September Meal Planning - Week 3 Review and Week 4 Options

These were my meal plan options for September Week 3:

Brunches:  Bagels with butter and/or cold cuts✔; sandwiches with cold cuts✔; salads; French toast; doughnuts, tortillas with eggs and lunu miris; leftovers from dinners

Dinners:  Fried rice;✔ smoked sausage✔  with spicy potato wedges and salad boxed rice mix, green beans, okra, and corn on the cob (requested by daughter who really liked the smoked sausage from last week); ground turkey keema curry with rice or ground turkey and pasta; "breakfast for dinner" scrambled eggs, bacon, fried potatoes✔; chicken patty curry pie; chicken enchilada meal, leftovers✔.

Snacks/Desserts: Options include fruit✔, cereal✔, yogurt✔, ice cream✔, cheese and crackers✔, popcorn✔, mango achcharu or pickle (under ripe mango, cut up and added to a mixture of white vinegar, salt, sugar, and chili powder; eaten as a snack)✔. etc.

And here's how that turned out:


Monday:
Brunch:  Toasted bagel and butter (me); bagel/cold cuts sandwich (daughter)
Dinner:  Cold cuts sandwich (me); leftover rice and salmon (daughter)
Snacks/Dessert: Mango pickle, jujubes, waffles, popcorn

Tuesday:
Brunch:  Cold cuts sandwich made with bread  (me); cold cuts sandwich made with bagel (daughter)
Dinner:  Fried rice (leftover Chinese barbecue pork, leftover rice, onions, chives, peas, carrots, scrambled egg)
Snacks/Dessert: Yogurt and treacle (me); Asian pears, Grapes, leftover waffles,

Wednesday:
Brunch:  Doughnuts compliments of M
Dinner:  Smoked sausage, green beans, okra, boxed rice/wild rice mix and daughter had a small corn on the cob (from the garden) as well
Snacks/Dessert: Chocolate mousse (compliments of M) with ice cream, Asian pears

Thursday:
Brunch:  Leftover doughnuts
Dinner:  Breakfast for dinner - scrambled eggs and fried potatoes
Snacks/Dessert:  Fruit, crackers, cereal with milk

Friday:
Brunch:  Ham sandwich on half a bagel each, Asian pear slices

Friday Brunch


Dinner:  Leftovers from the fridge (daughter); baked potato (me; wasn't feeling hungry)
Snacks/Dessert:  Homemade croutons, Asian pears, passionfruit lemonade; cereal with milk

Saturday:
Brunch:  Tortillas with eggs and lunu miris (I beat the eggs with lunu miris and then, pour some of it onto one side of the tortilla and cook until the egg mixture is cooked, flipping it over to fully cook the egg mixture)
Dinner:  Chicken Patty Curry pie.  I was planning to make patties (small meat filled pastries, similar to empanadas) using canned chicken breast, with onions, carrots, and potato added as well as curry powder and chili powder to make the patty curry, but, instead of making small individual pastries, I decided to make one big pie - less rolling out and cutting of pastry.

Snacks/Dessert: Apple pie  - I had pastry leftover and decided to make an apple pie for dessert; daughter cut the apples for me

Sunday:
Brunch:  Ham sandwich (me); hamburger (daughter, who had a day out with friends)
Dinner:  Chicken enchilada with mole sauce, Mexican rice, refried beans, and flan (daughter brought her restaurant dinner home to share with me)
Snacks/Dessert: White cheddar cheese crackers (Cheez-It)*, grapes, flan 

* I went to the pharmacy to pick up my prescription refill and I had a $4 Extra Bucks coupon; the 7 oz. box of crackers, regular price $4.49, were on sale, 2 for $5.00 or $2.50 each; I bought two  - one original and one white cheddar - with the coupon and $1 out of pocket.  A good bargain as far as I am concerned (I would not pay the regular price for them).

Well, I didn't stay true to the meal plan, but, we had some delicious meals during Week 3.

Moving on to Week 4, here are my meal plan options:

Brunches:  Leftover chicken pie;  the last of the bagels; the last of the tortillas; eggs, bacon, and toast; boiled mung beans; leftovers from dinner; cereal

Dinners: Ground turkey keema curry with rice and vegetables; boxed mac & cheese with tuna; "breakfast for dinner" type meal or toasted sandwiches; fried rice; frozen potstickers (need to order from the grocery store); or something else!

Snacks/Desserts:  Fresh fruit, cereal, crackers, avocado pudding, and maybe another apple pie as one has been requested!

Well, that's the plan, but, as always, the actual meals might be subject to change!  

As always, I am grateful for having plenty to eat and variety in my meals.
