| Pork Fried Rice |
Fried rice is one of my favorite things to make with leftover rice. Especially when there isn't enough rice for two portions. Somehow, by the time I add some frozen green peas and frozen corn, a grated carrot, a little bit of onions, the last bits of leftover roast pork, a scrambled egg, and a handful of peanuts, there's enough to make two portions of fried rice for us to enjoy.
February Week 4 Meal Plan Options:
Brunches: Leftover French toast (Monday); bagels; tuna salad or egg salad sandwiches; soup; yogurt; milkrice (on Sunday, March 1)
Dinners: Pasta with chicken (Monday; me; daughter had leftovers from her dinner out with friends from Sunday); Soup; Chicken curry and rice; Salmon with vegetables and rice; Mashed potatoes; Leftovers
Snacks/Desserts: Tuna salad on crackers (Monday); peanuts; yogurt; fresh fruit/smoothies; gelatin dessert; ice cream; sugar cookies
I plan to order and pick up groceries on Tuesday and I will buy a container of ice cream and a couple of boxes of gelatin to have after my dental work.
What's on your meal plan for this week?

We don't plan for the whole week, but today's plan is homemade pizza. Good luck with your surgery.

I hope the oral surgery isn't too bad. Sounds like a good meal plan. I'm trying to use some things from the freezer as I have been picking up a few sale things as I have seen them.

DeletePlanning your meals around the sale items you've picked up is the way to go. That will help with your grocery budget. :)
The fried rice does look tasty. I've actually managed to stick to my meal plan this week, and I try to cook once, eat twice, so I'm not spending ages preparing food after a long day. Tomorrow and Thursday it's going to be Butternut squash, sweet potato and red lentil curry.

I think that I'm going to have to take inspiration from you for the fried rice - it sounds delicious and worth deliberately making extra rice for 'leftovers'.

Fried rice is my favorite "go to" when I have leftover rice and a few other items I can easily add to it. It can be totally vegetarian, too, if you like. A similar "chow mein"/fried noodles can be made with leftover pasta or noodles and vegetables. I do that from time to time.

Growing up in England, rice was only ever encountered in a rice pudding. Now I buy it in a huge bag. I have only made fried rice once and I really should make it more often. Yours sounds and looks delicious!
ReplyDeleteRice was a staple when I was growing up; we sometimes ate it for all three meals in different forms. I like Indian rice pudding (kheer) the best, but, milkrice, if eaten with sugar, is a little like a thick rice pudding, too. Maybe you'll make some fried rice the next time you have some rice leftover. :)

It's a miracle how the rice seems to expand! :D If I had needed to feed three people, I would have added some shredded cabbage to bulk it out a bit more! LOL.

I'm sure your fried rice both tastes and looks good, Debra. Dumplings and fried rice sounds good. Usually when I serve fried rice, I consider it a complete meal and don't serve anything else with it.
DeleteThe week 4 meal plan worked out well enough, except I didn't buy the salmon! We will buy salmon another time. I haven't made a meal plan for this week, yet.
