March Meal Plans - Week 2

First a review of how my March Week 1 meal plan worked out.  

Breakfasts/Brunches:  Banana muffins (3 left)✔, pancakes or waffles, milk rice with seeni sambol (March 1)✔, turkey soup (1 serving left)(added to dinner)✔, scrambled eggs✔ with fried potatoes or hash browns, leftovers✔. cinnamon rolls

Dinners:
- Leftover shredded turkey made into something!  It's been sitting in the fridge for several days, now!✔
- Rice with sauteed shredded turkey chicken* or mackerel curry, dhal, moringa curry*, chutney
- Ham* and split pea soup?
- Ground beef* with mashed potatoes, snow pea pods* or broccol
- Leftovers✔
*Items from the freezer

- Macaroni and cheese
- Roti
- Cup noodle soup
- Lasagna

Ha!  See all the items crossed out?  I didn't make them! The items in blue are what I had, instead! Here's how it all turned out:

Monday:
Brunch: banana muffin
Dinner: Made-over shredded turkey with rice cooked with the last of the turkey soup, cucumber slices

Tuesday:
Brunch: Scrambled egg (by itself)
Dinner: Leftover rice, shredded sauteed turkey, cucumber slices
Snack: Cheese and crackers, banana muffins

Wednesday:
Brunch: Milk rice, seeni sambol
Dinner: Milk rice, chicken curry
Dessert: Home canned peaches with non-dairy whipped topping

Thursday:
Brunch: Leftover Milk rice and chicken curry
Dinner: Roti, chicken curry, seeni sambol
Dessert: Home canned peaches with non-dairy whipped topping

Friday:
Brunch: Leftover roti with chicken curry and seeni sambol
Dinner: Boxed macaroni and cheese, leftover shredded sauteed turkey
Snacks: Half the sugarbee apple, home canned peaches, cheese and crackers

Saturday:
Brunch: Lasagna and cinnamon roll
Dinner:  Cup noodle soup (mostly the broth from it; saved the noodles for another day); half a bagel with cream cheese, mandarin 

Sunday:
Brunch: Half a bagel with cream cheese
Dinner: Lasagna
Dessert/Snacks: Cinnamon roll, the other half of the sugarbee apple

I see a sad lack of vegetables, but, I did add some vegetables to the sauteed shredded turkey.

Here is the plan for Week 2.  Once again, I am going with options, instead of a set menu by day, as that seems to work best for me.

Breakfasts/Brunches:  Bagels and cream cheese, leftover noodles from the cup noodles with some leftover shredded turkey added to it (Monday),  scrambled eggs with toast or fried potatoes, lasagna.

Dinners:

- Leftover macaroni and cheese with the last of the shredded sauteed turkey, salad (Monday) 

- Leftover macaroni and cheese with chicken curry

- Rice, chicken curry, dhal, cucumber slices

- Ham and split pea soup?

- Ground beef with mashed potatoes, broccoli

- Leftovers

As always, subject to change depending on how I feel!

  1. Best to look on your meal plans as a guide as your week one gifts of the cinnamon rolls and lasagna were unexpected. I worry we do not eat enough vegetables although I have plenty in the freezer. I am definitely a decide on the day person :)

    1. The meal plan as a guide works very well for me, especially when there are a lot of leftovers to eat up! I, too, have plenty of vegetables in the freezer, but, I am not very good at making sure I incorporate enough of them in my meals. I think deciding on the day is good, as long as things have time to thaw if needed. :)

  3. Some weeks my meal plans are an actual plan and some weeks it is merely a suggestion. Other weeks circumstances dictate a complete change in direction.
    Oh well, what do you do except graciously accept cinnamon rolls (I am envious) and lasagna and enjoy the change of plans!

      I do enjoy reading your meal plans and they always sound delicious. I also like the way you change the meal plans as needed. It's a blessing to have options, isn't it?

  4. I tried out a recipe for West African Peanut Stew last week and it was great. DH loved it. I guess we will have it again sometime. Yesterday I finally figured out what to do with a can of 6 different beans. It was up to its best by date so action had to be taken. DH doesn't like bean salads. I made a big pot of soup with several diced veggies and canned tomatoes, with spices and the canned beans. It was just right for a winter lunch. I saved some for today and froze some. We needed soup today, there is a howling gale and it is freezing cold!

    1. I had a roommate from Nigeria when I was at the university and she used to make a peanut stew that was very tasty. I have not tried making the stew myself, though. Glad you found a way to use the can of different beans. Your bean soup sounds great, especially on a cold and blustery day. I think I'll make my ham and split pea soup later this week as more rain is expected.

  5. Yum! I love macaroni and cheese. Today I roasted a chicken with vegetables. I will use the leftovers to make enchiladas.

    1. Macaroni and cheese is comfort food at its best, isn't it? Roast chicken and vegetables sound lovely and making enchiladas with the leftovers sounds like a good plan.

  6. I like options too rather than a set day to day menu. That way I do know what will be cooked for the week but depending on what I feel like cooking or eating things can change! I have to work on using things from the freezer this week so the only things I have bought are the fresh veggies we will be eating along with the meals.

At one time, I liked the idea of a set meal plan; I think it was from reading an article which said that it simplified things - you knew that Monday meant spaghetti and meatballs, Tuesday meant meatloaf, and so forth. It took all the guess work out. But, then, I realized that I'd get bored eating the same seven meals every week!
      I'm hope your plan to use things you have in the freezer will work out well this week. :)
