March Meal Plans - Weeks 3 and 4

 This was how the Week 3 meal plan turned out:

Monday: 
Breakfast: Fresh oranges; daughter had the last of the ground turkey mixture, as well
Lunch: Chicken fried rice (1 leftover sauteed chicken thigh, sliced up, leftover rice, leftover bell peppers from the Italian sausages, freshly picked peapods, the last bit of frozen corn left in the old bag, the last egg in the old carton, and a handful of roasted peanuts from a jar)
Dinner: Breakfast for dinner - American style pancakes, breakfast sausages, syrup/applesauce/jam, etc.; cucumber salad, later

Tuesday:
Brunch: Scrambled eggs on toast Bananas, leftover pancakes and sausages
Dinner: Chicken (sauteed) curry, rice, kale mallung (kale shredded and cooked with grated coconut), lentil curry steamed broccoli

Wednesday:
BrunchStringhoppers with chicken curry and lentils Scrambled eggs on toast; banana
Dinner: Baked chicken thighs with garbanzo beans and greens Chicken curry and stringhoppers

Thursday:
Brunch: Tortillas and chicken curry
Dinner: Kufta (from the freezer); salad

Friday:
Brunch: Fried rice (me) or leftover kufta (daughter)
Dinner:  Pork curry, rice, broccoli chicken curry and tortilla; daughter had Japanese food take out (from the bachelorette event)

Saturday:
Brunch: Toast and eggs or jam
Dinner: Leftovers  Rice cooked with green split peas and grated carrot (daughter will be attending her friend's wedding)

Sunday:
BrunchWaffles  Pancakes with sugar and lemon - daughter requested pancakes instead of waffles
Dinner: Salmon, rice leftover from Saturday, green beans or broccoli  (I had saltine crackers, applesauce, and a slice of toast as I had a bit of an upset tummy)

And that is how that meal plan worked out!  LOL.

On to Week 4!  I'm going to do this week's meal plan a little differently, listing meal options simply because I don't know when I will be able to eat regular food.  The fridge is full of leftovers, so daughter can warm up things for herself.

Brunch Options for the Week:

Leftover rice and salmon (what daughter had on Monday; I had toast)
Toast and eggs/jam
Oatmeal/cream of wheat/cereal
Pancakes/waffles

Dinners
: Choice of leftovers!
- Chicken curry and rice (what daughter had on Monday; I had saltine crackers and applesauce)
- Salmon and rice and veggies
- Kufta and rice or salad
- Toast, soup, mashed potatoes, or applesauce for me 

I'll try to keep a record of what we do eat.  


As always, the meal plan is subject to change!  I am grateful to be fortunate enough to plan and change the plans as I wish, secure in the knowledge that there is plenty of food to be prepared, shared, and eaten.  It is a blessing which I appreciate very much.

  1. Even subject to change it's good that you plan ahead like you do. My meal planning is doing the weekly online grocery shop and then watching the use by and best before dates and delving into the freezer for a change/seeing what's there :)

    1. I like your way of meal planning, too, Eileen. Whatever works best for us. Back when I was working, I'd cook for the week - two main entrees and a few sides and we'd eat that the whole week, switching between the entrees. My daughter does that now, when she is cooking for herself, doing meal prep for the week. :)

  2. I do the same as you've done this week and list options for meals for the week rather than for specific days. I do three lists - breakfast, lunch, and dinner - but seem to be moving towards only have two meals a day, so more like a brunch with a dinner later on. I find this approach works best for me.

    1. Listing the options for the week allows a lot of flexibility, doesn't it? I used to do that quite a bit in the past, but, thought listing the daily meals might help me with the cooking. Obviously, it doesn't always work that way, as I keep switching things around! :D Both my daughter and I are not breakfast people, but, there are plenty of breakfast options, too - toast, cereal, fruit, yogurt, etc.

  3. We're not very good with meal planning here, but tend to do okay with some things in mind without specific times attached to them.

Just knowing what the meal options are is often all the planning that is needed. :) My mother said that she was forced to make a monthly meal plan when she first married because her step children used to complain if they had the same dish two weeks in a row! She said she listed breakfasts, lunches, teas (tea was a meal back then), and dinners, plus desserts, and posted list up where everyone could see! Not sure if that put an end to the complaints or not, but, I guess they couldn't say, "We had that last week, too!" :D

  4. Of course there is always the unknown - possible arrivals of scrumptious food from S and other friends!
    Meals here are now fitting in with the maple boiling, and sometimes DH may even have a plate out in the shed!

    1. Oh, definitely! The planned meals can always be shifted around to accommodate unexpected gifts of food! :D
      That syrup making takes precedence, doesn't it? I hope the sap is running well and you make plenty of syrup. :)

  6. I always look closer when you plan your meals. You make such lovely things and are so flexible and adapt to all the circumstances. I think I may give meal planning another go. You are very encouraging.

    1. Thank you, Lyssa. Flexibility is the key for me. If all else fails, there's always boxed mac & cheese with a can of tuna stirred into it! :D

  7. I make a list of possible meals for the week, but not any set for a specific day. When I'm working, lunch is mostly the same, left overs or a soup, salad and fruit. On the weekends I prepare five salads, each in the same style bowls with tight lid and dressing on the side (I bought 5 so I could do this!). Soups are also premade and frozen, I can pull them from the freezer in the evening if there's no leftovers from dinner. It sounds like a lot of planning and prep for lunch! But I've learned that if I don't do good prep, then I end up eating bought junk food at work, or to hungry! Your meals always sound good! Celie

    1. I like the making a list for the week approach, too. Sometimes, that works out better.

      I really like your meal prep for lunches. My daughter did something similar back when she used to go in to the office - she'd grocery shop on Saturdays, meal prep and cook for the week on Sundays, and pack her lunches in bento boxes for the week. That way, she got to relax in the evenings without having to cook every day. I used to take leftovers to work when I was working. :)
