April Meal Planning: Week 4

Ham and Potato Soup
(with celery, carrots, and tomatoes)

This was the meal plan for the third week in April:

Brunches: Leftover milkrice and chicken curry (Monday), ham and bread rolls (Tuesday), pancakes with sausages, scrambled egg and fried potatoes, leftover pancakes and sausages, more ham and bread rolls

Dinners: Cup of noodles soup (Monday), leftover spaghetti and meat sauce (Tuesday), ham fried rice, ham and potato soup, leftovers.

Here's how that worked out:

Monday:
Brunch:  Leftover milkrice and chicken curry 
Dinner: Cup of noodles soup

Tuesday:
Brunch: Ham and bread roll sandwich
Dinner: Leftover spaghetti and meat sauce

Wednesday:
Brunch: Scrambled egg, slice of ham, fried potatoes with bell pepper
Dinner: Tuna salad on crackers

Thursday:
Brunch: Bread roll with butter and peach jam
Dinner: Leftover spaghetti and meat sauce

Friday:
Brunch: Last of the leftover spaghetti
Dinner: Breakfast for dinner: pancakes and sausages

Saturday:
Brunch: Leftover pancakes and sausages
Dinner: Ham fried rice

Sunday:
Brunch: Leftover ham fried rice
Dinner: Oven baked seasoned potato wedges and scrambled egg

There were a few changes, but, it worked out quite well.

On to Week 4:

Once again, this week's meal plan is based on what I have on hand in the freezer, fridge, and pantry, including a whole 5 lb. bag of potatoes that must be finished before they sprout! 

Brunches: Ham and bread rolls (Monday), boiled mung beans, tuna salad and crackers, scrambled egg and fried potato, toast and peanut butter, muffins?

Dinners: Ham and potato soup (with added vegetables), baked salmon with broccoli and potatoes, chicken curry and rice with dhal and moringa curry, leftovers. 

At least, that's the plan!  No doubt there will be some changes as the week progresses!

  1. I love ham and potato soup and your picture looks delicious. Once again, we don't have a meal plan other than to go to the freezer and see what there is.

    1. Thank you, June; this was the first time I made ham and potato soup and I'm pleased with how it turned out. Going to the freezer and seeing what is there works, too. :)

  2. The potato soup looks delicious. I like the idea of a little tomato in it as well as the usual veggies.
    My meal plan this week includes 2 dinners for my husband from our German restaurant leftovers while I eat Indian food leftovers which husband brought home from work. Then a chicken casserole with all the odds and ends, a pasta primavera in pesto sauce with cannellini beans, salads. One night I will cook a bacon cheeseburger and faux fries for husband before I leave for a trip. 😊

    1. Thank you, Taconix. It was the first time I made ham and potato soup and I like how it turned out. I think I'll add a little bit of serrano chilies to it, the next time. :)
      Your meal plan for the week sounds delicious and I like how you've incorporated leftovers! Bacon cheeseburger sounds wonderful and I'm sure your husband will enjoy that! Have a wonderful trip!

  3. Your soup looks delicious! My meal plan is always in my head and doesn't require an eraser! I was going to have pork chops yesterday but as they had been slow to thaw out fully, I left them in the fridge and made a cheese omelet instead. (My meal recording calendar indicated that we hadn't had one for quite a while).

    1. Thank you, Bushlady; it turned out well. But, next time, I think I'll add just a little green chilies to it! Your cheese omelet sounds good, too, and you can have the pork chops later. I haven't had pork chops in a long time, but, I see that they will be on sale, next week, so maybe I'll consider buying some. On the other hand, I do have some leftover roast pork in the freezer...

    I know you didn't want to go to the store again in April - you are on your way to achieving that goal.

    1. Thank you, Debra. I haven't done a grocery order since the end of March, although I've picked up a couple of things on visits to the dollar store (a couple of cans of corned beef, for example). I still have plenty of food in the house, but, I am thinking of maybe putting in an order of groceries, next week, to take advantage of a couple of sales.
