water in our basement the end of last week that kept us pretty occupied. It's been so wet the last few months and then we got about 4" of rain in 48 hours and with the ground already saturated, we ended up with a problem.
    After a day of vacuuming up the water and appearing to make no headway, we bought a portable submersible pump and that worked like a charm.
    I think it's time to have a sump pump installed so I've called a plumber to discuss it.

    1. That's a great idea to bake the batter in a regular baking pan instead of muffin cups! Then, you can cut squares to serve it.
      Oh, no! So sorry to hear about the water in the basement! Glad the portable pump worked and hope installing a sump pump will take care of any future flooding.
