Quiet Wednesday


Dinner: Kufta, Pasta, and Veggies

Cousin P's phone call woke me up in the morning.  Her daughter had been ill on Monday and she had called me to ask if I had any coriander to make coriander tea for her (the Sri Lankan panacea) and I had taken her some coriander and a couple of other items she wanted and I had called her on Tuesday to check how her daughter was feeling.  She was calling me today to say her daughter was feeling better.  

In the afternoon, I watched some of the impeachment hearings and crocheted.  Later, I started the car, since I hadn't started the car in over a week - it started without any problems, thank goodness!  I also weeded one of the flower beds in the front and picked some oranges and the first pea pod.  

For dinner, I cooked some kufta that neighbor S had given me and I had kept in the freezer.   I cooked some pasta to go with it (a boxed pasta roni mix), as well as some broccoli and corn.  There's enough kufta leftover for daughter's lunch, tomorrow.  

Today, I am grateful for:

- Cousin's daughter is feeling better

- The car starting without any problems

- Meals from the freezer and pantry

- The first pea pod from the garden

- Having daughter home with me

Today's joyful activity was crocheting.

  1. I had to look up kufta. What kind of spices do you usually put in them?

    1. The kufta I had were what neighbor S had given me (I believe her mother made them); I don't quite know what spices they put in them, other than salt and pepper. When I reheated them, I used a tomato based broth that S had also given me.

  3. That's interesting about coriander tea. I eat a half a cup of fresh cilantro daily. It's so good for you. I put it in my salad. Thanks for the reminder, I need to buy more.

    1. A lot of Sri Lankans used to take herbal remedies for their ailments and take ayurvedic and homeopathic treatments.

  4. I had to google kufta. The recipes all look delicious! Anytime neighbor S wants to move to Wisconsin (where it's always sunny and warm) she's welcome to settle next door to me! Crocheting sounds joyful, tho not watching the impeachment. Best, Celie

    1. Ha, ha, Celie, you'll have to find a home nearby for S's mother, too, because, I think she made the kufta that was shared with me! I went to university in Green Bay - I know just how sunny and warm it is up there! :D

    I've listened to bits of the impeachment hearings - do you know how long the trial will last?

      Well, the House impeachment managers concluded their presentation, today. The defense lawyers for the former president will begin their presentation, tomorrow. I heard that they have 16 hours to argue their side, but, whether they will take all their time is not known and I don't know how long the Senate will take to vote on it. Maybe it will all be over tomorrow or it might go on till next week.

  6. I too had to look up kufta. So, it's a sort of meatball?
    The ones on your plate look like there's a breading?

    1. Yes, they are a type of meatball; the coating outside is made with bulgur wheat (cracked wheat) mixed with ground meat. From what I understand, the wheat and ground meat is mixed together to make a sort of dough which is then filled with the ground meat filling.

  8. I notice that you are eating a lot more veggies than you used to. Full marks there!
    I was going to go grocery shopping today but got up late and figured out we could still eat well on what was in the house. It's interesting how it works out. So tomorrow I will shop.

      There's something to be said about a well-stocked pantry/freezer, isn't there?
