June Meal Planning - Week 1

 

A Dinner Last Week: Breaded Shrimp, Garlic
Bread, Broccoli, Cucumher Salad

A new month and a new start to my weekly meal planning.  As most of you know, my meal planning is very flexible and the meal plans tend to be more of a list of options than anything else.  But, knowing I have options is helpful and is, actually, a blessing because there are others who have little to no options.

Here is this week's list of meal plan options:

Brunches:  Milkrice with seeni sambol and/or jaggery (Monday, June 1);  Tuna salad sandwiches, Scrambled eggs with sausages and toast; Pancakes with sausages and peaches (and syrup); Boiled mung beans with lunu miris; Peanut butter toast; leftovers

Dinners: Smoked Sausage stirfry with broccoli, carrots, and walnuts over rice (Monday & Tuesday); Baked Chicken drumsticks with cucumber salad, broccoli, and corn;  Hamburgers; Salmon (need to buy) with rice and green beans; Leftovers.  

Snacks/Desserts: Fresh fruit; Assorted nuts; Cookies; Crackers with tuna salad or peanut butter; Avocado pudding; muffins

Meal plan options are subject to change and that's fine, too.  

As always, I am grateful to be able to have a variety of meals.

  1. We don't have a meal plan this week. We are finishing the leftovers from a weekend cookout and then will start working on food for this weekend when we're having a party for my FIL. In between, not sure what we'll do.

    1. Finishing up leftovers and preparing more food for a party sounds like plan for me. I'm sure you'll find something tasty to fill in on the days between. :)

  3. As often happens, despite my good intentions, I've been off plan this week, and I've regretted it every single evening. I'm determined to be more prepared next week. Xx

  4. Your meal looks delicious. Well done with the planning. I'm getting back into the groove and trying to use up some things we have on hand. It's getting warmer now so lots of things are done with salads

  5. I have started transitioning to mostly cold foods, which I do around this time of year. My dad couldn't stand hot food in the summer. We were mostly outside growing up, so it made since then, but I've carried it into adulthood. I'm excited for cucumbers, tomatoes, salad. I saw you had mangoes in another post. It seems like almost every person I talk to has found good mangoes recently.

    1. Summer is a good time to have salads and other cold food. I grew up in a tropical country where it was hot all year round and we ate hot food year round. I still eat hot food in the summer, but, we do eat more salads in the summer. I love mangoes, but, haven't bought any, recently. Finding a good mango is a bit hit or miss right now, I think.

  6. I like your word choice - options - for your meal plan possibilities.
    You have some good potential choices for your first week. I will read on and see how things worked out.

    1. Thank you, Debra. I am not good at keeping to a more specific meal plan with a particular meal assigned to a particular day of the week. I tried doing that when I was first meal planning, but, it never worked out for me. Options work better. :)
