April Meal Planning Week 2 Update & Week 3 Plan

This was the meal plan for April Week 2:

Brunches: Tuna salad sandwiches✔, scrambled egg, toast or fried potato, and bacon✔; leftover soup✔; peanut butter toast; muffins✔

Dinners: Rice and curries✔; turkey and vegetable soup✔; grilled cheese sandwich✔; fried rice✔; leftovers✔

And this is how it turned out:

Monday:
Brunch: A scrambled egg, bacon, and toast
Dinner: Turkey and vegetable soup with toast
Snacks included a banana and the last 2 banana muffins (from the freezer)

Tuesday:
Brunch: Banana sandwiches
Dinner: Rice and curries (chicken curry, beets, sauteed cabbage, cucumber slices)
Snacks: Turkey & vegetable soup, crackers


Wednesday:
Brunch: Tuna salad sandwich
Dinner: Leftover rice and curries
Dessert: Creme caramel from a boxed mix - didn't like it that much and will not buy it again

Thursday:
Brunch: Tuna salad sandwich
Dinner: Frozen dinner (roast beef, mashed potatoes, carrots and green beans); it was good, considering I paid $1.99 for it.

Friday:
Brunch: Lemonade (skipped brunch as I wasn't hungry)
Dinner: Turkey soup, drop biscuits

Saturday:
Brunch: Drop biscuits
Dinner: Ham fried rice (ham from the freezer)

Sunday:
Brunch: Milkrice with leftover mackerel curry
Dinner: Grilled ham and cheese sandwich; pears

I mostly stayed on plan and it turned out well, I think.

Here's the plan for April Week 3:

Brunches: Leftover milkrice; French toast; tuna salad sandwiches; ramen noodles; scrambled egg, bacon, and fried potato; pancakes or waffles; leftovers

Dinners: Ham and split pea soup; rice and curries (lentils, eggplant, cabbage); sauteed chicken breast and vegetables; leftovers.

The meal plan is based on what I have on hand, but, I do plan to go to the ethnic grocery store on Tuesday to take advantage of their one day only sale on eggs and I will probably buy some bread, fresh fruits and vegetables when I am there.

That is the plan; we'll see how well it works out.

  1. The beginning of our week will be leftovers from some weekend cooking. After that, we need a better plan than last week when we got take out more than we should have.

  3. Some great meal choices, Bless. And I haven't eaten a banana sandwich in ages!
    I'll definitely be meal planning this week, just as soon as I get home. But I did make my big batch of soup on Sunday. Xx

  4. I am going to make milk rice at some point and time. Do you cut yours into square or diamond shapes and also do you serve the curry on top of it or to the side. Curious

    1. To be quite honest, I don't bother with cutting it into squares or diamonds (usually diamonds) when I'm just making it for myself. I just serve it directly onto the plate and put the curry sort of to the side, but with some of it on the top, too. Mostly because I like to eat the last little bit of milkrice with a piece of jaggery. :)

  5. My meal planning is still mostly in my mind, for example I had this ongoing idea that any day soon I will use those saved broccoli stems and make cream soup, and today was the day!

    1. Sounds like your mental meal planning is working well for you! I'm sure the broccoli cream soup turned out great. I tend to forget things in the fridge if I don't write it down! In fact, I believe I have some wilted kale in the fridge...
