Dinner: Leftovers from the fridge (daughter); baked potato (me; wasn't feeling hungry)
Snacks/Dessert: Homemade croutons, Asian pears, passionfruit lemonade; cereal with milk
Snacks/Dessert: Homemade croutons, Asian pears, passionfruit lemonade; cereal with milk
Saturday:
Brunch: Tortillas with eggs and lunu miris (I beat the eggs with lunu miris and then, pour some of it onto one side of the tortilla and cook until the egg mixture is cooked, flipping it over to fully cook the egg mixture)
Dinner: Chicken Patty Curry pie. I was planning to make patties (small meat filled pastries, similar to empanadas) using canned chicken breast, with onions, carrots, and potato added as well as curry powder and chili powder to make the patty curry, but, instead of making small individual pastries, I decided to make one big pie - less rolling out and cutting of pastry.

Sunday:
Brunch: Ham sandwich (me); hamburger (daughter, who had a day out with friends)
Dinner: Chicken enchilada with mole sauce, Mexican rice, refried beans, and flan (daughter brought her restaurant dinner home to share with me)
Snacks/Dessert: White cheddar cheese crackers (Cheez-It)*, grapes, flan
Snacks/Dessert: White cheddar cheese crackers (Cheez-It)*, grapes, flan
* I went to the pharmacy to pick up my prescription refill and I had a $4 Extra Bucks coupon; the 7 oz. box of crackers, regular price $4.49, were on sale, 2 for $5.00 or $2.50 each; I bought two - one original and one white cheddar - with the coupon and $1 out of pocket. A good bargain as far as I am concerned (I would not pay the regular price for them).
Well, I didn't stay true to the meal plan, but, we had some delicious meals during Week 3.
Moving on to Week 4, here are my meal plan options:
Brunches: Leftover chicken pie; the last of the bagels; the last of the tortillas; eggs, bacon, and toast; boiled mung beans; leftovers from dinner; cereal
Dinners: Ground turkey keema curry with rice and vegetables; boxed mac & cheese with tuna; "breakfast for dinner" type meal or toasted sandwiches; fried rice; frozen potstickers (need to order from the grocery store); or something else!
Snacks/Desserts: Fresh fruit, cereal, crackers, avocado pudding, and maybe another apple pie as one has been requested!
Well, that's the plan, but, as always, the actual meals might be subject to change!
As always, I am grateful for having plenty to eat and variety in my meals.
Are you making a meal plan or meal plan options this week?

I love reading your meal plans. THere is always something for me to look up. I think I am going to be making the lunu miris. I will most likely make it a vegetarian option though I can probably find the fish flakes at our local Asian or Indian markets
ReplyDeleteThank you, Anne. The vegetarian version of lunu miris is also very tasty. One of my cousins who is vegetarian makes one of the best lunu miris without the fish flakes. :)
DeleteHow very clever for you to have extra pie crusts, so you just had to make an apple pie, too. :)
ReplyDeleteYes! Very clever of me to make extra pastry, wasn't it? LOL.
DeleteOh wow! The barbecue pork fried rice sounds amazing! I also love your apple pie! I'll bet it was delicious! I think I am going to make spaghetti for the family tonight. I have really been wanting some!
ReplyDeleteThank you, Mandy. The apple pie was very delicious; I've been requested to make another, soon. Spaghetti sounds wonderful; I had been planning to make some, too, but, my daughter doesn't much care for tomato based sauces. I'll have to leave some of the ground meat aside for her to have with her pasta with butter or something.
DeleteYour pies look delicious. I wonder when in eons past, humans figured out that pastry goes well with just about everything?
ReplyDeleteThank you, Bushlady. Whoever it was that figured out how delicious pastry wrapped food tastes was a genius! Although, I suppose it evolved from using leaves and clay to protect food cooked in embers or over an open flame, to substituting ground grains mixed with water and someone finding out that the discarded outer case was not only edible, but, also tasted good with the cooking juices mixed in. :)
DeleteIt does look like a face on that pie with quite a prominent nose. lol
ReplyDeleteI wondered what chicken patty pie was. It sounds good. Did you enjoy it or do you prefer the smaller pasty type construction?
Good use of your CVS coupon. I like getting extra bucks and sometimes use them for free Jif Peanut Butter.
I think we would have liked the smaller pasty like patties, more, but, I was going for convenience, here. Besides, the patties would have been eaten as a snack and we can eat quite a few of those at a sitting, while the pie seemed more like a dinner/lunch item.
DeleteI must look for peanut butter at CVS the next time I have some extra bucks. :)
