Blueberry Cobbler on Friday

 

Blueberry Cobblers

On Friday, daughter baked two blueberry cobblers using homegrown frozen blueberries.  One was for us to enjoy and the other was to take to a potluck dinner at her friend's place on Saturday.  The one we tried was delicious, especially with a scoop of ice cream, and M enjoyed the piece that he was given to try when he arrived to tend to the garden in the evening.

My creams and shampoo were delivered this afternoon, a day earlier than estimated, which was nice.  

Daughter received some very good news about her job, this afternoon.  It looks like she will be able to keep her job after all.  We are very grateful for this blessing as not everyone in her department is as fortunate.  Thank you, everyone, for your prayers, well wishes, and good vibes on her behalf.  I know they helped immensely.

On Friday, I was grateful for:

- The good news regarding my daughter's job
- Answered prayers
- Blueberry cobbler
- M's help with the garden
- Being able to share some of the garden harvest with M

Friday's joyful activity was enjoying some homemade blueberry cobbler, warm from the oven, with a scoop of ice cream on top!

    1. Thank you, June. Daughter is on what they call a hybrid schedule - work 3 days from home and go into the office 2 days per week. She was doing that before she left Berkeley, commuting to work by bus. Since her move down here, however, she has been working fully remotely, but, as soon as her podiatrist tells her that her injured foot has healed enough for her to drive (she's not driving yet), she will be driving to the nearest satellite office which is located in a nearby city, two days a week.

    3. Yes; it is one of the things that daughter looked into when she was originally planning to move down and requesting to work remotely (before funding cuts and job insecurity came up). :)

  3. I hope the partygoers enjoy the cobbler as much as you did. I bought some frozen blueberries this year, thinking it would make for more variety in my jams. I finally got around to using them last week, and was shocked at the size of some of them - as big as cherries! I don't know if they were a special variety, or had been fed on steroids or what. The jam came out ok, so we'll see if it is popular. I am one of those people who finds blueberries have a soapy taste so it's no use asking me. Interestingly, the recipe I used called for the fruit to be boiled in orange juice, and suggested adding star anise and cinnamon sticks, so perhaps it is felt that the flavour needs a bit of "help". I didn't put the star anise in - I seem to remember when I made it a few years ago, it completely overpowered the jam. I guess those who like blueberries want to taste blueberry, not aniseed!

    Great news about your daughter's job. No upheaval, no worry about health insurance, and a guaranteed wage coming in!

    PS. What does label "a" signify? I have looked through a number of marked posts and am none the wiser! :o)

    1. Hopefully, daughter's friends will enjoy the cobbler. I, too, find blueberries to have a soapy taste, especially if they are very ripe. My homegrown blueberries taste less soapy to me, maybe because I pick them just before they are fully ripe and they have a bit of tartness to them.
      I hope your blueberry jam proves to be popular. I like to add a little cinnamon to my jams and I use lemon juice, but, I haven't added star anise, etc. I do use orange juice and/or orange rind to cranberry sauce.
      We are very thankful that daughter will keep her job!
      Sorry about label "a"; that was a mistake that has since been corrected! I usually type "a" into the labels section and get a drop down menu of all the labels I've used and I pick and choose the ones I want for that particular post. Usually, the "a" gets cancelled automatically, but, occasionally, if I don't select another label, the "a" remains unless I remember to delete it. It's not a secret code! :D

  5. I'm so glad to read about your daughter's job. That is great news, and that she can stay with you. I hope the satellite office isn't too long a drive for her.
    The blueberry cobblers do look delicious! I'll have a slice of you don't mind!!

    1. Thank you, Celie. The satellite office is about an hour's drive each way, maybe a bit more depending on traffic, but, it's only two days a week and doable. I'll have to coordinate my appointments because we will be sharing the car, but, we'll figure it out.
      I think I'll have to ask my daughter to make another tray of blueberry cobbler to share with everyone who wants some! :D
