Saturday

Waffles with Apple Topping

Saturday was a bright, sunny day, with clear blue skies and not a cloud in sight!  It was warmer than it has been, too.     

I made waffles for brunch and made a topping for it with an apple, sliced and cooked in a little butter, sugar, and cinnamon.  It was good, but, some ice cream on top would have been even better! LOL.

In the afternoon, I walked about in the garden, for a bit.  But, I felt tired, later, and took a nap on the sofa from 4:30 p.m. to 7:00 p.m.!  I only woke up because Dancer was crying for his evening tuna!  Then, I felt groggy and took awhile to wake up!  Later in the evening, however, I felt a bit nauseated, so I chewed on a piece of candied ginger, had a peppermint, and ate some plain crackers for dinner.  I don't think it was the waffles or the apple that I ate for brunch, but, maybe my stomach just wanted a rest.  

Friend S called me in the afternoon, to say that she was at the Armenian grocery store and did I need anything?  I thanked her and said no, because I have everything I need for right now.  But, I am so grateful to have friends who offer to do my grocery shopping for me.  They know that I am staying home during this time because I want to minimize my risk of getting the virus since I have underlying health conditions that increase my risk factors for not only getting the virus, but, also for not recovering should I get it.  I know I have to die at some point or another, but, I am hoping that I will be blessed with a few more years before that happens! 

My daughter baked chicken pot pies with pantry items, today:

Chicken Pot Pies
2 cans of chicken meat, 1 can of cream of chicken soup, 1 can of mixed vegetables, and 1 tube of refrigerated biscuit dough.  She lined the muffin cups with the stretched out biscuit dough (she doesn't have a rolling pin) and brought the tops over the filling to the extent possible, because she wanted to be able to remove the pot pies from the muffin cups without difficulty.  The two individual ramekins, however, have the biscuits topping the pie filling. 

Today, I am grateful for:
- Friends who call to offer help with grocery shopping
- Afternoon naps
- A sunny day
- Phone calls from family and friends
- Video chatting with my daughter

My joyful activity was my afternoon nap!

  1. You do have some very good friends, Bless, but we usually get back what we give out into this world, and I know just how kind and generous you are towards them.
    Your daughter's baking looks delicious. It must be reassuring for you being able to chat with her regularly. X

    1. Thank you, Jules. Yes, I am glad that I am able to chat with my daughter, daily. It would have been even more stressful if I hadn't been able to.

  2. Saturday was good - Easter Sunday is proving brilliant. I discovered a small packet of pastry right at the bottom of the freezer underneath a larger Tupperware box. I shall be making chicken pot pies later, and thinking of you!!

  3. Mm-mmm. Those pies look so good, and sound so easy to make with pantry items. Your waffle making must be improving as well. Does practice make perfect?, or is it all about seasoning the waffle maker? ha,ha.

    I hope you are feeling better today. Your body will let you know you need more rest. Perhaps just watch some TV today.

    1. The pies do look good, don't they? My waffle making is improving - yes, it is all about greasing the waffle maker. It seems to prefer butter to oil!

      I am feeling better, today, thank you. Going to take it easy, though. This is NOT the time to get sick!

    Your daughter's pies look very tasty indeed. I'm trying a Sri Lankan green apple curry this week - Nil mentioned it on her blog and a found a recipe online. I'm making this spice mix for it tomorrow

    1. Yes, I'm feeling better, now, thank you, Eileen. But, I think I will take it easy, today, too.

      Green apple curry does sound very good, doesn't it? I haven't made it, myself, but I might give it a try. There are lots of curry powder recipes and it has been awhile since I made my own, but, make sure you ventilate your kitchen when you make the curry powder, because it can be very aromatic and the smell tends to linger! :)

  7. Your daughter is very resourceful and experienced with cooking, going by the photos she has shared in the past and you have posted. It must be reassuring to know that you have brought her up to fend for herself really well.
    We have finally finished with the last bottling of maple syrup and we are now in cleanup phase. Yesterday evening I watched the Easter Vigil live on my laptop and it is a very long Mass, two hours altogether. I'm finding it harder recently even to sit through a 2 hour movie, but I did find the Mass very comforting and to get a break from sitting I stood up for the prayers each time.

    1. She has been cooking for herself for 5 years, now, and she likes to cook. But, yes, it is good to know that she can look after herself. :)

      You must be glad to be done with the bottling and will be even happier once the cleanup phase is done!

      I'm glad you were able to watch the Easter Vigil and found a good way to break up the sitting down part of it. :)

    1. Thank you, Live and Learn. Yes, she is doing well. The first couple of weeks of being cooped up in her small studio apartment was a little hard for her, along with everything else. But, she has adjusted to it. :)

  9. Your daughter is being creative and using the things she has on hand very successfully. I enjoy hearing about how she's managing - she's resourceful like her mother.
