Halloween Saturday: Baking Day


Apple Pie
Saturday was a lovely day.  Sunny and warm at 92F.  Daughter did a load of laundry for me in the morning, and I baked a double batch of corn bread (half was set aside for my aunt and cousin; I didn't take a picture of the corn bread, though).

In the afternoon, one of daughter's friends came over, as she wanted to bake me an apple pie as a "get well soon" gift.  They went together to buy the apples and daughter did a bit of grocery shopping for me, as well (I needed bread, milk, and eggs).

When they came back, daughter's friend prepared the apples while daughter made the pie pastry from scratch, with me hovering a bit, as it was her first time.  I think the girls made a lovely pie, with a lattice pie crust topped with pastry leaves:

 Once it had cooled a bit, we all enjoyed a generous slice of pie, each.

Later in the evening, my aunt and cousin came over and they stayed to dinner (yellow rice, chicken curry, broccoli, and tomato chutney) with apple pie for dessert.  They brought me two bags of stuff - cookies from the Sri Lankan store, a couple of different types of meal replacement drinks the oncology nurse had recommended, flavored water for me to try (I was told to keep well hydrated as an antidote to chemo-induced nausea), etc.  I was glad I had baked cornbread for aunt and daughter had bought two packets of special cookies for cousin. 

After dinner, cousin swept the house for me while daughter tidied, so the house was readied for more visitors (my half-sister and her husband), tomorrow.

It was a lovely way to end the month of October.  

Today, I was grateful for:

- My daughter and her friend baking apple pie together
- The lovely smell of corn bread and apple pie baking
- The sound of daughter and friend laughing
- Aunt and cousin visiting
- Cousin helping with housework

    1. Dawn, thank you. I especially liked it because they made it for me and they did it from scratch. Anytime two young women (both 22) get together to bake or cook and consider that as having a good time, I know that all is well with the world. :)

    1. It was actually the first time daughter made pastry by herself (more or less), but it turned out well and the pie was quite delicious. Now she has one more skill she can use in the future; she'll never be at a loss for a gift to take someone - a home-baked pie will always be appreciated.

    1. Yes, I'm so glad that she got to spend some fun time with her friend. They've been best friends since 7th grade and kept the friendship going even when they attended two different colleges.

  4. A great day ... good company and good food you had! Would you be able to share your apple pie recipe? I've tried several recipes but haven't found one I'm totally pleased with. So glad you had a nice relaxing day!

    1. Carolyn, we used the apple pie recipe in my Better Homes and Gardens cookbooks. But they adapted the recipe a bit - instead of "thinly slicing" the apples, they cut chunks and daughter said they increased (tripled) the amount of cinnamon and nutmeg called for in the recipe. Also, daughter needed to add more water to the pie pastry than called for in the recipe before the dough would stick together, probably because our weather was hot and dry. If you need the actual recipe, let me know.

  6. The pie looks wonderful!!!!
    So happy Daughter is getting to come home on the weekends to help you.. and how fun that she and friend got to spend time together and cook. Know you enjoyed watching them..[nothing makes us mama's more happy].
    So nice of your family to come visit and help you with the chores.. So blessed, for sure. Praying for you.

    1. Thanks, Judy. First time either of them made an apple pie from scratch, and it came out quite well. Most importantly, daughter is not intimidated by making the pastry, so, it bodes well for chances of more pie in the future! :D
