This was the meal plan for the week of February 14- 20, and how it all worked out:
Monday:
Brunch: Fast food! Hamburgers and fries from the drive-thru!
Dinner: Leftover pork roast and vegetables, salad
Tuesday:
Brunch: Leftover spicy chickpeas (me) or fried rice other leftovers (daughter)
Dinner: Sauteed chicken thighs with broccoli and carrots, rice Leftover pork roast and vegetables (me), leftover pork roast turned into a shredded barbecue pork sandwich (daughter)
Wednesday:
Brunch: Salad with shredded chicken
Dinner: Chicken curry, rice, cooked greens, cucumber salad, etc.
Thursday:
Brunch: Scrambled eggs and toast or leftovers
Dinner: "Homemade" pizza using ready-made pizza crust; salad Leftover chicken curry, rice, eggplant, zucchini chutney
Friday:
Brunch: Muffins or toast Ramen noodles with chicken and snow pea pods added
Dinner: Leftovers - either sauteed chicken or chicken curry and sides Homemade pizza! Using the premade crust that friend R gave. Daughter assembled it with tomato paste mixed with a little barbecue sauce, shredded chicken, two rashers of bacon cut up, onions, garlic, kale, and fresh pineapple chunks, topped with cut up mozzarella sticks (string cheese).:

Saturday:
Brunch: ??? Ramen noodles??? Bread rolls with leftover sauteed chicken (me), leftover pizza (daughter)
Dinner: Koththu roti to use up leftover chicken curry, etc. Lahmajoon (Armenian pizza), bread rolls

Sunday:
Brunch: Waffles Salad
Dinner: Salmon, rice, stir-fried vegetables (sauteed salmon with onions, tomatoes, and bell peppers; wild rice and rice boxed mix; stir fry of garden peapods, carrots, broccoli, and pineapple):

I think it all worked out well, even if the meal plan was tweaked a bit!
Here's the tentative meal plan for Week 4 (February 21 - 27):
Monday:
Brunch: Banana, peanut butter on crackers (me); daughter had a banana only
Dinner: Leftovers from Sunday's dinner and baked potato wedges (daughter); roast turkey wing, the last of the stir fried vegetables, and potato wedges (me). I cut up the potatoes into wedges, coated them with oil and spices (onion powder, garlic powder, salt, parsley flakes, and paprika) and baked them at 350F until they were nicely browned, turning them over halfway through (about 15-20 minutes cooking time)
Tuesday:
Brunch: Salad and sandwich with sliced turkey breast (leftovers from the Thanksgiving dinner)
Dinner: Pol Roti (coconut flat bread) with leftover chicken curry and vegetables
Wednesday:
Brunch: Leftovers from Tuesday dinner
Dinner: Turkey noodle casserole
Thursday:
Brunch: Scrambled eggs and toast
Dinner: Leftover turkey noodle casserole
Friday:
Brunch: Uppuma (Indian style cream of wheat)
Dinner: Something with leftover roast pork from the freezer!
Saturday:
Brunch: Waffles
Dinner: Leftovers from Friday's dinner
Sunday:
Brunch: French toast
Dinner: Mac & cheese with tuna
Most probably we will modify this menu plan as we go! But, this gives me an idea of what to make with items I have in the freezer and pantry. As always, I am grateful for the blessing of having enough food to eat, never mind the luxury of having a choice of what to eat!

That's an interesting combination of ingredients on the pizza, but it looks delicious.

DeleteYou've had an interesting week full of lovely meals. I've been eating up the odds and ends from the freezer but am coming to the end of that so will need to plan for next week. It's time to do some batch cooking - there's a chicken soup in the slow cooker as I write this - and start thinking about the changes I want to make to my diet.

Reminded me a little of your planned culinary world tour, with Sri Lankan curry, Armenian lahmajoon, American hamburgers and pot roast, and what can only be called Italian/fusion pizza! :D Well done on using up the odds and ends in the freezer! Will you be starting on your culinary world tour this week or is that for next month?
DeleteI'll buy the food for the first culinary tour in my March shop, and then prepare some things for the freezer. I'm aiming for the first tour at the end of March.

It's harder, too, with my daughter being home because she doesn't always like the things I like and I try to take her preferences into account, too. But, we don't go hungry and that is the biggest blessing there is!
DeleteBreakfast time the other day was interesting. I started to get out the eggs to boi, then decided I wanted to wait and have egg salad sandwiches for our lunch, then I started to put out cereal bowls for cold cereal and realized the milk was too low, then I decided on oatmeal and that worked out at last. I obviously need a mail plan!
ReplyDeleteAh, but, you had options and you were able to make it work! Oatmeal would have made a nice, warming breakfast, too. Hope you enjoyed your egg salad sandwiches. I might substitute egg salad for scrambled eggs on Thursday!

DeleteYour pizza looks delicious. I was planning to make a hearty stew today but I am feeling under the weather after that fourth Covid jab yesterday. I woke with leg cramps so obviously didn't drink as much fluid beforehand as you suggested :(
ReplyDeleteThank you, Eileen. Sorry to hear that you are having some side effects from yesterday's Covid jab. There is only so much fluid one can drink, anyway. Do keep hydrated and hopefully, the cramps will ease off.
