After not meal planning last week, here's what I have planned for the rest of this month:
Brunches/Lunches: Scrambled eggs with sausages and fried potatoes or toast, Baked chicken drumsticks with salad, Ramen noodles, Coconut roti with lunu miris, French toast, leftovers
Dinners: Mac & cheese with tuna and a side salad; Baked chicken thighs with savory rice, Brussels sprouts, and cauliflower, Baked chicken thighs with oven baked potato wedges and salad, Rice and chicken curry with vegetables, leftovers.
Snacks: Fresh fruits, cereal and milk, crackers with peanut butter, granola bars, etc.
Saturday, being the first of March, there will be milkrice in the morning.
Sunday, we'll get Japanese food or Italian food (daughter's choice) from a restaurant to celebrate daughter's birthday.
That is the plan. Apart from Sunday's meal, everything will be prepared from ingredients on hand, in the fridge, freezer, and pantry cupboards. But, the planned meals are subject to change as always, of course. What's on your meal plan for the last week in February?
We made a big pot of lentils over the weekend, so they will feature heavily in our meals at the beginning of the week. Not sure about the rest of the week.
ReplyDeleteOh, that sounds good, June. I'd be interested to know how you will incorporate the lentils into your meals. I like lentils with rice and lentil soup. I know that some people make a lentil salad, too, but, I haven't tried that. Wonder what you'll have the rest of the week. Maybe you'll do a post about what you ate during the week. :)

DeleteYes, daughter's birthday celebrations aren't part of the regular grocery budget. It's in the category of 'guilt-free' spending. :)

Today, Monday, we will have pork chops. Tomorrow may be a quiche, as I have plenty of eggs and grated cheese and veggies as well as flour. That will take care of lunch on Wednesday as well, and there may be fish in the evening, and then when Thursday comes we will have panic with rice, or desperation on toast until I come up with a better idea!

DeleteI love having meals planned using what is on hand. I think we could eat for about 3 months on what is in the freezer/pantry. Might not be what we wanted each day, but it would be doable.
ReplyDeleteI keep a fairly well-stocked pantry as part of my emergency preparedness - in case of earthquakes or fires. But, I need to start planning more meals based on what I have in the pantry as various cans and boxes approach their "best by" dates.

Thank you, Lyssa. Yes, I don't necessarily eat everything I buy during a given month in that month. Often, I eat them a month or, sometimes, two later. I will take the money out of the gas budget and start March off with a new budget. :)
