Fusion Cuisine on Tuesday

 

Fusion Cuisine: Sri Lankan Tacos

Today, my daughter created a bit of fusion cuisine!  She was had a 20 minutes break between phone calls and meetings and couldn't wait for the rice to finish cooking to eat with chicken curry.  Instead, she made something she laughingly called Sri Lankan tacos for lunch, using the last of my ground beef curry instead of regular taco meat!  She said it created an interesting flavor profile!  We ate the rice and chicken curry, with vegetables (asparagus, leeks) and peach chutney for dinner.

My arm feels much better, today.  The soreness is almost gone.  There was a bit of numbness and tingling in the hand and fingers when I woke up, but, that might have been due to a side effect of the cancer medication I take and it wore off, eventually.

I brought in the empty trash cans in the morning and did a little bit of deadheading of flowers in the garden.  Then, I did two loads of laundry, including daughter's bed sheets.  

In the evening, I had my first piano lesson after a month-long break.  I had practiced, diligently, but, even so, I made silly mistakes while playing!  However, the lesson went well enough to receive an A+ on one of my pieces!  

Aunt C and cousin P called in the afternoon and, later, in the evening, I called friend R and chatted with her for a bit.  

After dinner, I did a partial inventory of the freezer and tried to organize things a little better.  Ideally, I'd like to have all the dairy items on one shelf, all the vegetables on one shelf, etc.  But, I only have the freezer that comes with the side-by-side fridge/freezer and recent grocery shopping trips have resulted in things being stored where there's room, without much rhyme or reason!  I will continue with the inventory, tomorrow.

Today, I am grateful for:

- Minimal side effects from the vaccine
- Working appliances (washer, dryer, etc.) and the electricity to run them
- Time spent in the garden
- Phone calls with family and friends
- Piano lessons

Today's joyful activity was playing the piano/resuming piano lessons.

Plans for tomorrow will depend on if it rains or not.  The weather forecast calls for rain!  If so, then, I won't need to water the garden.  If not, I will water.

  1. Those tacos are gorgeous! I would gobble those down in a minute :)

    I never made the lentil soup yesterday. I ended up making a baked rotini pasta with the leftover sauce from the spaghetti and meatballs.
    I think I will freeze the leftover lentils into two packs for the future. That works, right? I've never frozen lentils before.
    Now I just have to remember to eat them!

      Yes, lentils freeze very well. You should have no problems freezing your leftover lentils. :)

  2. It seems like when I try to organize the freezer, it doesn't last very long. I like to put like items together also, but somehow they all move during the night and become a mess. :)

  4. Hi Bless, That's interesting about the tingling. I have that when I wake up in the morning, too. I haven't had the vaccine yet. Congratulations on your A+ on your piano piece. It is snowing up here, so I will be shoveling when it stops. The trees look gorgeous and healthy.

    1. There are a number of reasons for tingling in hands and feet, including pressure on a nerve (from the sleeping position), diabetes, stress injuries, carpal tunnel syndrome, medications, etc. Sometimes, when I knit for a long time, my hands become numb and I must stop. It rained and hailed, down here! Have fun shoveling! But, be careful, too! (Hope your toe has healed.)

    I hated piano lessons when a child and my mother used to say that I would regret giving up.
    I didn't regret it for a long while but now? Well, of course, she was right!

  6. Did you get any stickers though? 😁 Have you got any new pieces to work on?

    I'm glad to hear that your arm is feeling better. Do you think you'll start venturing out once you've had your second dose? I can't decide how I feel about going out and about again, although I don't get my second dose until May so I have plenty of time to make up my mind. Our stay at home order ends at the end of this month so unless some other restriction is imposed I may allow myself the occasional trip to somewhere quiet to take photos.

    1. Unfortunately, no stickers unless I give myself one! :D No new pieces, either, because I still have 4 pieces I'm working on! I am almost ready to finish two of the pieces, but, I made too many mistakes playing them, yesterday.

      I have discussed venturing out after the 2nd dose with my daughter (whose degree is in epidemiology & biostatistics); more than anything else, I want to grocery shop in the ethnic stores for the specialty items and the deals! But, her advice was to take it easy for a little longer, given the facts that the vaccine isn't 100% effective, the variants are still a threat, and my existing health conditions put me at a higher risk. Our numbers here, in Los Angeles County, are still fairly high - yesterday, for example, there were 1,337 new cases, reported. Admittedly, lower than what the numbers were, earlier this year, but, still, a bit too high for comfort. Any outings I do will be carefully considered and the pros and cons weighed before I go!

    2. I think my own thoughts on when to start venturing out matches those of your daughter and yourself, although I will allow myself the occasional trip out in the countryside, miles from anywhere and people free, just to take some photos.

    3. I think being outdoors and away from crowds will be the way to go. Out in the countryside, in open fields, etc., should be just fine. A visit to a garden instead of a museum, perhaps, or an uncrowded beach. :)

  7. Your daughter has inherited your resourcefulness and the tacos look yummy! I did a bit of freezer foraging and made some soup to which I added some frozen veggies that needed to go, some frozen rice and some leftover beans from the fridge. Spices and chicken stock did the rest.

    1. Thank you, Bushlady. :) It was my turn, today, with some leftover canned corned beef (made over with onions, tomatoes, and chili powder) in a tortilla, rolled up like a burrito! :D

      Oh, freezer foraged soup sounds good! There will be some of that over here, too - I took out a container of soup "ingredients" (lentil cooking water, some bits and pieces of leftovers, and so forth) from the freezer, this morning, to be made into soup, for tonight!

    So glad your side effects were minimal. I am fully vaccinated, but will still be extremely cautious, especially reading the new CDC suggestions for those who have been vaccinated.

  9. I’m glad your arm is feeling better.
    I too got my Covid vaccine yesterday. One of our college campuses was a federal vaccination site for three days, and faculty was allowed to get the vaccine regardless of their age.

    Your daughter’s Sri Lankan tacos look delicious. 😊

  10. Sri Lankan tacos? Nothing wrong with trying something different. That's how many recipes were created. Glad your arm is feeling better from the vaccine. I organized my freezer a few months ago and it's still organized so I'm happy about that.
