Mid-March



Today's Garden Harvest: Lettuce and Snow Pea Pods!

I picked some lettuce and the first of the snow pea pods from the garden, today!  Some of the lettuces are starting to bolt!  I picked three more snow pea pods after I took this photo - I'll be having them in a stir-fry, tomorrow.  

Last night, after I posted, I baked the second tray of chicken thighs:

There were 12 thighs in this package.  I seasoned them with some salt, pepper, onion powder, garlic powder, ground ginger, and a little soy sauce.  After they cooled, I packaged them, three thighs per package, and froze them for future meals.  

Then, while the oven was on to bake the chicken, I mixed up some pastry dough and made some patties with the leftover ground beef and dhal curry I mixed together.  There was just enough of the mixture for 10 patties.  I added some freshly grated cheese to the leftover pastry, along with a little garlic salt and paprika, and baked some cheese crackers for a snack.

I had some of the patties for my dinner, last night, and for brunch, today.

It was a cool and cloudy day, today, but, the rain ceased and M was able to check on the garage roof and do a few more repairs.  He wasn't very pleased with his efforts, but, he's a perfectionist; I told him that as long as the repairs hold out until I can get a roofer to check on things, it's good enough for me.  M also checked on the peach tree and noticed that some of the baby peaches that are forming are showing signs of frost damage.  We will have to thin out quite a few fruits, in another week or so.  

I called and wished one of my cousins for her birthday, sewed a few more patches on my quilt in the afternoon, watched a walking tour of the Tower of London, and watched news.  Later, I cleaned the litter box.  Dinner was more of the soup and cheese crackers followed by grapes.  Grapes are selling for $2.99/lb. this week, so I am glad I bought some when they were on sale, last week.   

Today, I am grateful for:

- M's help with the garden and roof repairs
- A well-watered garden
- Today's garden harvest
- Working appliances
- A relaxed day

Today's joyful activity was picking the first pea pods from the garden.

Plans for tomorrow include some kitchen cleaning and more quilt repairs.

    1. Thank you, Angela. :) I want to get the maximum use of the oven when I have to use it and it's good to have some precooked meat in the freezer for easy meals. :)

  2. All your baking looks so delicious and so nice to be able to pick pea pods and lettuce from your garden. M is a big help to you and you're right the garage roof repairs have withstood the rain and that's what matters. I've been ill again second time in a fortnight and I hope I can get a doctor's appointment today.

    1. Thank you, Eileen; yes, M is a big help and it is nice to be able to pick fresh vegetables from the garden. I'm so sorry to hear that you have been ill again; I do hope that you are able to get an appointment with the doctor, today. Maybe getting wet while walking Tilly contributed to getting ill again? Hope you feel better, soon. Take care of yourself.

  3. I was just thinking about that it might be time to plant peas. I'm surprised that your lettuce is bolting in your cooler weather unless it's just at the end of it's life cycle.

    1. Peas are a cool weather crop here, although, I managed to harvest peas well into the summer, last year. I think the lettuce are bolting in response to the longer day light hours. They were planted in mid-November, so, they might be nearing the end of their life cycle, too. I'm going to experiment and cut down the bolting lettuce stem to see if it sprouts again!

    1. Yes, parts of my state are getting lots of the white stuff this year! I'm thankful that I'm getting the liquid version! I wish I could share some of the lettuce and peas with you. :)

  6. Fresh veggies and yummy baking! Perfect photos for the blog. Our son says he has a couple of rabbits visiting the yard and he threw out a snap pea and the bunny sniffed and ignored it, the same with a strawberry he threw for it! I told him they probably prefer to chew on his shrubs, while waiting for the veggies he will grow in summer.
    We had snow this morning but not too bad for driving to pick up prescriptions.

      Ha, ha, remember the rabbits that visited my garden? They loved cat food! They 'd eat the kibbles I'd put out for the cats! Maybe your son should give them some cat food! And they liked some of my succulents, the gania flowers, and calamondin fruit that had fallen. They ate some grass, too, and the baby zucchini and watermelon! But, the cat food was the favorite!
      Glad the snow wasn't too bad and you were able to pick up your prescriptions. It had rained this morning, but, now, it is just cloudy and grey.

  7. I'm glad M's garage roof repairs are holding up. The last thing you need is a leaky garage.

    The food looks so good. Very tempted with the cheese crackers. I don't flavour with soy sauce when I do my chicken. I use all the others spices that you do but also add paprika as well, more for the colour than the flavour. xx

    1. Yes, I, too, am glad that the garage is staying dry.
      Thank you; the cheese crackers make a good snack! Some paprika on the chicken would have been good, too; I debated putting some on the chicken, but, decided not to. I like to put it on potato wedges when I make them. :)

    1. I am being an armchair traveler, since I am not likely to visit half these places in the near future. I enjoyed visiting London when I was there on a holiday, but, that was several years ago and things have changed quite a bit since my visit. Today's video was a visit to the city of Bath. :)

  10. Such an early harvest. Or is it? I don't remember when we first started seeing things from your garden last year.
    All your cooking looks marvelous. Now you have your cooked chicken all packaged up in the freezer waiting for you. And those pastries and little crackers look delicious. I've never made crackers. You were smart to whip them up with the extra dough.
    I'm glad M's repairs are holding to your garage roof. Water leaks can be such a challenge.
    I'm still struggling with our basement. The sump pump is working fine but I now realize I should back it up with a battery system in case of a power outage so I am looking into that. Also there's still a leak at the chimney area for our fireplace. I had someone here to look at it and he assessed the problem but I haven't heard back from him for scheduling the work.
    I will call him this week.

    1. Actually, the garden is off to a late start this year, because it's been so cold, I think. I was already harvesting snow peas in February, last year, and there were small broccoli heads already forming on the broccoli plants.
      Thank you; the pastries and crackers are all gone, now, but, there's plenty of chicken in the freezer. :)
      I'm very thankful that M was able to repair the garage roof, even if it turns out to be temporary fix. A good idea to get a back up battery system for your sump pump or a portable generator, perhaps? Hope you can get the chimney area leak repaired soon. It's never ending, is it?

  11. Oh the sight of your baked goods always makes my mouth water and the chicken looks yummy too. I recently did a batch in the crock pot, and they turned out wonderfully. I am drawing a blank on what I put in with them to make them so good, hopefully hubby remembers or it dawns on me soon. I just stocked up on chicken breasts as they were on sale right before Easter, and now I need to do a bit a batch cooking with them.
