Relaxed Monday

Thank you, everyone, for your supportive comments on yesterday's post. I really appreciate how kind everyone is.

I had the day off from work, today, and although I had listed several errands on my To Do List, I decided to stay home and take it easy. I was able to do so because I had enough of everything to last me for a few days if not the entire week. It is true, what they say: "Enough is as good as a feast". Enough can be such an abundance!

So, instead of going shopping for cat food (I have enough for this week), flea prevention medication (there's enough for this month), kitty litter (I have enough for this week), grocery shopping (I have enough in the freezer and fridge), and putting gas to the car (I have enough for at least another day or two), I changed my bed sheets, did two loads of laundry, put away the dried laundry, took the trash cans to the curb, watered the front garden, spoke with one of my neighbors, emailed a cousin and a friend, messaged another cousin, called a friend, spoke on the phone with my financial planner, video chatted with daughter, and caught up on blogs! I will run my errands another day. Or spread them out over several days.

For lunch, I pulled out a packet of frozen meatball curry and had some of that with some leftover pasta. There is enough meatball curry for at least two other servings during the week.

For dinner, I made a stir fry with half of the smoked sausage I had in the freezer, carrots, zucchini, onion, bell pepper strips, and a handful of peanuts, and had that with freshly cooked rice:

Lots of stir fry left over for the rest of the week! I will pack some to take for my lunch, tomorrow.

Today, I am grateful for:
- Supportive blogging friends
- Having the day off from work
- Being able to stay home and take it easy
- A well-stocked fridge/freezer/pantry
- Having sufficient for my immediate needs

  1. That stir fry looks lovely. Is it your own recipe or do you follow one from a book?

    1. Thank you, Eileen. Yes, the stir fry was my own recipe - my stir fries usually are, as I just slice and toss whatever meat and vegetables I have on hand. For this particular dish, I just sauted the sliced smoked sausage (half of a 14 oz. sausage) in a little vegetable oil and sesame seed oil, mixed together, then, added half a sliced onion, 3 sliced carrots, 1 zucchini, a handful of bell pepper strips (maybe 1/2 a bell pepper - I had already sliced and frozen it), and a handful of salted roasted peanuts. I added about 2 tbsp. of soy sauce, too. I would have added some celery and broccoli, too, if I had some, but I didn't.

  5. It was Bank Holiday Monday over here Bless and the weather was beautiful. I'm always glad on behalf of people who work when that's the case so they can get out and about and enjoy their long weekend.

    I'm glad you've got over whatever upset you. We can all be overly sensitive at times but I find when there's nobody there that you can run your thoughts and feelings by things can grow out of proportion in our minds very quickly. I'm smiling at the fact your DD rolling her eyes would have made all the difference, sometimes we just need another person's perspective. Have a lovely week. xx

    1. Glad you got to enjoy a long weekend with your family, Suzanne. Our next holiday is Memorial Day, which is on the last Monday of May. But I am using up some vacation time and taking long weekends, even without a holiday!

      Yes, daughter rolling her eyes at me would have helped a lot, although I did realize that I was being silly, even without her being here to do so. :)

  6. Sometimes a day at home getting a few things done and keeping out of the rush is the best gift we can give ourselves! I'm sure it did you the world of good. I'm thinking I might stay home tomorrow as I attended a wake on Monday and the funeral today.
    The weather is gorgeous and so warm! This afternoon I walked to the mailbox and was approached by two neighbouring dogs who knew that they would get a piece of gingersnap cookie each. I don't give them a lot but it certainly keeps them friendly! We have woodpeckers drumming loudly on trees, and we have had lunch two days and even supper today, outside on the deck, surrounded by little rustling critters on the ground below. We walked around after supper inspecting the yard. I found two crocuses and two wild violets.

    1. Yes, sometimes, the urgency to get things done is all in our heads and not a real urgency, after all. I hope you decide to stay home and rest, tomorrow.

      Sounds like spring has definitely made an appearance! I wonder if the woodpeckers peck at the maple trees and ever get any sap instead of insects!

    2. I don't think woodpeckers peck at the maples but there is a bird called a sap-sucker which will drill into birch trees for the sap!
